  • Russian Buttercream or Condensed Milk Buttercream is one of the easiest butter-creams to make. Made with just two ingredients, butter and condensed milk. The addition of sweetened condensed milk gives the buttercream a very pleasant flavour and serves as a sweetener as well as a flavour enhancer. This buttercream frosting is light, silky, fluffy, incredibly delicious, not too sweet or heavy and pipes beautifully.
    Ingredients used:
    *(Measurements are in weight and volume)
    Room Temperature Butter (Salted or Unsalted) - 250g or 1 ⅛ cups
    Sweetened Condensed Milk (Cold) - 180g or ¾ cups

    Mine was runny I tried it two more times and went and checked a few more videos and I had to slowly add that milk to the butter cause it can seperate or whatever it did on me if u don’t! So if it didn’t work for you and u want to try again try slowling adding the milk a small amt at a time

      If it separates very lightly warm the mixture over a double boiler while whisking, stop when homogeneous again. Do not melt the butter. Then beat again with the mixer, it will get even lighter.

      I thought the same thing when they added all of the milk to the butter. That it should have been added gradually.

      Oh thanks I'm tired of wasting expensive ingredients. With butter at $5 a pound..😮.
      I've tried twice too and was just watching more videos to see what I did wrong. Wish me luck.. it's Easter morning and I have a cake to frost.😊

    Yes, this is one of the base creams we have in Russia. This cream can be varied, add chocolate or cocoa, coffee, cream cheese and so on. You can use boiled condensed milk instead of the usual one and get a soft caramel taste.

      @@GrammaPatriot We sell ready-made boiled condensed milk, but I prefer to cook myself. It's simple. Immerse the jar with condensed milk in a large saucepan with water and cook it for 2-3 hours. The longer you cook, the denser the consistency, I like the average. Attention, it is necessary to make sure that the jar is under water all the time, if there is not enough water, the jar may burst and you will scrape condensed milk from the ceiling. I cook over low heat, periodically adding water.

      @stalopapaioannou6415 I would say that buttercream came out slightly yellow even with the use of the milk - the main thing the milk helped with was to make it smoother and distribute the flavour more. If you'd like it to look more white, you could try to add a small dot of either purple or blue food colouring and whisk it thoroughly.

    My daughter made this and added coffee. I've been all over Europe and nothing's as good as this recipe. Take you time making it, gentle is better. Melts in your mouth! 🎉❤

    Hey! 🙋🏻‍♀️🇷🇺I'm from Russia and I have a lot of familiar confectioners,
    So, I give you a recipe for a dense and stable cream, which is used by many confectioners in Russia:
    •400g cottage cheese (cream cheese)
    •100g of butter (82.5% fat content)
    •80g sifted powdered sugar
    Softened butter at room temperature (get it out of the refrigerator at least 3-4 hours before the start of cream preparation), mix together with sifted powdered sugar until the butter is lightened and fluffy, then add cold cottage cheese, beat for a few more minutes, try not to overdo it! If desired, you can add vanilla extract. If the cream has become too soft, put it in the freezer for 20-30 minutes in a pastry bag.
    Its moderately sweet cream, but perfectly delicious!!
    Just try
    Also, you can make cream for the layer of the cake, not the outer coating of the cake!
    •300g cottage cheese cream
    •150g whipping cream (33-35%)
    •70g powdered sugar.
    All ingredients should be very cold. Beat cream cheese with powdered sugar at medium speed of the mixer until smooth and homogeneous (do not stir for too long), leave aside.
    We take the whipping cream and whisk in a separate bowl until soft peaks, there is no need to whisk the cream tightly, because we will add cream to the mixed cream cheese and powder, and whisk everything together at low speed.
    It is important not to overdo it, because the cream may begin to delaminate.

    I heard in Russia they also boil the condensed milk can (when using canned)so that it makes dulce de leche, and then they make the frosting. Is this something you can show us?

    I made this and I ended up adding some powdered sugar bc it was just a little too buttery without it. Guess you could just add more sweet and condensed milk, but then it wouldn’t be as stiff. But still a cool idea.

      Yes, the Russian buttercream is actually very buttery as it’s made using butter and condensed milk. It’s an easy and quick to make buttercream. You can add a little bit of icing sugar if you find it too buttery. 💗

      that is what makes Russian Buttercream .... lightly sweet.
      If you enjoy that super sweet frosting, then Russian Buttercream is not for you.
      Stick to American Buttercream.

    Great recipe! Please check the sweetened condensed milk conversion to "cups". If you want 180g, 3/4C is correct for "milk", but not for "sweetened condensed milk". Your recipe should say 1/2C + 1 1/2 Tbsp. Thank you! 👍

      Yes, it does hold its stability well in hot weather. I have made this buttercream in summer where temperatures were between 26- 28C. 💗

      Yes, 250g butter is always more than enough to decorate 12 cupcakes. The buttercream will not melt in room temperature as it’s stable. 💖

    May I ask how is it like after the cream has been refrigerated overnight? Does it harden like buttercream does or will it stay soft?

      It will harden but you can leave it out in the counter for 20 minutes to bring to room temperature and it will be creamy again.

      I am sorry the buttercream was more buttery for you. You can add 4-5 tbsp of icing sugar to make it less buttery.
      It actually depends on personal preference 💗

      It’s actually depends on the weather. If you live in cold climate, then you can leave it outside. If the temperature is too warm where you live, you will need to refrigerate this buttercream. 💗

      You can use icing sugar if you like but it will make it sweeter. The buttercream will not melt, it is quite stable. I use it on cakes as it’s delicious and easy to make. 🤗

      Yes, you can make it in a stand mixer. I always make in the stand mixer as it’s easier. Please make sure to whisk using the balloon whisk with the same speed settings. 😊

      You can add either cocoa powder or melted dark chocolate. Just make sure to add 2 tbsp more of condensed milk for 20g cocoa powder. 💖

      The buttercream will last 7 days refrigerated or 30 days frozen. You will need to bring it back to room temperature and whip it again before using it 😊

      Some people don’t like this buttercream because it tastes very buttery, but this is how Russian buttercream is. If you like it to be less buttery, you can add extra vanilla or any flavouring to make it less buttery. 🩷

    For some reason it split has got a mottled appearance...perhaps l over whisked...it tasted good but wasn't smooth...l had to use it because there wasn't an alternative...Ah...just had a thought l didn't put the condensed milk in the fridge...

      The butter should only be whisked until creamy and the condensed milk should only be taken out from the fridge when you need to add it. The condensed milk should always be very cold. 💗

      No not at all, heavy cream is made using heavy cream, powdered sugar and vanilla extract while Russian buttercream is made using butter and sweetened condensed milk. 💗

    You can tell right away that this cream will be very tasty. When we use butter and sugar/ condensed milk at the same ratio or more butter is to sugar, the taste is just divine. As opposed to the American buttercream which uses 3-4 times the sugar as butter.
