    This Easy Corn Pudding Casserole is a fantastic Holiday side dish! Made without creamed corn, and without Jiffy Cornbread mix, it is as easy as it is delicious!

    Please clarify....the written recipe says 1/2 cup melted butter but your video says 1/2 stick which is 1/4 cup, that's quite a difference, thanks can't wait to make this for Christmas morning!

    Corn pudding is part our Christmas tradition, my beautiful late mother in law made the most amazing corn pudding. I needed this recipe because she isn't here with us this year and we will need the comfort of her traditions. Thanks for sharing Beth.

    Beth I have been following you for many years but i would never comment anything until recently....and i have seen you've given me heart in some of the comments...so i think you must have noticed my comments..... now i have to share this crazy idea I've always thought about you and your channel..... Although all your recipes are awesome....but i think you should start a party planning or some kind of lifestyle event management business where you're true talent of entertaining and hosting will be more used and you can also make great videos out of those ventures.... along with the regular recipe content obviously..... It's just my little thought .....love you're recipies as usual.... Much love

    If you use about a tablespoon of flour to coat your corn kernels they won't settle on the bottom. It also works with fruit like blueberries to keep them from settling to the bottom of muffins or coffee cakes. Just a little tip! Looks delicious and I'm gonna try it out for dinner. I have got a lot of corn.

    I love corn pudding. A friend of mine’s grandfather used to make it all the time and he made it on the sweeter side and added nutmeg; it was so delicious and it is a very fond memory for me. It was the first time I had it or even heard of it. He was an excellent cook. I make it now too for my family, although not often. This is a great reminder for me to put it on the table this holiday season. TFS Beth! 😊

    I'm so glad you put this recipe on your channel. I love corn pudding but you are right the Jiffy recipe is very gritty and not as light and airy as I would like. This recipe looks great and once I saw you add the sugar (because I love sweet corn bread) I knew this would be a keeper. I look forward to adding this to my Thanksgiving table. Since my oldest daughter passed away last year I want to be sure to make our Thanksgiving as special as it can be for our family. I like traditions and hope my kids will keep some of them for themselves by saving all these recipes in a folder like in your other Thanksgiving prep video. Thank you!

    This looks amazing and easy to make. I've been looking for a different side dish for Thanksgiving because my daughter doesn't like mac n cheese (can you believe??), and she's not crazy about stuffing either, but I think she will love this. Thank you for the recipe!

    Thanks for this recipe. Ive been searching for it but kept getting results using Jiffy Mix. I'm not crazy about the additives, oil and bio-engineered ingredients in that product so thank you! This looks like a winner and I'll be making it soon. 😘

    This recipe is great! As Beth says, just like eating a corny cloud 😂 I made two tweaks: after blending the corn, I strained out all the corn skins, since I hate that texture. Then I added a third of a cup of cornmeal to make up for the misssing solids, and it turned out awesome. Not gritty at all 😊 Thanks, Beth!

    We call this "mamaliga" in Romania and we make it from corn flour and water. Mix in mozzarella and bacon while its hot from the oven and pour sour cream over it.

    Oh, yummy! I LOVE corn pudding and this looks just perfect! I used to make it every year for Turkey Day and then lost the recipe. But this is it! Or at least really, darned close! Mine was old, so pre-blender and was written to crush half the corn and be beaten by hand. Of course, I used a hand mixer!
    Making a half recipe for Thanksgiving and I plan to eat it all myself! Just not all that day! 😂 Carbs be darned - I’m going rogue for a week!
    Looking forward to the official Thanksgiving meal prep! 💕

    I made this for Thanksgiving dinner and baked it for the recommended amount of time and when it was time to dig in, it was still raw inside. Not sure what went wrong 🤔. It wasn't my oven because everything else was cooking fine. Once it was cooked through, it was delicious.

      I’m sure you could absolutely use gluten-free flour that wouldn’t be a problem at all. Or wait until this Saturday I’m posting two vegetarian gluten-free side dishes one is a quinoa roasted butternut squash dish and because of the starchiness of the quinoa it could kind of replace the stuffing!

    Hi Beth, I noticed on your Why I prep for Thanksgiving video that you will be using a pie pan for this corn casserole. I would like to do the same, how long would I need to bake it for?

      Oh sure depending upon how deep/wide your pie plate is, it may fit across 2 pie plates or you may want to cut the recipe in half if only making one. One pie plate (with recipe cut in half) should take about half the time, 20 mins or so check at that point and increase at 5 mins intervals until baked through. Hope you enjoy!

      Ha ha! Glad you saw the humor in that ha! OK re: butter. If you live in the USA I would use Salted Land 0 Lakes Butter, (it has the best flavor IMO) if you live outside the USA I would use salted. Here in the States our salted butter isn't that salty, whereas in other countries it can be pretty salty! Hope that helps!

      Yes, she meant unsalted if outside the US. She states this in her printed recipe. I have European butter (Kerry Gold) so I'm using unsalted

      Funny enough I have tried cornmeal and I wasn't a fan of the gritty texture, so I switched to flour and it's a much better, soft and fluffy texture! :)

      Sure once cooled you can cover it with foil, and refrigerate. Then reheat individual portions in the microwave :)

      Oh yes it’s a classic Thanksgiving recipe which is one of our big holidays at the end of the month. It’s a bit more popular in the southern part of the United States I am on the West Coast but Thanksgiving is the time when you bring in all types of foods and traditions from all over the country it’s quite good and definitely worth a go hope you enjoy!

    I love that you made the "creamed corn" from scratch. Most of the recipes I see, use canned cream and regular corn...also cornbread (a box of Jiffy cornbread mix). How would you do it if you were wanting cornmeal in it?

      Funny enough I tried it with a little bit of cornmeal and it made it kind of a weird grainy texture that wasn’t as nice as the smooth fluffy texture but if you really wanted to I would probably do a quarter cup of flour and a tablespoon or two of cornmeal :)

    Beth, you added a half a stick of melted butter. That equals 4 tablespoons, which is 1/4 cup. However, your written recipe on your website states 1/2 cup melted butter. 1/2 cup is a full stick. So please, which is the accurate amount?

      Actually gf baking flour would be best! I really like the cup4cup brand or bobs red mill gf flour or king arthurs gf baking flour. Almond flour would be too gritty and wouldn’t give you the best texture or structure. But if you stick with the gluten-free baking flowers, it would be great!

    This is the kind that I absolutely love I can't stand the ones that use cornmeal or cornmeal mix into the recipe as they just taste grainy and awful. Love the souffle ones.😋

      I know right!? I couldn’t agree more the soufflé texture is the way to go and because of the flour and baking powder the edges get kind of crusty and crispy so you get that sort of cornbread feel but without the grits hope you enjoy!

    Hi Beth, I have some lactose intolerant guests coming, what do you think of using a can of coconut milk instead of heavy cream? I’ll use lactose free milk for the milk ingredient. I think it will work. Let me know, thanks.

      Oh sure I would use Full Fat Coconut Milk + 1-2 Tbsp of Coconut Cream just to make sure it's thick enough. Let me know how it goes! :)

      A lot of people avoid processed foods as much as possible. Jiffy mix has lard and preservatives, and creamed corn is usually pretty high in sodium. Not everyone can eat these things.

      It's a different dish. This is a pudding instead of a cornbread. Some don't like cornmeal (like me). This seems like a great alternative.
