I have made something similar to this about 2 weeks ago, but I used sugar free raisins instead.. I toasted oats and raisins I blanched the almonds and walnuts in hot water for 5 min or so, then I put everything in a pan to toast, added some cinnamon powder, raw and organic cocoa powder, vanilla, peanut butter and coconut oil. No salt or sugar added. Then mixed them in a blender. It was sooo soo yummy!!
Alternate idea- transfer your date mixture into a baking tray or something flat like that and smooth out the top by pressing it with the bottom part of a glass or mug Then cut it into squares or diamonds ♦️
You could use dried fruits like figs, prunes or apricots for example. It needs a sweet sticky ingredient. Without it i don't think you would get the needed texture imo.
Orrr.... to get everything to stick together without all the sweetness. I guess (but not 100% sure) you could use chia seeds soaked in water or crushed linseeds also soaked in water. They both get this stickyness wich you could probably use to hold everything together. But you do need to soak them in (preferably cooked) water.
I added 3T of freshly ground ginger to my recipe lately. OMGOODNESS….it took the recipe to a new level. It’s part of my recipe now!

Just made the first recipe with coco powder and dates...turned out really nice..used half the fat suggested and tastes delicious! ☺️

It will possibly not be as smooth depending on your blender. Use nut butter instead of whole nuts, that might help.

Could you let me know what kind of food processor you use? I struggle with getting the dates fully chopped up
If you soak them in hot water for 10 mins the blend it really helps get a fine texture
