The click is from the camera moving. When you zoom in, it changes from main camera (middle) to 3x telephoto camera (small lower one). The telephoto one also changes it's aperture (moving in and out), that's the click it makes. If you move further it changes to 10x telephoto camera (the bottom one) and the 3x one falls back, making again a click sound.

That clicking at the end is your finger tapping your screen to stop recording. You can get around this by using the S pen button to stop recording
