  • A classic, well-known dish in Afghanistan, Kabuli Pulao provides both sweet and savory flavors with it's unique combination of meat, rice, carrots, and raisins.
    INGREDIENTS:
    4 tbsp oil (for the meat)
    2 tbsp oil (for the carrots and raisins)
    1/4 cup oil (for the rice)
    1 white onion
    6 cloves of garlic
    4 lb of beef (or lamb)
    2.5 tsp salt
    1/2 tsp cumin
    1 & 1/4 cup shredded carrots
    1.5 cups raisins (soaked 30 min+)
    4 cups rice (soaked 1 hour+)
    2 tbsp sugar
    2 tsp rice masala (ground black cumin)

    Thank you so much.. my father is an afghan and he hasn't been to Afghanistan since 35 years.. he loved it when i made this.. and he said this is the most authentic way of making kabuli pulao.. he remembered his good old days in Afghanistan.. thank u

    Looking for a different rice recipe I stumbled over your beautiful dish and will try this tomorrow for sure. it reminds me a bit of Biryani rice which is one of my all time favorites. Thanks a lot for your effort and the easy and clear instructions and demonstration. It looks delicious and I'm sure hubby and I will like it. All the best to you 🥰!
    NB One thing though ... try to get rid of our Western "culture" to use for everything an all aluminum foil. Nature has a tough time to break it down 😊. There are many other ways to keep the carrots/raisin mix moist and cooking as well as covering the pot in the oven. I'm an old woman and have re-trained myself and practically don't use it anymore. It's healthier and - though I'm not an environment freak 🙂 ... I believe we all can do our little share.

      @@authenticallyafghan I honestly forgot to come back to you with a big compliment from hubby and from me - sorry. We absolutely loved it and I made it already twice!! Thanks a lot for these easy recipe.
      Instead of using foil I placed both (the rice/meat and carrots/raisins) in glass containers with a lid and it came out perfect. I kept 2 spoons of white rice on the side and sprinkled it over the carrot/raisins as added décor - it looked great and it tasted superb. It has been integrated in our list of menus. Thanks again and looking forward to more recipes. All the best to you 🙏!
      Edit: I replaced the oil with butter and then put the sugar ... yummy! as I don't use oil.

    I loved the way you showed how to cook these rice but i have 2 questions. First did u boil the rice completely or 80-90% ? Secondly can we place a nonstick pan In oven?

      I boiled the rice almost completely so yes, about 80-90% done. And for the nonstick pan, you would have to check the care instructions depending on the brand you’re using.

    So you do not need to add water or meat broth to cook the rice ? Will it still cook with only the syrup? I want to make this but confused 😕please advise x

      The rice mainly cooks when you boil it for 10 minutes but adding about 2/3 cup of the meat broth helps to soften it in the oven. Good luck on making it!

      The meat, carrots, and raisins make this dish juicy and usually, you would have an Afghan salad on the side.

    Couple of questions. Does adding foil and baking the rice make the rice on the top hard and dry? Is it better to put the pot on the stove and cover with a damp cloth and put weight on? Or is that not desired?

      No the rice will definitely not be hard or dry. In fact, putting it in the oven evenly cooks everything especially if you are making a big amount of rice. You can also put it on the stove on low heat with a cloth under the lid and put a weight on top of the lid if u want to try it that way.

      I have never tried that, but the sugar is important for giving the dish its color and distinct flavor. You just need to heat the sugar on medium heat until it burns (turns black).

      You can use either one. Typically, it would be the one with the grounded spices but just ground black cumin is fine too. You can also use cinnamon.

      Yes you can use beef or lamb. If you don’t have an oven, then you can put it on the stove top on almost all the way low for 30 minutes. You would place a towel or cloth under the lid and can put a weight on top but not necessary.

      It’s not stew meat, these are just assorted bone-in pieces of beef (it’s actually preferable to use lamb in this dish)

    What kind of raisins have you used? I can never find the right raisins for it. Golden raisin for black raisins. I think i used black raisins before and they didnt taste good with kabuli pulao

      Putting it in the oven combines all the flavors much better and gives the rice good texture since there’s heat all around the pot.

      4 pounds of meet is about 1.8 kg. You can feel free to use more/less meat to your preference.

      Yes it is salt. You need a good amount in order to salt that big amount of water to where the rice gets flavored.

      No because the sugar and oil forms a syrup that needs to be drizzled on the rice.

      I boiled the rice for 10 minutes, which is about 80% cooked. The rest of the cooking is done once you put it in the oven.

      The oven will give you best results as far as texture and great flavor.

      Baking the Kabuli ensures that the flavor is spread throughout the dish and is necessary to finish cooking the rice and meat!

      Sorry about that, it’s probably because of the type of rice that you used. Different types of rice will need different boiling time. I use Afghan Baghlani rice.

      You need this much in order for the rice to obtain the flavor. It’s kind of like making salt water for pasta.

    That’s not how you make authentic qabili 😂 you’re supposed to cook the rice with the meat broth. Who adds sugar water to change the color? 😂

      Hope you enjoy! And no not at all, all of the salt does not absorb into the rice, it's like when you salt the water when boiling pasta.

      I have never tried using jaggery sugar but you can use cane sugar .
