I'm an old southern great grandma. My meat loaf consists of 88/12 ground beef, finely chopped onions, garlic powder, worchestershire sauce, a raw egg and bread crumbs (that have been soaked in milk to keep the meatloaf moist. Combine all these and put in a loaf pan. I cook at 375 F for half an hour, strain off the grease, add my topping which consists of, Tomato Paste, water, Worchestershire Sauce, about t of lemon juice, onion and garlic powder, salt and black pepper .... add water until it's more of a sauce than paste and cover the top and sides of the meatloaf. Bake another half hour until it's done! My husband LOVED my meatloaf sandwiches before he passed!
I've never had meatloaf without bread crumbs in it. It was - well, at least as far as my mom and grandma thought - a technique for stretching a little bit of meat a longer ways when times were tough (and both of them raised families when times were tough). The bread crumbs allowed bigger portions for the same amount of beef. They also soaked up a lot of flavor in the cooking process, and helped the "loaf" to hold together. A properly made meatloaf, when you slice it, holds together as well as a slice of bread!
Agree it has to have some kind of binder, usually bread or cracker crumbs and an egg (or 2). Corn bread works nicely. You can use stale burger or hot dog buns--any kind of baked thing that makes a sticky mush when soaked in a little milk. It's not just to "extend" the meat. It makes it into a "loaf" rather than just a big hamburger which the NZ family observed theirs resembled.
Looks like they put bread crumbs to me. Just didn't mention it. Look at the bowl before it's mixed round about 3:45, that's not just onion that's white in there. And I think that's a bag of bread crumbs up against the toaster a few seconds later.
In our family we would use breadcrumbs, crushed oyster crackers, saltines, or oatmeal mixed in (with 2-3 eggs for binding). What we used was all dependent on what we had in excess at the time. Edit: My one friends family would mix a bit of mustard into the loaf mix. Another family would use a bunt pan for their loaf and would have whole hard boiled eggs encased within the loaf.
People in the US have mixed feelings about meatloaf for some reason but I LOVE it. It's one of the classic American dishes for a home-cooked family supper, in my opinion.
As a 48 year old American, I've also never heard of meatloaf with cheese. But I'm sure it tastes great ;) Meatloaf is one of those things where you will never find 2 households who use the same recipe because we all tweak it to how we like it. It's also not as popular as it was in the past. I might be the only person I actually know who still makes it. My family and I LOVE it.
I still make it the way my mom and nana did. My sons make it too at their homes. Put some baking potatoes or sweet potatoes in with it, add your favorite veggies on the side. Oh, and applesauce goes well with it. Plus, meatloaf sandwiches later.
Classic meatloaf (as my momma made it) consists of ground hamburger, bread crumbs, onions and eggs all mashed up together (with your seasonings of choice). Then, you put ketchup on it and bake it. You can serve it with sides or make sandwiches with it. Yummy! I only put cheese on it in a sandwich. Variety is the spice of life, so everybody has their own recipe. Glad you enjoyed it.
There are almost as many recipes for meatloaf as there are grandmothers. The constants are ground meat of some sort, eggs, and a binding agent (usually breadcrumbs but can be crushed up crackers, oatmeal or even dried potato flakes). Meatloaf became popular during the Great Depression as a way to get stretch your meat by adding bread crumbs and vegetables to it.
Meatloaf is a lot like chili, everyone has their own recipe. Most people add things or substitute one item for another. At the end of the day meatloaf is one of those recipes that originated as a means of using leftover ingredients. It's also a meal that allows you to feed more people using less meat, depending on how many ingredients you mix into it. We add relish to our family recipe to give a bit of tang to it, and personally I like to use spicy barbeque on top rather than ketchup. Lastly, as multiple people have noted, meatloaf with mashed potatoes is amazing.
So true. I’ve been making meatloaf for many a year and I don’t think I have ever made it the same way twice. I don’t follow a recipe at all. I use my basic ingredients and just mix it together and throw it in the oven. It’s classic for a reason.
I was raised on meatloaf made with Quaker rolled oats in it. Meatloaf was a way to extend your meat to serve more people. Therefore, the oatmeal or bread crumbs. Oatmeal is healthier and heartier and I love that version. My mom always used the recipe she found on the round oatmeal box. There was also the best oatmeal cookie recipe on the box ❤❤❤❤❤
Steel-cut oats work great as well-or a combo of the two-I like to compress layers of the mix into the pan with a layer of cheese between the layers of the mix (with a margin of meat mix all the way around the edges to seal the cheese in when it melts-I use all kinds of cheese depending on what I have / feel like-even Munster !
I’ve never had meatloaf with cheese on top. I thought meatloaf was invented during the Cold War and always had a couple vegetables like celery and onions. You wanted to spread what little meat you had by adding other things like bread crumbs and vegetables so that you had enough to feed your family.
The grains are added to both hold the meat together and to hold moisture in the meat. Adding cheeseburger top leaves out the best part, tomato sauce/ketchup. :)
Im so happy you guys liked the meatloaf!!! Normal sides for meat loaf would be mashed potatoes and another side wpuld be green beans. Those two on your plate with meatloaf is a staple American dinner time (^:
Don't be afraid to experiment with different types of spices and ingredients in your meatloaf. That's what makes meatloaf so much fun. You can basically have a different style every time.
My mom used to mix a packet of Lipton onion soup mix into the meatloaf as the seasoning and then put Heinz ketchup on top as a glaze where it would caramelize and thicken. The best, though, were meatloaf sandwiches, hot and cold, from the leftovers.
My meatloaf has always had bread or panko mixed into the meat and topped with a tomato or bbq sauce, just depends on the mood I'm in. I've never had cheese on top. Also, mashed potatoes and peas are my family's favorite sides. Another way that I have made it is to bake it up in a muffin tin so that it comes out as individual servings. Meatloaf is definitely an American classic and has so many different recipes! So glad you enjoyed it!
I usually use panko but Doritos released a tangy ketchup flavor, and while the chip itself was not very good, I turned them into a dust with a blender and added them into the meatloaf instead of panko and it was delicious.
Meatloaf, creamy mashed potatoes with melted butter and chives, and corn on the cob. A classic comfort dish. As a kid I've had it probably once a week, as my dad liked to make it on Saturday nights. The meatloaf he made had small pieces of finely diced celery, onion, and carrots sprinkled throughout.
Today in America we celebrate our mothers. So with that being said, Happy Mothers Day, Nadine! I never had meatloaf with cheese on it, unless I am making a hot meatloaf sandwich, If I eat the sandwich cold, no cheese. Most of us eat it with mashed potatoes and brown gravy, but the kid in me likes it with mac and cheese. Great video, you guys!
I've often said I could do a meatloaf cookbook just by asking 100 people for their recipes... No two are ever alike... For example, I use a lot of onion, garlic and bell pepper in my mixture and coat the entire top in Dijon mustard. and serve it with whipped mashed potatoes and gravy and a vegetable of choice... Great video.
The key to a classic American meatloaf, in my opinion, is simplicity. Meat, onions, breadcrumbs, eggs (for binding), seasoning, ketchup (I love to add Worcestershire sauce, too); that's it. A sweetish ketchup mixture for the topping is generally what's done. People like to hide lots of veggies in meatloaf, but for me, basic is just the absolute best. Just have the veggies on the side with mashed potatoes. We like to make mini-meatloaves in a muffin tin so all the sides are crispy.
When in doubt for old school classic recipes, Betty Crocker is the bomb. I use Worcester sauce, onions, mushrooms, and ketchup. But there are thousands & thousands of ways to make it, it just depends on your liking. Grear job, once again y'all!! ❤❤
Instead of cheese, my family covers the top of the meatloaf with bacon and then covers the bacon in ketchup. The result is like a savory candied bacon topping and it's absolutely delicious!! We also use Italian sausage along with beef mince and add saltine crackers, a can of tomato sauce and some dried Italian seasoning.
9:16 I don't put any other meat but I do put the seasoning, saltines and egg, onion. I will put a little celery if I have on hand. Other veggies are served on the side not in the meat. After cooking I put ketchup and some of my favorite barbecue sauce and put back in oven to heat up. Delish. Yes leftovers make sandwiches
The meatloaf I grew up on was made with : Ground Beef, Eggs , Breadcrumbs and milk .. then after it’s mixed together you put it in a pan and shape it into a loaf shape … Then we mixed together in a measuring cup a fourth of a cup of brown sugar and a fourth of a cup of ketchup and then pour it over the top of the meatloaf and then cook it!! Yummy 😋!!!
Meatloaf is also known as a comfort food. Many use the leftovers to make a hot meatloaf sandwich the following day. You can also make your leftover meatloaf sandwich with cheese, mayo, mustard, freshly sliced tomatoes, iceberg lettuce, and pickles, or anything you desire.
In my family we eat cold meatloaf sandwiches with lettuce and sliced onions. Also Chil-fil-e sauce. So awesome. I prefer the cold sandwiches to hot meatloaf
If you ever decide to make meatloaf again… try it with scalloped or au gratin potatoes. The cheesy flavor of one of those potato side dishes complements it so well. 😊
I've never had meatloaf w/cheese, but since meatloaf is an individual family recipe, cheese can be yours. My family puts hardboil eggs lined up top to bottom inside the center before baking. Looks nice to get a slice with a cut of egg. Also, you must have mashed potatoes and green beans on the side to get full comfort
I've never heard of putting cheese on a meatloaf but after the way y'all liked it, I might just have to try it. The meatloaf recipe I use includes a mix of finely-diced carrots, celery and onions. I'd guess the same amount of the mix as the amount of solo onions y'all used (so about a third of each veggie individually).
Same here! I've never heard of cheese on meatloaf, but now I'm gonna try it. I put veggies in mine also, but I also add a dollop or two of chunky salsa, and I use oats instead of breadcrumbs. Make into a loaf, top with a thin layer of ketchup and bake. My husband is not a fan of meatloaf, but he loves mine. I know that last part sounds made up, but it's true. ❤
When I was a child, my aunt was making meatloaf for dinner. I must’ve let out a groan. She said, “well, you haven’t had my meatloaf.” Hers had mozzarella cheese layered in the middle of the loaf. It had a distinctive Italian taste and was the best meatloaf I’d ever had. That said, my next comment is how can you eat meatloaf without a pile of mashed potatoes? Last, meatloaf makes great leftovers in sandwiches. Enjoy!
I've never put mozzarella in my meatloaf but I have put Italian seasonings and my favorite tomato based spaghetti sauce in/on it, then served it with pasta and the rest of the spaghetti sauce on the side.
Now the BEST part!!!! Meatloaf SANDWICHES with COLD leftover meatloaf (or if you can't fathom it, warm it again, but it's best on hamburger buns, soft white bread or sub sandwich buns). BEST LEFTOVERS IN THE WORLD!!!!! PS Apple pie with cheddar cheese, but my family has had apple orchards on our family farm for years and I really and truly love the classic apple pie and classic apple cake (handed down from my great grandmother) ~ we make the cake for holidays and the pies are a staple in our family. But I can't say that apple pie with cheddar cheese is bad because it is not. I can't WAIT for y'all to make a trip across the pond to visit the USA! I hope Tennessee will be a part of your trip!!
I saw Meatloaf live, on stage, in about 1987. A fantastically theatrical performance, with top notch musicians backing him (The Neverland Express). Great food also.
The meatloaf my mom made growing up had 1 cup of bread crumbs in it also and 2 eggs for about the same size you made. Mashed potatoes and brown gravy goes really well with it.
You can definitely do a more savory meatloaf with brown gravy instead of the ketchup type sauces. Those also tend to be the ones that taste good with the chopped celery and carrot in it. I guess that makes it like a cottage pie.
Not only have I never tried meatloaf with cheese on top of it, I have never even heard of it. And I've been eating meat loaf for 60 years. Must be a southern thing. Can't say it sounds that appealing but I'd give it a try. A good meatloaf is so comforting that doctors should prescribe it as a cure for whatever ails you. My grown kids still request that I make it whenever they visit. ♥
Only 55 years for me. Lived in OH (Midwest) an FL (cannot count as the South, but can count for an abundance of cooking ethnicities). I have never heard of meatloaf with cheese, but have put cheese on a leftover meatloaf sandwich.
No, it isn't a Southern thing. I've only seen meatloaf with cheese once. My aunt made it using a recipe of a friend hers from Arizona. It had no sauce, just Velveeta cheese on top.
Meatloaf is definitely a winter/fall must have comfort food. Also, if you ask 10 people how they make their meatloaf, you’ll get 10 different answers. I put cheese in mine … along with onion soup mix, garlic, ketchup, eggs, Worcestershire sauce, soy sauce, and Ritz crackers
I'm one American who absolutely loves meatloaf. I make several kinds of meatloaf. I make an Italian loaf, Philly cheese steak loaf, mushroom and Swiss loaf. Also I make my own meatloaf sauce consisting of a mixture of ketchup, yellow mustard, worcestershire sauce, and brown sugar. Meatloaf is beloved in my household. Always awesome to watch you all!!
That sauce sounds similar to mine, which is tomato sauce (not ketchup), apple cider vinegar, yellow mustard, worchestershire, soy sauce, brown sugar, and seasonings (onion, garlic powders, finely ground black pepper, mesquite seasoning (Kirkland IF I can ever find it in stock...).
I usually just make it normally, beef bread crumbs and eggs, then with a rolling pin flatten the meat out, then spread the sauce (bbq, must, worce, bsug, soysauce) on the meat and cover with shredded cheese, usually a sharp cheddar, then roll it up like a sweet roll, and purse the tips. covering it with the rest of the sauce and cook.
Best thing about Meatloaf is.... meatloaf sandwiches the next day! I like to add a little mayonnaise with pepper on top on one side of the sandwich and on the other side, add a little ketchup and enjoy a cold meatloaf sandwich!
There are probably 1,000s of different recipes for meatloaf in America. We add a few crushed saltines to help as a binder and tomato sauce instead of ketchup to the meat so it’s not as sweet or dry. We also sometimes add American smoked bacon on top as well. You can use a parchment lined baking sheet with a rim to form a loaf or individual loafs instead of using a real loaf pan and add some of the sauce before baking then baste it every 15 minutes to build up the glaze. Yours looked delicious! I’m so glad you liked it
My biggest issue is that you make sure it is sliceable for leftovers. Fresh meatloaf with mashed potatoes, brown gravy and corn please...Leftover meatloaf on bread (or toast) with cheese and almost anything else (ketchup, or mayo, or mustard, or horseradish, etc., or any combination thereof). As long as it isn't falling apart, it is basically a ready-made gourmet burger at that point. Peace, Love!!
Usually meatloaf is served with mashed potatoes and whole kernel corn. Most of the time it all gets jumbled together to become a hash of sorts. Monday was almost always meatloaf day.
This is a dish of countless variation. I've used/seen recipes with breadcrumbs added in(I actually use plain oatmeal). Bacon, BBQ sauce, cheddar cheese are usual toppings I tend to use at different times. Even a BBQ, cheddar, bacon mixed with the meat. And more BBQ on top. And as other have mentioned: this goes great with mashed or roasted potatoes.
I can almost guarantee you'll never run out of variations to meatloaf recipes, the comments alone are filled with great varitions. One thing you missed eating with your meatloaf was mashed potatoes (a must have) and corn or any other preferred veggie.
My family uses onion soup mix to flavor our meatloaf and also celery and bread crumbs and egg.Instead of ketchup on top we have gravy over it. My one grandma only liked meatloaf cold on a sandwich.😊
@@cindyluis4054 As a Southern gal, tomato-based meatloaf sauce is the bomb. Brown gravy is acceptable if it's what is available, but something about the sweet acidic tang of the tomato really brings out the flavor bomb in meatloaf.
@@jeffhampton2767 Because saying it's ruined is totally subjective based on your own tastes and nostalgia? Meatloaf has as many variations as there are cooks...
Yes every family has their own spin on meatloaf and it’s a great comfort food here in the states. I grew up as a child with my grandmother recipe that had a different flavor and now that I have my own family I’ve make it differently. We tend to eat it with mashed potatoes and gravy!
I have a little Hispanic and Native American blood in me, so I like to have garlic, bell peppers, onions, jalapenos, and chili powder mixed in the meat and a Valentina hot sauce and ketchup mixture, I like spicy foods so that hits the spot for me. This was an amazing video.
Meatloaf in our house varies depending who's cooking it. My husband's meatloaf sauce is ketchup, mustard, and brown sugar. My meatloaf sauce is 1/2 cup of ketchup, 2 table spoons of brown sugar, and a teaspoon of red wine vinegar. Hubby uses all beef for his meatloaf and I do 1 pound of ground beef and 1 pound ground turkey. We both use bread crumbs, but if we don't have that we'll use crackers.
I make my sauce like your husband. My late husband loved it and I always had to make double just for him! I make a really delicious meatloaf and I'm hungry for some now after watching this! 😊 I also love eating it cold right from the fridge. I know, I'm weird. 😂
I used to make my meatloaf with breadcrumbs and an egg to bind it, diced onion and seasoning. But I usually didn't have breadcrumbs on hand but I always seemed to have a box of Stove Top Stuffing..... now I always make my meatloaf with the stuffing instead of breadcrumbs. My family loves it. I have never made it with cheese...but I'm wondering why I never have??? I love CHEESE, you have inspired me ❤.
Seems like this would be the random couple you would meet at a bar would smash a few drinks with , grab some Tacos . Then have the Family over for a BBQ the next day . Y'all are a solid Family and my Wife and I totally respect how you're trying to show your children to look at different views via food . Respect !!
Nana made it like a meatball with breadcrumbs and ketchup. Grandma made it with crumbled saltine crackers and BBQ sauce. I bake mine and add mashed potatoes, corn and cheese on top the last 20 minutes of baking.
@Bo Lee Yes, it's the same, except I don't call it shepherds pie unless I put a layer of stuffing on it. My shepherds pie layer is the Italian style of meat. Then mashed potatoes, corn, cheese, and then stuffing. Now I have to make it. It's all I'm thinking about now. 🤣😋
@Dean Vaillancourt I never herd of stuffing on a meatloaf especially when it comes to Shepherd pie. But I actually think it could be a good version or a better version of Shepherd pie. Instead of a casaroll it is more of a organic or boogie style meatloaf. It all depends on the cook and hom he or she is preparing for. Meatloaf is a local food type thing and if you do it wrong in the wrong area then you will receive negative feedback
I've never put cheese on my meatloaf unless I was making a leftover meatloaf sandwich. I use 2 recipes. Mine and my moms. Moms is meat, eggs, tomatoes & green chiles, crackers mushrooms, black olives and crackers. Mine is meat, onion soup mix, crackers, eggs, mushrooms and a mixture similar to Sloppy Joe sauce in it and on top. Season to your taste for both recipes and serve with baked potatoes. Now I HAVE made a meatloaf type roulade with ham, spinach abd cheese rolled inside it then wrapped in bacon.
My Mom made meatloaf several different ways. With tomato sauce on top, with a ketchup based sauce on top. wrapped in bacon, or plain and nice and crispy served with mashed potatoes and beef gravy. We never made it with cheese although leftover meatloaf sandwiches are soooo good and I would either eat it in a sandwich cold with mayo or ketchup or make my sandwich with reheated meatloaf and melt a slice of cheese on it. You guys did great. Looked really tasty.
As an American I can tell you that I have never heard of meatloaf with cheese on top, but I am intrigued. I am definitely going to try this! Also, meatloaf with peas and mashed potatoes. Great combination! When do you come to the USA? I can't wait for that content!
My mom taught me to make it with ketchup, bread crumbs, eggs, garlic powder or minced garlic (whichever we have), and chopped onions. For the sauce, we mix ketchup, mustard, and brown sugar together. And of course, we have it with mashed potatoes. 😘🤌 If we have leftovers, it makes a nice sandwich. lol
Instead of using bread crumbs, try rolled oats. (a Quaker Oats recipe). I make a brown sugar/ ketchup sauce for the top (make extra sauce to pour on it when it's on your plate) then sprinkle sharp shredded cheddar cheese on top of that when the meatloaf is just about done, then bake a little longer. I usually put chopped onion and green peppers in mine. But, there are many adds-in that you can try. Like instead of ketchup try salsa. Think of meatloaf like a large hamburger...Many things you can try. My husband's favorite is when I put pepper jack cheese in the middle.
@@jeffhampton2767 Uh, actually, not true. Peruse a wide selection of recipes, and you will see that either ketchup or another tomato based glaze are predominant. Of course, there are many wild variations, and the ancient(and original) brown gravy topped version as well. I grew up in Texas and Tennessee, and I have never specifically tried that, although I have sopped up brown gravy from the mashed potatoes w/ my meatloaf...does that count?
Cheddar cheese on apple pie is not real common, but was something my grandmother loved. She used to say, “Apple pie without cheese is like a hug without a squeeze.”
In Wisconsin (license plate slogan: “America’s Dairyland”) it’s common to serve apple pie with cheddar cheese. It’s not typical in other (less dairy-oriented) places I’ve lived 💐
There are so many variations to making meatloaf. Sometimes I like the red sauce and other times I want brown gravy. But I always have whipped potatoes with it. Green beans is my usual vegetable side dish. Always make extra so that you can make sandwiches the next day. I have to say I have never had cheese on top.
Meatloaf is definitely one of those meals that is hit or miss depending on who’s making it and what’s in it. Personally, I’m very picky and pretty much only eat my grandmother’s version: hamburger, cracker crumbs, egg, ketchup and some onion (I only like frozen onions not fresh, like I said, picky 😉). She would sometimes bake a whole loaf and sometimes just make patties and fry them up like hamburgers/cheeseburgers. In either case, mashed potatoes are a required side. lol
@@jeffhampton2767 I've had it out in a restaurant with brown gravy as well. My mom used to make a reddish/brown sauce that she made with ketchup but I don't know what it was called. She'd bake it for awhile and then pour the sauce she made over it and put it back in the oven for like 15 minutes till it turned into a glaze.
Mix your meatloaf as usual. Instead of putting it directly into the bread pan, lay it on a cookie sheet that is covered with parchment, and spread it very thin. On top of this, spread a layer shredded mozzarella cheese and diced tomatoes, leaving an inch border all around. Roll it in the direction of the length of the pan, so that it now appears to be a meat and cheese filled Swiss Roll. Line the bread pan with parchment paper. Bake as usual. At halfway done, cover the top with shredded mozzarella and tomato spaghetti sauce. Serve it directly from the pan with a spatula.
Our meatloaf recipe included ground pork (2 parts beef to 1 part pork). We used onion and two eggs and mixed it by hand squishing it together. Another ingredient was my mother's homemade spicy ketchup. But pretty much any meatloaf hits the spot with me.
The markets used to sell "meatloaf mix" in the butcher section that was 1 part beef, 1 part veal, 1 part pork. I don't see that very often anymore. It was also popular for making meatballs.
Meatloaf is a personal thing... everyone has their own spin on it. The one you had is a pretty common combination. Glad you enjoyed it. As for apple pie....you could wait until you get to the US to try it with cheese but almost as a rule, home made apple pie is FAR superior to anything in a restaurant (again because of the family recipe/special twist). A couple tips for you: use good, sharp cheddar (the sharper/older the better) and warm the pie a bit (if it's not fresh out of the over). That will give you the best experience. Also, it's Mother's day here in North America so Happy Mother's Day Nadine.
Everyone has their own secret meatloaf recipe and I would assume they vary according to regional tastes, here's a Canadian take which is a little different, I learned it as "meatroll Canadiana". Make your secret recipe meatloaf as usual, then roll it out between 2 pieces of waxed paper - length doesn't matter but needs to fit into loaf pan width-wise. Add grated cheddar, diced pre-cooked bacon, fresh spinach and sliced fresh mushrooms - then roll it up like a jelly roll. Bake as usual but you'll have to drain the oil off a couple times as you'll have extra from the cheese and bacon. Let it rest a few minutes after taking it out of the oven so it will firm up a bit. Enjoy :)
I just had meatloaf today! I am so glad you like it. It is a delicious comfort food which we always had with mashed potatoes and gravy. Yes..we put cheese atop. There are so many variations but with a mostly carnivore family, we keep veggies out of it. Garlic, onions...yes. Basil....NEVER!! not once ever!. Bacon wrapped...yes!!! No basil. I am going to try Natasha's recipe. With the basil to see if I have been missing out. But I seriously doubt it.
Meatloaf is one of those recipes you can experiment with, personally I like adding a medium spicy sausage to the recipe, breaking the sausage up finely and mixing it well so it is evenly distributed throughout
We use 1/3 ground beef, 1/3 ground veal, & 1/3 ground pork (grocery stores package it that way). Add salt, pepper, ketchup, dried mustard, & Worcestershire sauce to meat mixture. You can add oatmeal (not instant) with a little milk for more bulk. On top of meatloaf, add thin layer of ketchup topped with bread crumbs before cooking. (I don't include garlic because it overpowers taste of meat.) Some people add chopped green bell pepper. Have rice or mashed potatoes with green beans as side dishes. (I buy meat directly from farmer's market which has much better flavor than what you can buy in grocery store.)
Meatloaf is like the ultimate comfort food. I make mine with ground beef, 1 egg, diced onions, diced green bell peppers, breadcrumbs (or a slice of white bread pulled into small pieces), garlic powder, salt, black pepper, 1 can of original Rotel tomatoes, and sliced mushrooms. I think that's all, lol. Sometimes I put ketchup on the top, but most of the time I don't. Add in some mashed potatoes and corn on the cob, and I'm a happy girl.
Meatloaf has a more tender consistency when you use what's called meatloaf mix. It's sold in supermarkets around here as meatball mix. It's a combination of ground beef, ground pork and ground veal. The recipe I use only adds onions, not other veggies. Rachael Ray's recipe is a good one if you want to add lots of veggies. Enjoy being creative with meatloaf. It is an American classic with thousands, possibly millions, 😊of beloved variations
The best way to have meatloaf is the next day - cold - between two pieces of bread with ketchup. I’ve never had it with cheese; may have to give that a try next time since you all liked it so much. And I’ve definitely never had apple pie with cheese (never heard of it before). So glad you liked this American favorite!
Always with mashed potatoes no gravy! I never tried the cheese version but tried the sauce and ketchup. It’s probably gonna taste a lot better after it sits in the fridge overnight! Great reaction and glad you like it.
I have been making meatloaf since I was 10 years old. I don't believe I have EVER made it the same way twice. I used to grind up veggies, like zucchini, spinach, kale, carrots, whatever was starting to "go" in the fridge, and put those in. It was one of the best ways to get veggies into my kids- an my husband. They never knew.
My mom's meatloaf is different from most because she has a mushroom sauce rather than tomato based. She also uses a breading binder. Goes well with potato dishes.
I actually prefer a mushroom sauce or a thick beef-stock based mushroom gravy over the traditional tomato glaze that most recipes call for. That with some garlic mashed potatoes and some green beans is a perfect meal!
I have never had meatloaf with cheese, but cheese makes everything better! I thought it was funny, trying an all American meatloaf from a woman from the Ukraine! I believe I’ve tried at least one of Natasha’s recipes before, and it was good!
Meatloaf is just a bunch of burgers shoved together. There are so many variations. You mention celery and carrots and that is more like Shepard’s pie. You can it a cheeseburger or Italian with seasonings and mozzarella. Basically the ground beef is just a carrier for whatever your favorite add ins are.
I think every family has their own version of meatloaf. I like a more basic one. I sautee my chopped onion until soft, add them to fresh bread that I’ve torn into small pieces and soaked in milk (helps keep the loaf tender and moist), an egg that I’ve beaten, and some garlic, and salt and pepper to taste. Sometimes I’ll put the ketchup on it as it bakes, sometimes not. Some people put bacon on it to bake as well.
My late grandma's meatloaf was so good, and yet so simple. She always talking about how I always loved her meatloaf. She just used ground beef, diced onions, tomato sauce, and oats (and maybe eggs?). Mixed them and formed it inside a baking dish, and bake until it was done. Then she would spread a light amount of tomato sauce on top and put it back into the oven until the thin layer of tomato sauce on top thickened a bit.. Then it's done. I always spread a thin layer of ketchup on top of my meatloaf, and it's perfect. And I almost never use ketchup with anything else. We always ate it with mashed potatoes, and a vegetable side, or macaroni and cheese.
I think most people have their own way to make meatloaf so it’s always fun to try it from different places and people. I make mine the way my grandfather did and he said the secret to making perfect meatloaf is using your hands. I also make a meatloaf style burger on occasion and it has shredded cheese in it.
My dad used to make meatloaf all the time and would add a “mystery” ingredient. Then ask us to guess what it is. Most of the time it was beer (which he was most likely sipping on while making it) 😅😅
Meatloaf and mashed potatoes go great together
Meatloaf, homemade mashed potatoes, fried okra. Love to put a layer of cheese in the middle of the meatloaf. Yum!
Meatloaf, mashed potatoes and English peas. One of my favorite meals.
Green beans too yum.
Along with shucked corn and fried green tomatoes or sauteed green tomatoes. 😋
OH YES OF COURSE!!!
As an American, I've had my fair share of meatloaf, but I've never heard of anyone putting cheese on it. That's a new one for me.
Nor i
I didn't either but my wife does put cheese inside of it
@@josephdonathan7733 bbq meatloaf is very good
Never heard of cheese on meatloaf either.
I love it with cheese on a sandwich
The thing you have to remember about meatloaf is that if you eat it at ten different locations, you'll get twelve different versions of the recipe!!
Lol! 😂 True.
'aint that the darn truth!
That sounds delicious!😊
Thank you for sharing! I’ve been looking for a good meatloaf recipe and this sounds perfect
💕💕
U can also put cheese in the meatloaf
@@Anne.Pinkerton .....same recipe my mom used. Basically her meatloaf was a giant meatball...just shaped to fit in a loafpan! THE BEST!
My mom always used rolled oats. Works well.
yes.. eggs and bread crumbs. I also prefer to saute the veggies first.
It truly depends on the recipe
@@mickyo7171 true
I love it, too.
Need a good recipe.
Everyone loves their mother's meatloaf, and no other meatloaf will do.
I am a 58 year old American and we always put cheese on top, and ketchup.
I still make it the way my mom and nana did. My sons make it too at their homes. Put some baking potatoes or sweet potatoes in with it, add your favorite veggies on the side. Oh, and applesauce goes well with it. Plus, meatloaf sandwiches later.
I love meatloaf, and put ketchup on top. Never put cheese on top of it, but I'm sure it would taste good regardless.
Yes except for the onions. I'm 46 years old and I hate onions. Probably something I'll never outgrow because my mother is the same way.
I don’t think we usually use eggs but we put barbecue with ketchup and some brown sugar for the sauce.
@@minionman95 No eggs? What do you use for a binder then?
my grandma's recipe was crushed crackers instead of bread crumbsbut otherwise the same
This hit it on point. That's the recipe.
We always use oatmeal for the binder.
We added (hid) veggies to try to get our very young daughter at the time eat a few.
I use 1 beef ramen noodles crushed and 2 packets of beef powder, 2lbs ground beef 2 eggs ketchup on top last
A variation is adding 1 packet of Lipton Onion Soup mix as the seasoning.
I use Italian bread crumbs and Lipton French Onion soup mix and 1/3 cup of ketchup.
Very true.
So true. I’ve been making meatloaf for many a year and I don’t think I have ever made it the same way twice. I don’t follow a recipe at all. I use my basic ingredients and just mix it together and throw it in the oven. It’s classic for a reason.
Meat loaf is fine but cold meat loaf sandwiches are great.
Yep, forgot about relish.
I have had it a couple of times with oatmeal/rolled oats but most common in my region of the country is crushed saltine crackers
Mom used oats , too. One of our favorites.
Yes, mashed potatoes are a must with meatloaf. :)
Creamed spinach and baked macaroni and cheese
Or roasted potatoes and fried corn
mashed potatoes and sweet corn for me
Never liked mashed potatoes with it, baked in oil, slices triangles so the top is nice and crunchy.
Meatloaf is like a personal thing in American. Just everyone makes it a little different.😊
Just like "chili." ;)
Everyone has their own secret recipe / method. ^_^
Don't be afraid to experiment with different types of spices and ingredients in your meatloaf. That's what makes meatloaf so much fun. You can basically have a different style every time.
I have SO much fun with ingredients for my meatloaf. I probably use a dozen things.
My mom used to mix a packet of Lipton onion soup mix into the meatloaf as the seasoning and then put Heinz ketchup on top as a glaze where it would caramelize and thicken. The best, though, were meatloaf sandwiches, hot and cold, from the leftovers.
@@bdwilcox Try adding chili seasonings to make a Mexican style meatloaf.
It's good mixed with pork too.
Yes have done mini meatloaves too. One good thing with those is they cook faster.
💯 All of this! 👏👏👏
Yeah bread or crackers in it helps it bind together that’s why theirs was crumbly. My mom would also add Lipton onion soup mix to kick up the flavor
In America, it is common to own a meatloaf pan that is used just for meat loaf and other loafs - turkey loaf, lentil loaf, etc
I usually use panko but Doritos released a tangy ketchup flavor, and while the chip itself was not very good, I turned them into a dust with a blender and added them into the meatloaf instead of panko and it was delicious.
y’all are so wholesome & supportive of your kids this content is amazing
Meatloaf, creamy mashed potatoes with melted butter and chives, and corn on the cob. A classic comfort dish.
As a kid I've had it probably once a week, as my dad liked to make it on Saturday nights. The meatloaf he made had small pieces of finely diced celery, onion, and carrots sprinkled throughout.
I am a 62 year old American. I have never had the meat loaf version you had. It sounds like the next meat loaf recipe to try.
Agree.Never had meatloaf with cheese on it.
That sounds like a good idea to make. Now I want to try cheese on meatloaf.
Love seeing a healthy family relationship. Nothing feels forced .
A meatloaf cookbook is a great idea!
I’ve never tried Dijon on top. That sounds interesting 😊
I make a Meatloaf Wellington with brown gravy.
There ya go!
You had me at bacon, and then lost me at ketchup. I will have to try bacon on or in my meatloaf sometime.
Yummy 😋!!!
That’s How I learned how to make it from my Granny in Texas. 😋
Minus the brown sugar and that's the same meatloaf I grew up with. Still one of my favs!
This is what my mom made except saltine crackers instead of bread, w/ plain ketchup on top.
I grew up with my mom making meatloaf that way.
I add green onions in mine as well.
Also, after mixing I shape it on the serving pan and let the oven take care of the rest!
I would eat my leftovers cold.
LOVE meatloaf sandwiches!
Yes❤❤❤❤
Meatloaf with mash potatoes and greenbeans is still one of my favorite meals
I've never had meatloaf w/cheese, but since meatloaf is an individual family recipe, cheese can be yours. My family puts hardboil eggs lined up top to bottom inside the center before baking. Looks nice to get a slice with a cut of egg. Also, you must have mashed potatoes and green beans on the side to get full comfort
Mine has the hardboiled egg in the center for the scotch egg effect.
Don't forget the gravy !
Meatloaf gravy mashed potatoes and corn Was our family combo 🤤
No cheese on my meatloaf. Cheeseburger, yes.
@@MrScottsearles Yeah. I think I'll try it on just a slice. They made it sound good, but I definitely do not want to mess up a whole meatloaf. Haha
same here - never heard of cheese on it before
When I was a child, my aunt was making meatloaf for dinner.
Enjoy!
I've never put mozzarella in my meatloaf but I have put Italian seasonings and my favorite tomato based spaghetti sauce in/on it, then served it with pasta and the rest of the spaghetti sauce on the side.
love mashed potatoes with a thick slice of meatloaf piled on top
Cold meatloaf sandwiches!
I was wondering how many comments in b4 someone brought the other Meatloaf in. LoL.
Big fan of Mr. Loaf (RIP)!
Yes, that's how Mom made the meat last more by adding bread and definitely eggs to hold it all together.
Or cream of mushrooms😋
Not only have I never tried meatloaf with cheese on top of it, I have never even heard of it. And I've been eating meat loaf for 60 years. Must be a southern thing. Can't say it sounds that appealing but I'd give it a try. A good meatloaf is so comforting that doctors should prescribe it as a cure for whatever ails you. My grown kids still request that I make it whenever they visit. ♥
I've only been eating meatloaf for 62 years, and also never heard of cheese on a meatloaf.
Only 55 years for me. Lived in OH (Midwest) an FL (cannot count as the South, but can count for an abundance of cooking ethnicities). I have never heard of meatloaf with cheese, but have put cheese on a leftover meatloaf sandwich.
Agree.Been eating meatloaf for 63 years.Never heard of putting cheese on it.
Same, and I'm southern, so maybe not a southern thing.
No, it isn't a Southern thing. I've only seen meatloaf with cheese once. My aunt made it using a recipe of a friend hers from Arizona. It had no sauce, just Velveeta cheese on top.
I made meatloaf a few days ago with mashed potatoes with peas & corn 🥰 it was delicious. But, I've never seen cheese on top of it..
Try it with crumbled Kings Hawaiian sweet rolls I just add it to almost all the same ingredients as you but it’s a game changer. So good.

So whens dinner😂 philli cheese steak loaf? Sounds amazing
Meatloaf is beloved in your household yet I don't see Meatloaf Wrapped in Bacon
Yum.
Family bonding while cooking. I love it.
I’m so glad you liked it
You forgot mashed potatoes on the side, plus green beans! I always add oats. And please don't forget a meatloaf sandwich the next day!
Right, I think green beans or potato salad are the best side dishes depending on the season.
Mmmmm… meatloaf sandwiches with mayo and pepper! Maybe even a little mustard. 🤤
First time I did this I had people look at me so strangely. Glad someone else makes sandwiches afterwards.

I use oatmeal in mine too - as a filler, it's healthier than bread crumbs.
I have added onion soup mix too. Don’t like brown gravy but my hubby is from the south and loves it.
@@cindyluis4054 As a Southern gal, tomato-based meatloaf sauce is the bomb. Brown gravy is acceptable if it's what is available, but something about the sweet acidic tang of the tomato really brings out the flavor bomb in meatloaf.

I suggest trying 1 pound ground beef and 1 pound breakfast sausage some time. Utterly amazing.
Meatloaf with mashed potatoes is top notch

Isn't that a version of a Shepherd pie?

As a Minnesotan, i can testify that MOST of us in the Midwest love meatloaf and mashed potatoes!
My Midwestern mom use to make it with roasted potatoes. I like to also roast carrots or parsnips too.
A variant made with Swedish meatball sauce (beef drippings, sour cream) is absolutely addicting.

Actually the Sweet Ketchup sauce is referred to as a glaze. Usually applied as part of the last part of the cooking phase. 😊

I loved my Mom's meatloaf. She used onion, eggs, bread crumbs and spices. It always tasted so good.
In either case, mashed potatoes are a required side. lol
That recipe is the original one e for sure 100%
Thats how my granny made it!
Most people I know only love their Moms Meatloaf.
I have never had meatloaf with cheese. We always made a sauce with ketchup. We also always eat meatloaf with mashed potatoes and green beans!
@@jeffhampton2767 We always cook it with ketchup on top. Then have brown gravy on the side for whoever wants it.
@@jeffhampton2767 Yep, I definitely need gravy.
Enjoy :)
OMG.that sounds yummie
Nice to see everybody pitching in on this one!😁😁😁
My mom mixed saltine crackers to make it stretch. I learned to add Stove Top Stuffing in the can instead. Makes it seasoned already soooo good.
Saltiness, Ritz, bread crumbs, cornflakes, stuffing, we've used them all and liked them.
Absolutely! I do that too!!
Guys, as my dad would say: Apple pie without cheese is like a kiss without a squeeze. Try it with Sharp cheddar
NEVER heard of this and it makes me nervous thinking about it haha
Always had French Vanilla Ice Cream with Apple Pie - never cheese!
My grandpa always had a slice of cheese on his apple pie.
Boy that is making me so hungry for meatloaf right now.
IKR?
Meatloaf is my specialty..
There are so many recipes... depends on which regionof the country you co.e from
Meatloaf has a more tender consistency when you use what's called meatloaf mix.
So glad you liked this American favorite!
ooooo next day meatloaf in a sandwhich hits different. So good!
Yesss and mayo.
Mustard 's good on it too.
Meatloaf is delicious! Enjoy NZ family!
It's so awesome to see new Zealand family eating America foods and enjoying it so much
Always with mashed potatoes no gravy! I never tried the cheese version but tried the sauce and ketchup. It’s probably gonna taste a lot better after it sits in the fridge overnight! Great reaction and glad you like it.
Yes.meatloaf,mashed potatoes and gravy.Very good.
Meatloaf and Spaghetti, a mother's two secret weapons to getting veggies into their kids! LOL
When you say starting to go means you have had it for a while ,? Right
My mom would cover our meatloaf in Barbecue sauce instead of Ketchup and it was Amazing!!!!
Yes!!! I do bbq sauce too!! As did my mom!!
Of all the recipes you’ve made what has become a must have for your family
My mom's meatloaf is different from most because she has a mushroom sauce rather than tomato based. She also uses a breading binder. Goes well with potato dishes.
I actually prefer a mushroom sauce or a thick beef-stock based mushroom gravy over the traditional tomato glaze that most recipes call for. That with some garlic mashed potatoes and some green beans is a perfect meal!
I've had meatloaf my entire life and have never seen it with cheese on top. You taught me something new 😁
Try cubing Velveeta and adding it to the meatloaf. It’s so awesome!
I have never had meatloaf with cheese, but cheese makes everything better! I thought it was funny, trying an all American meatloaf from a woman from the Ukraine! I believe I’ve tried at least one of Natasha’s recipes before, and it was good!
Well, she came to the US when she was 4.
I also use Rice Krispies as a filler to absorb juice.
Interesting! I'm an American and have eaten meatloaf my entire life but I've never heard of anyone putting cheese on it before 😂 LOL
Yeah that sounds about right.
I think my mom may have added an egg too. Her topping was a mixture of ketchup, brown sugar and a small squirt of mustard. It was baked on the loaf.
