I just went for a walk down to the bottle shop and a group of Chinese tourists asked me directions. I wish I could speak Chinese like this guy... I learned Russian at uni. WOW, first time I've seen you rate anything a ZERO! Those intestines must have really been rank. I remember when you ate that sheep's head in western China how grossed out you got but I think it was before you had a rating system. I'm guessing that sheep's head would have been a ZERO. Here in Hawai'i we call the pig's intestine "na'au" (nah' ow), the we usually run water through it from a hose for several minutes. We sometimes soak the na'au in a mixture of water and baking soda to remove the stench. We like to roast the na'au on a grill over an open fire of kiawe (key-yah-vey) wood which gives it a nice smoky flavor along with a sprinkling of sea salt. Being a "chili-head" Sichuan food my favorite Chinese food. I'm really enjoying these series in Sichuan province. Thank you very much Trevor and Ting-Ting, keep up the great work.
I have tried Chittlins ( pig intestines) at southern Soul food restaurants and even tried to make them at home my way (boiled) and (deep fried) . I was tolld ther is No way to ever cook that smell or funky taste out. Your Baking soda idea looks good and the open fire and smoke sound very promising ! Whenever somebody is trying to cook pig stomach or intestine, the only way to get rid of the strange odor is to rub the inside and outside with good amount of powder(be it flour or baking soda), it is time consuming but in my opinion such patience and cost is part of the professionalism of a restaurant.
I enjoy intestine, but can't imagine what it must taste like over there. Here in the states I'm sure it's properly cleaned and most likely soaked overnight. I guessing they don't bother to do so over there. Too much of a gamble, it'll ruin me to ever eat it again so I don't think I'll ever try it next time I'm in mainland China.

That was the funniest thing I'd seen all day!!
Whenever somebody is trying to cook pig stomach or intestine, the only way to get rid of the strange odor is to rub the inside and outside with good amount of powder(be it flour or baking soda), it is time consuming but in my opinion such patience and cost is part of the professionalism of a restaurant.
I swear you can see some big bug swimming in that intestine metal pot!

I enjoy intestine, but can't imagine what it must taste like over there. Here in the states I'm sure it's properly cleaned and most likely soaked overnight. I guessing they don't bother to do so over there. Too much of a gamble, it'll ruin me to ever eat it again so I don't think I'll ever try it next time I'm in mainland China.
