      Leftover dough: the scraps from cutting the donuts is used to make fritters, twists and some other lower quality remains. Once the dough has proofed for the first run of donuts and cut, you can't keep kneading and rolling the leftover dough to make a second batch because it won't respond the same way. Baker's tip: You can use leftover dough to add to the next day's mix to help it along...as they did in this video. They'll let it proof and then refrigerate overnight.

    500 donuts a day, doesn't sound like a lot, maybe you meant 500 dozen a day. But I do love hand cut.

    Yeah, that's why I don't eat from places like this, handmade is better than machine made, HOWEVER. NO GLOVES forget it

      Most cities/counties that have food license requirements state that if a product will be cooked, baked or fried, gloves are not required, only after preparation are they required.

      @brendamagee6411 I get that food being at or above certain temp. The town I grew up in, some of our neighbors were business owners one of them, Don and his wife Nancy, owned the The bakery in town, well, Don got a condition, that, somehow the dough, something in the donut dough, caused the skin on his hands to shafe, right, he never wore gloves, right, eventually getting out of that business. Anyway, nothing wrong with human skin, as long as it's cooked above a certain temp, this is a true story about our neighbor years ago, but i do get what your saying about tempature

      human skin in your food is different than someone with clean bare hands handling ingredients before they're cooked, especially on the ick factor.@@TorgMetal

    Even tho it's nice to see them putting the effort into it by preparing everything fresh everyday it is still disappointing to see the preparation doesn't include wearing gloves as they are touching the donuts .
    You can't argue that even if they'd say we wash our hands.
    My god it takes 2 seconds to wear some gloves especially when you're dealing with food that you're trying to sell for others to consume.

      Yeah they should also line the boxes with gloves, and the metal rods they use, and you should wear gloves if you eat them too. In fact I do hope you sanitise your stomach before potentially bringing it into contact with the doughnut. Can never be too safe.

    Why is wearing gloves, not a mandate when handling food? I get people wash their hands, but, unless they surgical scrub there’s a possibility of microorganisms between the nails and the hair on these guy's hands. Anyways, who cares… I don't think I have ever eaten a sterilized doughnut.
