- Pineapple Tepache
Serving - 8 nos
Preparation time - 15 mins
Cooking time - 30 mins
Ingredients quantity
Pineapple 1 nos
Water 1 ltr
Sugar 5-6 tsp
Ginger 1 inch
Cinnamon stick 1 nos
Methods :
1. Cut the crown off the pineapple and discard
2. Wash the outside of the pineapple with water, making sure to get rid of any dirt particles.
3. Peel the pineapple and keep it aside.
4. Take a glass jar , add 2 cups of water and sugar stir well until sugar dissolves completely .
5. Now put the skin of pineapple and keep it aside.
6. Take half pineapple and cut it into strips and add into the jar. Press well.
7. Crushed the ginger and add to the jar.
8. Add cinnamon stick and Compress pineapple mixture using a ladle ,add remaining water .
9. Cover it with a lid , not to air tight and keep it in a cool place for 48 hrs .
10. Once the mixture is fermented strain and transfer it into bottle , refrigerate it .
11. Serve it cool .

Sadly fermented food has ethanol as one of its by product but that is fine because it is in very less quantity if you are using only brime solution. But if you ferment using sugar and yeast it will certainly give high ethanol content which may not be good or acceptable for some people.

Thank you dear Chef for this interesting recipe. Tried this out and made the very first batch is ready today. Its tangy and has the sweet pineapple smell in it. Am hoping the family likes it.
a) Can the leftover from one batch be used for the second batch tepache?
b) After the 2nd batch is ready we can discard the material? Dhanashree did mention about the second feed at 10.50. But it was brief, so I thought I'll check.
c) When the second batch from the same material is made, we just add water and sugar?

Sugar is good for health only that any refined product is harmful oil salt sugar so go for threaded sugar.

The sugar gets broken down by yeast and is consumed by yeast, however if you are sugar patients try in moderation first

What is the fermented juice used for when ready?
You need to drink it to improve gutt health and also when you drink it you don't feel hungry...
Can we mix sugar cane juice or mashed sugar cane in place of sugar ?
No it will change the taste. Sugar cane vinegar is different and has distinct flavour. Use raw sugar or even unbleached jaggery is also fine.
