    Tonight my husband and I made this recipe exactly as shown here, and it is fantastic! The combination of flavors made it easily the best cheese lasagna we’ve ever eaten. Trust the process. A+

      Did you use the anchovies? I have it in the oven right now. I swear I can smell them. Everyone is telling me its in my head. LOL

      @@rubicone6891I did use them! But I used Cento brand and I washed and dried them, and they really cooked down when I added them. No smell, no taste. Just the umami. Yum

    I have made this recipe and it was thumbs up all around. I omitted the anchovies since I was making this for a vegetarian friend, but I can only imagine it adding to the already multi-layered flavors. Although this recipe may seem daunting because of its many steps, they are all simple and easy to follow.
    Tip: Before you attempt to assemble the lasagna, write out the order of all of the layers on a piece of paper. It will make assembly easy like putting together a small Lego set.

      If you can always use soy sauce instead of anchovies when you are cooking for vegans/vegetarians

      You could replace the anchovies with vegetarian Worcestershire or vegan duxelles (diced mushrooms cooked well in oil), or even miso paste.

    Love!!! I recommend you make sure your baking dish is indeed 9" x 13". Otherwise you will run out of layers/ingredients. It takes time but so worth it and it freezes great!

    I have long used cottage cheese rather than ricotta cheese in manicotti. It was mom's recipes, and mom is always right. 🙂

    This sounds like a good recipe. I'll have to try it!
    Just a note on how I make lasagna. Everybody always seems to like the corners and edges, so I use a Baker's Edge edge brownie pan. They fit lasagna noodles just about right in the four long spaces and even make it easy to cut apart. Give it a try!

    I have a vegetarian roommate and a husband who is allergic to fish. I used diced baby Bella mushrooms with a teaspoon of dark sesame oil to add depth and complexity. My mother always used cottage cheese with a bit of dried tarragon. Love the corn starch trick! Worked like a charm.

    This is a wonderful recipe for the Lenten season. However, I am a cheese fanatic so I would add at least two more cups of 🧀 cheese and 🍄 mushrooms. Thanks for a great recipe!!

      grey roses You and I were cut from the same cloth. Cheese is life to me. You just can’t put too much in any dish, and when you’re talking about lasagna you just have to put in every ounce and a variety of cheese. When I learned that you could make pizza on the grill, none of my neighbors were safe..LOL..

    I have been wanting to make this since first seeing it....but something always seemed to get in the way. My family requested spaghetti and meatballs....so I decided if I couldn't make the lasagna, I would at least make the sauce. And that's exactly what I did! Wow! Thank you test kitchen for being my muse or catalyst! Whichever you prefer.

    Julia and Bridget, I have always used cottage cheese in my lasagna, thats the way my Mom taught me. My family loves my lasagna.

    I can only find Danish and Swedish fontina at my local stores. What would be a good substitute for the Italian fontina you call for?

    I made this exactly except didn’t have heavy cream didn’t have Fontana It was still awesome but next time I’m going with the heavy cream and the Fontana.

    In my opinion, salt and ground black pepper alone in most Western recipes won't do -- very one-dimensional flavor profile. In some sauces, adding a small amount of sugar would balance out the acidity and/or enhance the overall flavor, and you would not (and should not) even know that the sugar was there. Anchovies contain glutamates that impart serious umami to a dish. If you are a vegan, you can substitute heavily reduced soaking liquid of reconstituted dried mushrooms instead.

    Sorry - can't sell me on the cottage cheese. My Italian mother taught me to mix the ricotta with 1 egg, parmesan, parsley, salt and pepper and then use it in either lasagna or stuffed shells :-)

      Ironic! Your Italian mother uses ricotta in her lasagna, but often when there are videos of lasagna recipes which use ricotta, a bunch of angry Italians start screaming about how ricotta does not belong in lasagna, only bechamel!!! It's my understanding that some Southern Italians do tend to use ricotta in their lasagne, while northern Italians only use besciamella.

    I agree on the cottage cheese over ricotta. I have used it in my lasagna for 30 yrs and when I use ricotta I find it chalky and it ruins the experience.

      Try using finely chopped Baby Bella mushrooms and a teaspoon of dark sesame oil. It will boost the favor and add depth.

    I draw the line at anchovies (yuk) and sugar. There are less offensive ways of getting a strong, balanced tomato sauce.

      They've been using canned tomatoes from the beginning...not for every dish but for things like this. Canned tomatoes work very well here. They have good flavor and are always available. Italians use canned tomatoes all the time

      My perception of ATK is that they try to make time efficient recipes that don't compromise on taste. Sometimes these recipes sacrifice freshness or authenticity but you get great flavor with less time. Sometimes you still got to sacrifice time because some shortcuts just don't give good results/aren't worth it (according to their testing). If you want to use fresh produce and stew the sauce for a long time, I say go for it! Then you can still implement some of their suggestions, like anchovies or soaking the lasagna in boiling water. :)

    This one isn't good. Everything else I have tried from America's Test Kitchen has been great.. but this one isn't. It would make an awesome doorstop... And yes I can cook.... For no disappointment recipes.. try their sour orange pie, the turkey meatloaf, and the citrus pork tacos (halve the water, the pork will release juices of it's own)... Didn't Sophia Petrillo make a comment about someone's lasagna once? It had to be this one!

    Is there any reason they can’t show you a realistic cook recipe? No one is going to dry the noodles after soaking them. Can you at least give tips to realistic cooking techniques. Otherwise great recipe.

      I always drain my soaked lasagna noodles on kitchen towels. Why would anyone have a problem with doing that?
