We've eaten in Lidia's restaurant here in Pittsburgh many times (when it was open). Her food is always so straightforward, immediate and flavorful. Not over-seasoned, just delightful, and the pasta was always perfect. Always a delight. We miss it.

I never thought I'd find someone who makes Caesar like this. I do the same thing except instead of mustard I use hot sauce. You can also use anchovy paste. It's fantastic.
Great to watch - especially building the red sauce, the layering of the Lasagna and the making of the Caesar salad. I think its odd though that in America a Ricotta layer is used in Lasagna. In Italy they use a Bechamel sauce (flour, butter, milk, nutmeg) and I have come to prefer that to Ricotta but that is a personal preference. Its the incredible techniques and the confidence provided to recreate this that are the take away!
What a beautiful lasagna you made. I learned to make lasagna when I was eight years old or so .Italian North End heritage. Wine, finely diced carrot and pepper flakes I add. Sometimes I add a bit of nutmeg . Lately I like the flavor of termeric in my sauce with a red wine. I always layer my lasagne with fresh spinach leaves because I love the color with the ricotta. I usually make chicken parmesan with chicken breasts & buy Rao sauce to add to the chicken along with mozzarella cheese on top. I like your idea of making your own sauce with fresh tomatoes adding fontina cheese, and ,of course, chicken thighs. Thanks, for the new way of thinking about making chicken parmesan. Without even looking to see if I could find what season this was from, I knew it was much earlier in her show. I knew this from three things: a) she was dressed more formally, looked dressier than she does in more recent years, as well as different hair style (later on she wears a blonde wig) and b) she actually used black pepper in her recipes, which she does not anymore (she was more accommodating for other tastes then) and c) this kitchen is smaller than the one she used in more recent years, as her restaurants haven’t made it as big yet.

This is very like how i do lasagne. I do cook off the tomato paste before tomatoes . Sometimes i put some grated carrot. Gives the sauce body.
