The Perfect Buttercream Frosting Recipe - Updated Tips and Tricks

  • Hi and welcome back to my kitchen. I get asked so many questions about the buttercream that I use for my cakes and cupcakes so for this weeks cake decorating tutorial I thought it was about time I updated my Buttercream Recipe tutorial as the one on my channel is now 7 years old.
    In this video I go through my easy recipe for American buttercream and answer your questions like that butter to use, how to get it smooth and creamy, how to get rid of air bubbles, how to make chocolate buttercream and so much more.
    ★RECIPE
    340g / 12oz - Icing Sugar
    170g / 6oz - Room Temperature Salted Butter
    1.5 tbsp - Milk
    1 tbsp - Vanilla Favouring (or favouring of your choice)

      Also: For the confectioner's sugar - sift then measure? Or, measure then sift? Also, try and purchase clear vanilla so the color of the ordinary vanilla won't discolor your buttercream.

    Amazing recipe! If you're looking for a trick to make your buttercream look more white, a way to do this is to use an electric whisk and whisk the butter before you mix it.

    Every youtube video claims to have the best buttercream ever and I like this channel the best because you get straight to the point and tell us exactly what to do.
    So I tried this tonight and, (having made buttercream for 25 years and being complimented on my own) I can safely say that this one absolutely knocked me OFF MY FEET!! OMGGGGG!!! I am RAVING about this Thank you so much for sharing. This really REALLY is perfect.

    Another great video, Lynz! I really needed this one. I have had a constant struggle with my buttercream being so dry it will not pipe well or it will not hold its shape! So, thank you...I am going to do a good long practice run tonight. One last thing.. please don't ever change the way you share your knowledge with us! I just love that you do not rush and you explain the how's and why's of everything you do. I always learn something from you. God bless...

    I use soya butter which is so firm but leaves a white finish! Would recommend

    This recipe is good for beginners. I must say I started from american buttercream up until now. 👍 I use it on my cakes and cupcakes. I prefer american buttercream than meringue because, it will last for 2 weeks or 1 month inside the freezer.

    Tried this for the first time today and it was lovely. Thank you for all the hits and tips as you went along. Just FYI to any other beginners, I reduced the icing sugar quantity (300g instead of 340g) just to make it slightly less sweet. I also used stork from a tub instead of butter and had no issues. Thank you again 💗

      Can I use a hand mixer with whisk. I want to try this out but afraid it won’t hold on the cake.

    About the butter, and using the sticks of butter instead of the tubs. This explains SO much, I just made my husband a birthday cake yesterday, and made buttercream for the first time. I used a tub, because that's all we had, but it wouldn't firm up at all. Thank you for such a well explained video!!

    It seems perfect, i am new to baking but I have always used elmlea whip double cream for icing. But never get stiff consistency as your buttercream.

      Real butter is only found in blocks.
      Not marge
      Not spread
      Not spreadable butter- in tubs and blended(I.e. diluted) with oil and/or water
      Not Stork
      Not anything else.
      It's called just "butter". And it's in a block. Or "stick" as the yanks say .

    Thank you so much for the video! I will say I have learned of you beat the butter for a few minutes before adding the sugar it turns lighter and fluffy then add in sugar it will make it lighter

    I would just like to thank you for your video and for sharing your recipe. I have tried many times over the years to make buttercream especially for my childrens birthday cakes and failed but the main thing was they loved their cakes. I have used this recipe for my daughters sweet sixtheen this weekend and it is perfect🥰

    When you sieve your icing sugar try pushing it round with a balloon whisk instead of a spoon, goes through much quicker and less sugar dust.
