I just got back from a week in Crete where we had these zucchini chips in several places...I've never eaten so well, EVERYTHING was so fresh, flavors exploding...EVERYWHERE we went! Thx for posting these instructions!
Hey Dimitra, I love your videos! I'm a retired chef, and I've actually learned a few new things, which is always very exciting for me. I've tried a few of your recipes, notably the spanakopita, and I was so impressed. I love the way you demonstrate the steps so simply. When I saw you post this recipe for fried zucchini, I knew I had to try it. The combination of semolina flour and all-purpose flour is something I would not thought of, but I'd be willing to bet it makes a huge difference in terms of crunchiness. Dipping the zucchini in water briefly immediately before frying is a technique I've never heard of. I can't wait to try it! I've made fried zucchini in the past, but there has always been a missing element, I thought. This could be it. I'll let you know for sure! Thanks, as always.
So good to see you making these. Every year for the last 13 years we have gone to Hydra in summer. No Hydra this year because of Covid so I’m really doubling down on the Greek food at home. These have an honoured place. Thank you.
I made this today and they turned brilliantly- thank you so much for this video. I love all you videos- you’ve inspired me to try so many Greek dishes❤️
Yeah this is how you make zucchini fries, no breadcrumbs whatsoever, very well done, great video, thank you for showing people the real and in my opinion only way of making these, seasoned flour and salt, thanks again
another safer way to cut the zucchini and other veggies is to use a food processor. most have an attachement that you can add to the top and then you push your veggies through the blade. i tried this method to slice plantains to make plantain chips and it works wonderfully and no fear of cutting your finger!
Μια χαρά👌 Ήθελα ένα βίντεο στα αγγλικά για να στείλω στους φίλους μου από Αγγλία την συνταγή. I prefer adding the oregano + some paprika in the flour mixture.
Hello, i am from Turkey Sakarya city. We dip zucchini and many vegetables in corn flour and salt and fry them in a pan. This is my first time seeing this method. I'll try, I subscribed to your page.
Thanks for this recipe, they truly are delicious but I've never been able to get them to cook like they do in the tavernas. I was walking past a restaurant recently and yours look every bit as delicious theirs were
Thanks so much. Greek chefs in greek speaking channels claim to use semolina fine grade (simigdali psilo) I tested and it doesnt work. I have just tested semolina flour as you suggest and got finally taverna like zuchinnis. Semolina flour is much more hydroscopic and this make a difference. Regards from Athens 😊
I have tried zucchini chips in a Restaurant and they were beautiful really like French fries very crunchy. I have tried your recipe it is good but they get soggy very quickly!
I love love LOVE making these. The only problem is, they DONT MAKE IT TO THE TRAPEZI because people eat them as soon as I fry them and put them on a paper towel 😂😂
What about a gluten-free version? The flower contains a lot of gluten and it is impossible to use for people with gluten sensitivity. In my case I am gluten intolerant

The best. We ordered these almost every day we went out to eat.

Got to try these soon. Dimitra do you have a recipe for Cabbage you can share with us?
Can a version of this be done in an air fryer?
So Beautiful 😍
They look delicious, i don't have semolina flour, oatmeal flour wil do?
Would you use this dip in the water technique for say fried chicken?
I have tried zucchini chips in a Restaurant and they were beautiful really like French fries very crunchy. I have tried your recipe it is good but they get soggy very quickly!
Can this be done in wheat flour or chickpeas flour too?
What brand mandoline are you using? Thanks!
thank you
Thank you for being here today! Hope that you enjoy these chips :)
I love love LOVE making these. The only problem is, they DONT MAKE IT TO THE TRAPEZI because people eat them as soon as I fry them and put them on a paper towel 😂😂
That’s like me when making keftethes. I can’t stop stuffing myself.
Monica 😂😂😂😂
I can make them battered in coconut flour for easy keto
Great idea :)
Looks good but I might have to use almond flour because I can’t eat regular flour
Use potato or corn starch for crispy texture.
Why dip them in water prior to frying?
This makes them very crispy
@@oksanak.189 Ah.. Thank you for that info!
😋

I fried some zucchini rounds and then put them in my dehydrator, they came out like potato chips.
I tried these , although delicious they were not crispy at all….

We need healthier versions of these recipes please many people have diabetes or soon will have no white flour or sugar is good for people. Thanks
Switch over to other recipe then. Very simple.
If you have diabetes, you should already be aware of substitutions you can make to your recipes.
The flour amount is so insignificant here. Also you can use potato or corn starch or use only Samolina and see how it will turn.
thank you
