- Russian Buttercream or Condensed Milk Buttercream is one of the easiest butter-creams to make. Made with just two ingredients, butter and condensed milk. The addition of sweetened condensed milk gives the buttercream a very pleasant flavour and serves as a sweetener as well as a flavour enhancer. This buttercream frosting is light, silky, fluffy, incredibly delicious, not too sweet or heavy and pipes beautifully.
Ingredients used:
*(Measurements are in weight and volume)
Room Temperature Butter (Salted or Unsalted) - 250g or 1 ⅛ cups
Sweetened Condensed Milk (Cold) - 180g or ¾ cups

Mine was runny I tried it two more times and went and checked a few more videos and I had to slowly add that milk to the butter cause it can seperate or whatever it did on me if u don’t! So if it didn’t work for you and u want to try again try slowling adding the milk a small amt at a time
Thank you for this info, I faced the same problem and thought that I could never make it the correct consistency ❤
If it separates very lightly warm the mixture over a double boiler while whisking, stop when homogeneous again. Do not melt the butter. Then beat again with the mixer, it will get even lighter.
@@michelinebeauchemin6770 thank you 😊
I thought the same thing when they added all of the milk to the butter. That it should have been added gradually.
Happy Easter to All💐🐇💐🐇💐
Oh thanks I'm tired of wasting expensive ingredients. With butter at $5 a pound..😮.
I've tried twice too and was just watching more videos to see what I did wrong. Wish me luck.. it's Easter morning and I have a cake to frost.😊
Yes, this is one of the base creams we have in Russia. This cream can be varied, add chocolate or cocoa, coffee, cream cheese and so on. You can use boiled condensed milk instead of the usual one and get a soft caramel taste.
Absolutely 💯 💗
Cooking with black glove 😂😂😂
@@ellylauw3458stereotypes are not funny
You just boil the condensed milk? I love caramel flavor!
@@GrammaPatriot We sell ready-made boiled condensed milk, but I prefer to cook myself. It's simple. Immerse the jar with condensed milk in a large saucepan with water and cook it for 2-3 hours. The longer you cook, the denser the consistency, I like the average. Attention, it is necessary to make sure that the jar is under water all the time, if there is not enough water, the jar may burst and you will scrape condensed milk from the ceiling. I cook over low heat, periodically adding water.
I already try this recipe and i love it!! its not too sweet, fluffy and its really stable for a cake 😍 thank you for sharing this
Thank you so much for your comment and I am glad that you liked it. ❤️
I tried making this buttercream for a cake I made quite recently and it was a hit! Very smooth and creamy with just the right amount of sweetness; neither overpowering nor bland. Thank you for sharing this recipe :)
Great to hear! 😊 and thank you for watching 🩷
Did the.milk.help with the cream not to look 🤔 yellow?😊
@stalopapaioannou6415 I would say that buttercream came out slightly yellow even with the use of the milk - the main thing the milk helped with was to make it smoother and distribute the flavour more. If you'd like it to look more white, you could try to add a small dot of either purple or blue food colouring and whisk it thoroughly.
My daughter made this and added coffee. I've been all over Europe and nothing's as good as this recipe. Take you time making it, gentle is better. Melts in your mouth! 🎉❤
Thank you so much for the lovely comment 💗
You're welcome!
Que bueno saberlo, me da temor quedar muy Brando sin consistencia
That sounds great. How much did she add?
New idea. "Mexican" buttercream - made the same way but with Dulce de Leche
Amazing, great idea💗
this looks so light and fluffy, I must say that out of the hundreds of videos I saw, this is the only one that is worth trying!
Thank you for posting 😀

Hey! 🙋🏻♀️🇷🇺I'm from Russia and I have a lot of familiar confectioners,
So, I give you a recipe for a dense and stable cream, which is used by many confectioners in Russia:
•400g cottage cheese (cream cheese)
•100g of butter (82.5% fat content)
•80g sifted powdered sugar
Softened butter at room temperature (get it out of the refrigerator at least 3-4 hours before the start of cream preparation), mix together with sifted powdered sugar until the butter is lightened and fluffy, then add cold cottage cheese, beat for a few more minutes, try not to overdo it! If desired, you can add vanilla extract. If the cream has become too soft, put it in the freezer for 20-30 minutes in a pastry bag.
Its moderately sweet cream, but perfectly delicious!!
Just try
Also, you can make cream for the layer of the cake, not the outer coating of the cake!
•300g cottage cheese cream
•150g whipping cream (33-35%)
•70g powdered sugar.
All ingredients should be very cold. Beat cream cheese with powdered sugar at medium speed of the mixer until smooth and homogeneous (do not stir for too long), leave aside.
We take the whipping cream and whisk in a separate bowl until soft peaks, there is no need to whisk the cream tightly, because we will add cream to the mixed cream cheese and powder, and whisk everything together at low speed.
It is important not to overdo it, because the cream may begin to delaminate.
Good luck !❤
Thanks!
@@candycain1001 Better say thank you as you try!
You’re welcome🥲
Thank you Tatyana :)
I will try both out.
Wow! Thank you so much 🙏♥️
Cottage cheese has lumps. Do you mean creamed cheese? Like you put in a cheesecake?
I hate videos with sappy music, Distracting.
I heard in Russia they also boil the condensed milk can (when using canned)so that it makes dulce de leche, and then they make the frosting. Is this something you can show us?
Yes, I will show this in one of my future videos 😊
I made this and I ended up adding some powdered sugar bc it was just a little too buttery without it. Guess you could just add more sweet and condensed milk, but then it wouldn’t be as stiff. But still a cool idea.
Yes, the Russian buttercream is actually very buttery as it’s made using butter and condensed milk. It’s an easy and quick to make buttercream. You can add a little bit of icing sugar if you find it too buttery. 💗
that is what makes Russian Buttercream .... lightly sweet.
If you enjoy that super sweet frosting, then Russian Buttercream is not for you.
Stick to American Buttercream.
Thank you for this recipe! It’s very simple, and I can add vanilla, cocoa, coffee or other extracts like almond to make a flavored frosting.
Your welcome and thank you for taking the time to watch it 🩷
JUST MADE IT!! ABSOLUTELY FANTASTIC!!"THANK YOU !
Me da la impresión que queda muy dulce
И с какого переполоха в названии Russian?
Is this recipe enuf to cover a two-layered 8” cake, including the filling and some rosettes on top?
i need an alternative for a regular buttercream because i don't have cream available. Thank you! This looks really easy to make
It’s good but girl I had to try it three times and last I checked another video it said absolutely put that milk in small amts at a time not all at once cause it can seperate
You need to keep whisking if it separates. It will definitely come together, don’t worry 💗
Did you use sweetened condensed milk?
They did
....Russian .. butter cream? 😮 next up... Ukrainian buttercream, followed by Australian buttercream, followed by ... blah blah blah...
What your Problem?
I can't wait to try this buttercream. I'm not a fan of the American buttercream, which is the one I learned to prepare at a cake decorating class. Thank you for sharing the recipe.
Great recipe! Please check the sweetened condensed milk conversion to "cups". If you want 180g, 3/4C is correct for "milk", but not for "sweetened condensed milk". Your recipe should say 1/2C + 1 1/2 Tbsp. Thank you! 👍
Thanks for the tip 🩷
So glad I read the comments first!
Will this firm up enough to make little flower decorations? Ones that you can add to cookies etc?
Thankyou for the Recipe! I will try it! I am a Cake Decorator, so shall be fun to try this!!
Looks delicious thank you for sharing
My greatest pleasure. Thank you for watching 💗
How well does Russian Buttercream hold up in hot weather for 4 to 6 hours? Thank you for sharing!!!
Yes, it does hold its stability well in hot weather. I have made this buttercream in summer where temperatures were between 26- 28C. 💗
How about 35-40c?how long it can stay before melt?
Hi... How much cream cheese could i add to the original recipe?
how should i keep the remaining buttercream?
You can store it in an airtight container and refrigerate for up to 1 month or freeze for up to 3 months. 💗
My sister in law makes the best buttercream icing and I can't figure out how she makes it. She obviously won't tell anyone either.
💗💗💗
My mum's lactose intolerance so Im going to try it x any advice xx
Hi, will this amount decorate 12 cupcakes or would half be enough? and if I just leave the frosting in room temperature for 2 to 3 hrs in a bowl, will it deflate or melt? Thank you!
Yes, 250g butter is always more than enough to decorate 12 cupcakes. The buttercream will not melt in room temperature as it’s stable. 💖
Yes it decorates 12 easily, freeze the rest in a sandwich bag. I use extra on graham crackers etc...
@@TwistyTasterhi, how much would I need to decorate a 10” cake please?
May I ask how is it like after the cream has been refrigerated overnight? Does it harden like buttercream does or will it stay soft?
It will harden but you can leave it out in the counter for 20 minutes to bring to room temperature and it will be creamy again.
Love the buttercream but there is so little of it in the recipe. I would recommend doing 2 times more than the original recipe 😊
Thank you for your comment 🩷
I absolutely love it. My cats come running when they hear this. Please make more😊

Hi there, can I use this with the russian flowers tips?
Thanks
Yes, ofcourse you can. 😊
This quantity is preferable for 1/2 kg cake or 1 kg cake
It tasted only the butter...I had to add more sweetened condensed milk and vanilla and I'm still only taking butter..so disappointed 😞
I am sorry the buttercream was more buttery for you. You can add 4-5 tbsp of icing sugar to make it less buttery.
It actually depends on personal preference 💗
But for me it has nice flavor and less sweet. I am using this recipe for my cakes because its easy..👍👍👍
can it be leave at room temperature for how long? Can I use to make flowers? Thanks

What Tip did you use to make these Roses?
Beautifully done..
I used 1M Wilton 💗
@@TwistyTaster
WOW... love this.
Shelf life?
After icing do we need to keep the cupcake in refridgerator or room temperature??
It’s actually depends on the weather. If you live in cold climate, then you can leave it outside. If the temperature is too warm where you live, you will need to refrigerate this buttercream. 💗
@@TwistyTasterokay.. thankyou for your reply ❤
Ma'am nag try po ako kanina.kaso po dumikit po siya sa papel pag bake ko
Trying this tomorrow!! Do you think it will cover a 7inch (18cm) cake? Or should I double it?
Please double it for an 7 inch cake. 😊

Can I use some icing sugar for this cream. Will the cream melt
You can use icing sugar if you like but it will make it sweeter. The buttercream will not melt, it is quite stable. I use it on cakes as it’s delicious and easy to make. 🤗
This looks absolutely beautiful.
Thank you for sharing this idea.

How do you make this chocolate?
Just add cocoa powder to it.
I tried it before, but failed...can i add powdered sugar or cornstarch?...or some gelatin?
If you like, you can add powdered sugar. But please can you let me know where it failed? 💗
This amount of butter cream is sufficient for how much pound of cake? Please reply
This is enough to cover an 8 inch cake 🩷
How many cupcakes can you frost with this recipe?
It’s actually depends on the design you pipe. But I normally get about 10-12 cupcakes frosted with this recipe. 💗
Why is my butter runny and not stiff? I’ve been mixing it for more than a 10 minutes. It just melted lol. Is there a specific butter to be use?
You can use salted or unsalted butter 💗
Can i substitute margarine for butter in this recipe,if yes ,what quantity can be used .Im watching from Nigeria
No, you can’t substitute margarine for butter 🩷
If i will use this for my cake and leave it overnight in the fridge, will this frosting gets hard like a cold butter?
Not like a cold butter, but it will solidify enough.
This buttercream will solidify in the fridge and it will be smooth. 💖
Hi ma'am,
If one is to add icing sugar, what quantity of icing sugar would you advice be used?
If you want to add icing sugar, then check out this video as this will show you the step by step process to make buttercream with icing sugar th-cam.com/video/SUbdKj8gZaE/w-d-xo.html ❤️
is this recipe enough for a 3 layer 7 inch cake?
hey i want to make buttercream for 8 cupcakes so half can of condensed milk will be enough?
It actually depends on the design you wish to decorate the cupcakes with. 🩷
How much is needed to cover a 1 kg cake?
Can this be made in a stand mixer with the sane results? Lovely video.
Thank you so much 😊
Yes, you can make it in a stand mixer. I always make in the stand mixer as it’s easier. Please make sure to whisk using the balloon whisk with the same speed settings. 😊
Hi, how can I make this a chocolate buttercream?
You can add either cocoa powder or melted dark chocolate. Just make sure to add 2 tbsp more of condensed milk for 20g cocoa powder. 💖
@@TwistyTaster Thank you 🥰
Can I use it for wedding cake ?
Yes, you can use it on a wedding cake 💗
How long can this buttercream last please?
The buttercream will last 7 days refrigerated or 30 days frozen. You will need to bring it back to room temperature and whip it again before using it 😊
I wonder if I could decorate my cupcakes the night before and pop them in the frig?
Yes you can, but please make sure your refrigerator is odourless as cakes and cupcakes can absorb odour fast. 🩷
Beautiful Buttercream....
This is not Russian, this is Brazilian
Will this survive in a hot environment? The climate hear in the Philippines is really warm and humid.

Should I use room temperature butter?
Yes, room temperature butter but cold condensed milk 🩷
Mine just tastes to buttery. To me it just tastes like your eating butter
Some people don’t like this buttercream because it tastes very buttery, but this is how Russian buttercream is. If you like it to be less buttery, you can add extra vanilla or any flavouring to make it less buttery. 🩷
Is it fair to assume it is not warm climate friendly??
I have used this buttercream in summer where the temperature was around 27C and have not had any issues. 🩷

For some reason it split has got a mottled appearance...perhaps l over whisked...it tasted good but wasn't smooth...l had to use it because there wasn't an alternative...Ah...just had a thought l didn't put the condensed milk in the fridge...
The butter should only be whisked until creamy and the condensed milk should only be taken out from the fridge when you need to add it. The condensed milk should always be very cold. 💗
Am I the only one whose mixture turned into lumps after pouring in the other half of the condensed milk? I continued whisking but it only got worse. however, I didn't throw it away but put it in the freezer, can I use the mixture for some biscuits? Any ideas?
Can fondant be placed on top of a cake frosted with this buttercream
Yes, absolutely 🩷
Does it hold in humidity, I live in Florida?
I have used this buttercream in warm temperatures where humidity levels were high as well and I have not had any issues. 🩷
Amazing. Please how many cup cakes will it cover. Please
This recipe will cover 12 cupcakes approximately 💗
Hi ma'am can I cover cake with it.and can I make that cream before 2 to 3 days.
You can definitely make the cream 2 days before and you can use it to cover a cake. Please make sure you leave the cream in a cold and dry place before using 💗
Amazing ❤
Is this similar to heavy cream frosting?
No not at all, heavy cream is made using heavy cream, powdered sugar and vanilla extract while Russian buttercream is made using butter and sweetened condensed milk. 💗
You can tell right away that this cream will be very tasty. When we use butter and sugar/ condensed milk at the same ratio or more butter is to sugar, the taste is just divine. As opposed to the American buttercream which uses 3-4 times the sugar as butter.
Yes, this buttercream is such a delicious buttercream. So milky and not so sweet 🩷
Is this recipe works in making flowers?
Yes, you can make flowers with this buttercream 💗
