This is still the best pasta replacement I have found on keto and relatively easy. The only disadvantage is that you can't use it right away, but the taste is pretty nice.
Lay a straight edge on the flattened "pasta" and zip the pizza cutter down the edge. Then move the straight edge the appropriate distance for the next cut. Your noodles will be more consistently sized and it will make it faster.
Try cook with Mel's pasta recipe. Just 3 eggs 1 the olive oil 4 tbsp Almond flour and 2.1 oz softened cream cheese. Blend spread on silicone baking sheet bake at 285° for 10 minutes. Cool lift cut. Drop right in hot sauce. Serve.
I used this recipie to make gnocchi and it turned out great! I let it sit in the fridge for 15 minutes before making them. Gonna try it to make lasagna noodles!
Can’t wait to try this. I am down 24lb since November and the scale this am was 200.3 so will be the first time under 200 in 15 years. I am 60 and post menopausal so losing weight is extra hard. Plus back and hip issues so minimal exercise. Brought my A1C from 7.2 to 5.9 in 2 months. I love those carb balance tortillas and can’t live without pizza. I’m feeding my body for fuel not pleasure but if I can eat my favorite food I’m not deprived. Another part that has made this difficult is that I’m a vegetarian to some extent. I’ve never liked most meats and can’t eat slabs of anything. I like some shellfish and a couple pork products eggs and that’s about it so I have had to work very hard to make this work. I just tell everyone that my body does not like carbs that they are basically killing me so I have no choice but to mostly eliminate them from my diet. This is keeping me motivated too. Thanks
I’m vegetarian keto and it can be done. I eat more eggs and dairy than before keto. I eat lots of salads, low carb veggies and berries. I’m making better progress with intermittent fasting. Exercise in a pool, like walking in the water is great. I went from total vegan to vegetarian keto a year ago. I’m almost to my goal weight. 😊
Make sure to use low moisture mozzarella. What you buy in the balls is usually high moisture. Also, most shreds I've seen they don't just use starch to keep it from clumping, but also cellulose (basically wood pulp). If you can find a block of mozzarella to shred yourself you won't get these extra ingredients, but again, look for "low-moisture."
I've used this recipe and I found it to be a very good alternative for other pasta recipes, including less work than the keto asian one. Both are good though and hi like to add italian seasoning into the cheese and instead of boiling I just used hot running water and that works fine. Also, roll the dough before slicing. Makes it easier.
I made this an absolutely loved it, my recipe called for a sprinkle of xantham gum but other than that just like yours,I rinsed mine in the cool water but just made sure my marinara was good and hot, so far this is my favorite and cheapest noodle replacement. Kinda like Mac n cheese alone too..lol!! Thanks for sharing

I used your Xanthan gum suggestion with noodles, I doubled recipe, left in fridge for 24 hours due to unexpected events, and then after cooking one minute, rinsed and then I did add 1 tbl of butter to warm the noodles while I finished up cheese sauce. (I tasted buttered noodles and yum!) poured cheese sauce over. It was absolutely a great mac & cheese dup! It was tough getting the timing just right cooking both at same time. But I’ll be doing it again often!
This recipe is definitely a winner. 2 simple ingredients makes sense. Can we freeze the pasta though? Would love to have a batch ready for when one is tired of veggies and meat. Lol!
I would say the you’d have to freeze before boiling or if you boiled first then freeze, you’d have to wait for noodles to thaw and get to room temperature before serving.
I prefer this recipe over the chemistry experiment simply because the ingredients are readily available. However, there is an even better hack - using EggLife Wraps sliced thin for spaghetti type noodles or using the whole wrap for lasagna!

I make it, but when I'm eating it, I completely forget that it is not actually pasta.

Ketogenic Woman has several pasta recipes you might like using chicken and egg blended and poured onto a silicone mat and baked for just 10 minutes. You can roll it once it cools a little and just cut it in whatever thickness you want. She does it without chicken too using parmesan - sometimes she cuts it in big sheets and makes lasagna. I have made a couple of variations and it was good to use for a stroganoff and just with olive oil, butter and parmesan. You two always make me laugh and I am always happy to see a new video from you!

Girls have you tried Explore black bean spaghetti or Edamame spaghetti? you can by it from Amazon. 50grams is around 6 or 7 carbs. 50 grams is enough as it is very filling. They are made by a company called Explore..It does not raise Blood sugar and great for keto. It is very popular in the keto world. Its not to expensive either. You get around 4 servings in a box

Also you can use nylon sheets which are reusable and they have a lot less flexing when you're rolling it out. Parchment is always a battle for me. I have a pasta roller/cutter by Kyuewrt which cuts Angel hair strands. It is under $10.
I'm a quilter and using a pizza cutter is just like cutting fabric with a rotary cutter, you just need a straight edge, preferably made of a clear see through material like a plastic ruler to lay on your pasta dough to make straight cuts!
I found a recipe for keto/paleo wraps. Similar but way more egg, and a little yogurt with the cheese. Pour it into a pan on parchment, and bake for like 10-12 min. I bet if you did that, then sliced it up with the pizza cutter, and maybe a ruler, you would be on to something better. It dries out, so a quick boil would probably help

I make the carnivore pasta I saw on your channel some months ago all the time. The one w eggs, cream cheese, parm cheese and pork rind dust that you then bake and slice into pasta. It's really good and stands up to heat better than this, I would guess. However, I may try this. Just to see if we like it better. Thanks for showing us this!
I recently made noodles with can chicken, you can also use rotisserie chicken or fresh cooked, check out Anita at Ketogenic Woman. She boiled hers in soup they stayed together. For mine I put in my lasagna and my non keto family said they were good, they held together really well even after freezing and baking.
Ciao...i am from Italy and i can assure you that the homemade pasta is cut with everyhing you can find in a kitchen... especially with a pizzacutter.... We are pragmatic.... And is has not to be perfekt.....if not how you can see its homemade? Fighting 💪💪
Hey, saw this Keto pasta recipe on Joe Duff. He added xantham gum to give it a more chewy texture similar to traditional pasta. Haven’t tried it, you may want to, though. Good luck.

Looks simple enough so yes I'll give this a try. I liked the other noodle but anything you put on it just laid there. they absorbed no flavor at all even though I was careful to dry them.

Interesting little hack! I bet you could crank out some noodles pretty quick if you put a longer, skinnier “roll” and flattened it out in a tortilla press so it squishes out to be about as wide as a pastry scraper then you could use the pastry scraper to cut a lot of uniform noodles out pretty quickly. :-)

I wonder if you could use a pastry cutter to get more evenly cut noodles. To get thinner ones, by shifting cutter over half width of a strip and cut again. If it worked it would definitely be faster as you could do 5 or more strips at a time
so my thought is that if you roll it up after you have cooled it in the freezer. then you can slice it thin and unroll the rolls and dry it out in the refrigerator.
A noodle lattice cutter would work. Think pizza cutter with multiple blades. $8 on Amazon. Also, watermelon salt and citrus salt are my favorite flavors of LMNT.
Raspberries and Citrus are my LMT salts. Wish a manufacturer came up with a Great keto pasta. There are so many really good keto products on the market.!! I'm doing your pot stickers and crab Rangoon this weekend. Love you ladies:):)
I found the hearts of palm pasta in can at Costco which has been great. I also saw a keto pasta made with parmaesan, cream cheese, eggs, and gelatin on "Cooking with Mel". I liked that, but it's just too much work.
Need to add xanthan gum.. Joe duff did something simular on his channel but with xanthan gum added and that recipe is great.. pasta texture and everything
Have you tried this with shredding your own mozzarella? I stopped buying pre shredded cheese to avoid the potato starch and or tapioca starch and natamycin. If you buy cheese in blocks or even most sliced cheese they don’t have the additives and the cheese melts a lot better than store bought pre shredded cheeses
okay ladies I can give this a try. I did try it for lasagna made this way and it was a bit eggy but good. So I can imagine I will like this one too as I have been looking for a pasta sub here lately. I did see some palmini angel hair pasta at Marshall's but I wasn't ready to try it yet. I hadn't yet tried the palmini mash at that time speaking of the mash I did try it and loved it! Just a little suggestion..try using a clean plastic or metal ruler to cut the dough more consistency...and could even measure the thinner pasta!

I watch a keto chef and he said to add 1/4 tsp of xanthum gum powder to the cheese as it adds the extra paata like texture.

I bet you could crank out some noodles pretty quick if you put a longer, skinnier “roll” and flattened it out in a tortilla press so it squishes out to be about as wide as a pastry scraper then you could use the pastry scraper to cut a lot of uniform noodles out pretty quickly. :-)

I wonder if you could use a pastry cutter to get more evenly cut noodles. To get thinner ones, by shifting cutter over half width of a strip and cut again. If it worked it would definitely be faster as you could do 5 or more strips at a time

so my thought is that if you roll it up after you have cooled it in the freezer. then you can slice it thin and unroll the rolls and dry it out in the refrigerator.

A noodle lattice cutter would work. Think pizza cutter with multiple blades. $8 on Amazon. Also, watermelon salt and citrus salt are my favorite flavors of LMNT.
Raspberries and Citrus are my LMT salts. Wish a manufacturer came up with a Great keto pasta. There are so many really good keto products on the market.!! I'm doing your pot stickers and crab Rangoon this weekend. Love you ladies:):)

I found the hearts of palm pasta in can at Costco which has been great. I also saw a keto pasta made with parmaesan, cream cheese, eggs, and gelatin on "Cooking with Mel". I liked that, but it's just too much work.

Need to add xanthan gum.. Joe duff did something simular on his channel but with xanthan gum added and that recipe is great.. pasta texture and everything

Have you tried this with shredding your own mozzarella? I stopped buying pre shredded cheese to avoid the potato starch and or tapioca starch and natamycin. If you buy cheese in blocks or even most sliced cheese they don’t have the additives and the cheese melts a lot better than store bought pre shredded cheeses

okay ladies I can give this a try. I did try it for lasagna made this way and it was a bit eggy but good. So I can imagine I will like this one too as I have been looking for a pasta sub here lately. I did see some palmini angel hair pasta at Marshall's but I wasn't ready to try it yet. I hadn't yet tried the palmini mash at that time speaking of the mash I did try it and loved it! I will definitely buy that again. Thanks for sharing.
