when entering a park do you just show them the pass or do they actually scan it when entering?

They're usually just shown. They're valid for one year, and sometimes they will put a stamp on the month you first use it, so that they know when it will expire.

What is the difference between buying the “America The Beautiful: Bridger-Teton National Forest-Ching Fu” pass and the “America The Beautiful: San Juan National Forest-Mark Gruenhaupt” pass?

I think that's just where the photo on the front was taken and the name of the photographer based on the year. I don't think we had an option of choosing the cover image when we purchased ours for 2021 and it was a picture of the Redwoods.
