- An absolute STAPLE in Afghan cuisine, nothing left to say about it.
INGREDIENTS:
6 cups basmati rice (soaked at least 1 hour)
2/3 cup oil
2/3 cup water
1/3 cup salt
3/4 tsp black cumin

The initial boil should be much shorter than 10 minutes in my experience. 2 or 3 minutes is fine. Otherwise you lose the nutrients and it comes out too soft and mushy in the end.
I think it depends on the kind of rice you use. I personally use baghlani rice and it never comes out mushy.
