You can use crumbled saltine crackers instead of bread crumbs. I personally don't like oats in my meatloaf. Mix your crumbs and milk and let them soak before adding. My glaze is ketchup, a little brown sugar and Worcestershire Sauce. You can put some glaze on when it first goes in the oven and then add most of it for the last 10 minutes of cooking. You did a great job.
@@marydavis5234 Before retirement and working, I would do a 'quick' meatloaf using 1 egg, 6 saltines (or even quicker, crushed garlic crotons), 1 pack Knors Vegetable soup packet, ½ lbs Sage sausage, 1 lb hamburger, mix, form, ketchup on top, into the oven. Now I make totally from scratch.
What a delightful woman! I'd certainly watch her videos. She's charming and engaging and I love that she's so excited to try American foods. Great job!
I have never mixed pork into a meatloaf. It wouldn't be my thing. Run your onion under cold water and maybe wear reading glasses to chop onions, it does cut down the exposure to the onion oil. Did I miss where you added the egg? It's a binding agent, so it would hold your loaf together, but maybe you have yet to do it @4:45. Don't stress it Vicky, there's probably HUNDREDS of ways and preferences of making meatloaf.
I don't know if you have ever tried stuffed cabbage at a church picnic but those older women almost alway use pork in the stuffing. Its about 1/2 pound of ground pork to at least 3 pounds of ground beef. It's really delicious, not what you might think.
@@jeanruttgen5503yeah we use cracker crumbs as well. I think pork in meatloaf is disgusting. I don't even try a meatloaf in a restaurant unless I ask them if there's pork in it. 100% ground beef is what I want.
I love your Mom's cooking videos. Meatloaf is unique to the cook. I use oats, crunched up saltines, or breadcrumbs. It just depends on what I have on hand. I put tomato sauce in mine, and I spice the heck out of it. We like ketchup baked on top. I put it on the last 20 minutes. Meatloaf is best the next day because the flavors marry overnight.
BRAVO Vicky you created it like a pro! It turned out perfect and looks delicious! There really are no rules with meatloaf. I use different ground meats too. With mine I do add diced bell pepper, grated cheese along with the onion and sometimes drape the bacon over the glaze on top before cooking it. James and Millie both your Moms are just lovely! Please KEEP doing the "In the Kitchen with Vicky" she's obviously a great cook. Hugs from Wyoming - I love watching your videos so much!!

5 lbs of ground beef, 3 eggs, 2 cups of oatmeal, 1/2 cup minced garlic, 2 diced onions: (as per your taste), sage, Italian spice mix, black pepper, salt: (optional), diced canned mushrooms. Mix completely by hand and form in a casserole dish. Glaze with ketchup and bake.
My husband doesn't like mushrooms. I make layers with my meatloaf...depends what I have but one layer is always cheese and one side is cheese and mushroom. Any cheese tastes fine. I pretty much follow your recipe.
Doing great Vikki don't get overwhelmed it's definitely a great experience watching you try making recipes anyhow I'm sure you know perfect isn't always the first or last try it's what you learn when you do it
Your mom did a great job! I make meatloaf about every other week and serve it with mashed potatoes and greenbeans. We love it. You can make meatloaf sandwiches with the leftovers! Great traditional American meal.
Personally i use ground sausage with the ground beef. I also skip the italian herbs because the breadcrumbs i use have italian seasoning mixed in the crumbs. I use half the glace at the start and then the rest about 20 mins before its done.
You guys should try Chicken and Dumplings. Its another good one-pot comfort food meal, and its not as difficult as a fried chicken. I would also recommend maybe a Beef and Bean chili, and a simple BBQ pulled pork. All of these are 'low and slow' recipes that are extremely forgiving that pretty much anyone can make.
My mother grew up during the great depression before WWII. Cheap and filling were the watch words of the day. Her mother (my grandmother) used ground beef, chopped celery, chopped onion, an egg or two as a binder, various spices, and crushed "Saltine crackers." NaBisCo (National Biscuit Company) Saltine crackers came in a waxed paper sleeve, 4 sleeves to a box. You simply took a tube of crackers, crushed them while still in the sleeve, then poured the crumbs into the beef and mixed it in. The eggs were mixed in as the binder, and the cracker crumbs were the "stretcher." They were to stretch the meal to feed more people. Lastly, pour some ketchup directly from the bottle over the meat lump and bake. Served with mashed potatoes, topped with either brown gravy or butter, and a bit of string beans.
I still use soda crackers - something about them works better, don't know why. A funny thing - I guess it's an example of "shrinkflation" - a sleeve of saltines today contains quite a few fewer saltines than a sleeve did in the depression, so you have to add about 10 or 12 extra crackers to keep the recipe true.
@@BernardProfitendieu Lucky person you. My Dr. has me on a meatless diet. I really miss my meatloaf. But i think you are probably right about the number per sleeve. i notice you don't find them in the old "tins" much anymore either.
@@imfirehawk72 Sounds good to me. My eldest daughter has a reaction to celery, so back when we did this we had to leave out the celery. I can't have it anymore, so of course I would love it either way.

Vicki's meatloaf looks delicous and I can almost smell it thought the computer monitor screen! Speaking of Dollywood, The Beesleys and Vicki should react to Jolly Channels trip to Dollywood! It's nice to see Milly smile and be more relaxed. There are probably 1,000s of meatloaf recipes and most people don't use a recipe. Bread crumbs are more common but the oats taste alright. Some people used stale bread or buns soaked in milk or cream then added. Italian seasoning is not very common. I've had meatloaf with pork and it was good but usually it's 2/1 mix, 1 pound of ground beef 1/2 pound of ground pork. You can glaze it whenever you want a lot of people put bacon on top to give it extra flavor but you have pork inside so kind of the same thing. Your meatloaf looks beautiful.
I just use ground beef and bread crumbs. I use 1 envelope of French Onion Soup Mix. I also use the recipe off that box for meat loaf. For my glaze I use ketchup, brown sugar and hot mustard. I pour it on before I bake. Yours looks good. I fix baked beans and potatoes of.some kind.
Our family meatloaf is 2 part beef, one part pork with salt, pepper, onion salt, uncooked oatmeal, one egg, and 1/2 can of tomato soup. Mix all together, then we put it in a cake pan or whatever that is slightly deep, form the loaf shape, then pour the remaining tomato soup over the top and let it drip down the sides. We love to serve it with mashed potatoes, and my mom used to make meatloaf gravy from the pan drippings, but I'm terrible making gravy, so I get mine from the store. Enjoy your cooking videos. Keep up the good work!
I'm from the pigeon forge/ Gatlinburg area. Growing up, my mom always put green bell pepper in hers. I didn't really like that combination and when I got older, I made it my own way. I like it with oregano, sage, thyme, paprika, salt, pepper, and plenty of onions and garlic throughout, with a thick glaze of ketchup mixed with brown sugar and Worcestershire sauce on top. Oh and ketchup and mustard for dipping. I don't know how I feel about the beef/ pork combo, I prefer just straight beef. This is such a comfort food for us southerners
When I make it I use one hand to mix and the other to spin the bowl. I open my hand and squeeze the meat so that it goes between my fingers. Rotating the bowl at the same time. It helps blend the ingredients completely. I use beef, egg, bread crumbs, brown sugar, salt, pepper, Basil, chopped onion and a couple tablespoons of ketchup.
James, thank you for sharing Vicky with us. She is an absolute star. Her cooking segments are so delicious but she should post her recipes under each post so others can follow them exactly. Love and hugs.
The key to cooking anything perfectly is if you and your loved ones enjoy it. Recipes are only a starting point, adding your own touches makes it yours. It looks fantastic!!!
Great job Vicky! My mom always added peeled hardboiled eggs in meatloaf and I do also. In a loaf pan put down a layer of meat. Then add the eggs in a straight line (probably 3-4 in the row.) Then mold the rest of the meat mixture around the eggs and top to cover the eggs. We love it that way. It's a little surprise when you cut into it.
I basically do my mom's recipe. She always used crushed Ritz crackers (buttery crackers) for the bread crumbs; really good. I also add some sage, along w the onion etc. The egg and the milk; and especially the milk are necessary. I had some meatloaf that someone made without the milk, and it really was dry and not good. For the topping she and I use ketchup mustard and brown sugar mixed; not Worcestershire sauce. However a lot of people use the Worcestershire sauce, and yours did look delicious!
It looks like Ritz crackers are banned in England 😂 but that's how I make it! I grew up eating peanut butter crackers made w Ritz for lunch, because I hated regular (mushy) peanut butter sandwiches 😂 you can make meatloaf however you want (and differently everytime), but the important thing is don't forget the milk!! :)
The bread and egg are used as a filler and helpp bind the hamburger together. My mom would cook it halfway then add the glaze, but she would cover the meatloaf with aluminum foil to keep the glaze from burning and keep the meatloaf moist. Great job on your first attempt!!!!!
Lovely job with your first meatloaf, Victoria! I grew up with meatloaf being a regular item on the dinner table, it was a family favorite. My personal recipe uses all beef, buttermilk instead of regular milk, an egg, a chopped green bell pepper, a chopped Vidalia onion, 2 tbsp W sauce, 1 tbsp liquid smoke, 1 tbsp of minced garlic, 1/2 tsp black pepper, 1/2 tsp Celtic salt, and although I sometimes use bread crumbs (when I'm lazy), my preference is actually to take a sleeve of saltine crackers and crush them up. It's one of the ways my mother used to make meatloaf, so my palate is pre-conditioned for it. Other times, she would just take several slices of bread and tear them into tiny pieces. The glaze I make has ketchup, W sauce, liquid smoke, a little apple cider or juice, and some brown sugar. I cook the meatloaf to around 80% done, then glaze it and put it back in the oven for the remaining cook time. Leftovers -- if there are any -- make great sandwiches. Sides that go well with meatloaf include a potato dish (mashed with plenty of butter, baked potato loaded with butter/sour cream/seasoning, or au gratin potatoes), corn on the cob, green beans, and cole slaw. Dinner rolls (with butter!) are a must, also. A pie or cobbler with ice cream is a wonderful finish to such a feast, so save a little room if you can. Loved the video, guys!
Love watching your Momma cook and bake. Vickie I would after mixing all of the ingredients kinda pat it out and put any type of cheese in the center then roll it up and pat it into a loaf the top it with ketchup and pop it in the oven. Soooo good. Love your cooking and baking videos. Sending You a hug 🫂 Love From Michigan and it's a beautiful evening ❤❤ The meatloaf looks so yummy 😋 😋 ❤and delicious 😋 ❤
I’m 2 weeks late, but the smile on your face while you’re showing that lovely dish just lights up the world! I’m sure it tasted as good as it looks. Wonderful, thank you!
Excellent job! It looked so good it made my mouth water. Meatloaf is really good with mashed potatoes, corn-on-the-cob (buttered and salted) and a cold glass of milk.
My original recipe used Beet, Pork and Veal. Veal is now harder to come by so Beef and Pork. The idea of a meatloaf is to use up the smaller bits of ground meat in the refrigerator. The egg acts as a binder, the bread crumbs help to extend the loaf. I add onion, cumin, bell peppers. Our glazes are very similar. American meatloaf also has reputation for being better as a leftover.
Sure. Tell us about Pigeon Forge. I've never made it there. I prefer pork and beef with bread crumbs. Did you use a teriyaki glaze? The final result looks great.
So many different meatloaf recepis.. Bottom line it's ground beef, some seasonings, and a binder.. can be eggs, or bread, or bread crumbs.... I like to use tomato sauce, or paste, or can of chopped tomatoes. OR.. I go more savory with onion soup mix and bacon wrapped. Yum..
I use crushed-up saltines and add different spices because the bread crumbs in a canister usually have spices blended in already, at least where I live. Also, they are way cheaper.
Looks great! I use panko crumbs. The loaf will shrink and the glaze will coat it. I use ground beef and turkey sausage with a BBQ sauce. I glaze about 15 minutes before it's done. Bread crumbs or oats change the texture of the loaf. Oats gives it more bite. When my boys were growing i used a 5 or 7 grain mix to keep them full!😂 A bread loaf pan will evenly cook it from all sides. NOTE: take a pinch and fry it off to test your flavors before cooking!❤
Vicky, you did a wonderful job! I usually put my glaze on towards the end of baking, but yours looked just fine putting it on at the start. Yes, I use a combination of ground pork & beef and I shape it just like you did, placing it in a rectangle baking dish like you did. A lot of us will foil line the baking pan too, so cleanup is easy I’ll put the loaf on a small metal rack (foil wrapped) to keep the loaf from baking in the grease. Yours did not have this issue..A job well done! So pleased you all enjoyed it.

I use one pack of Lipton onion soup mix in both meatloaf and hamburgers.
Slice cold meatloaf the next day,fry in hot pan to crust the sides make a samich yum yum
Your mom did fantastic making meatloaf. I can tell she is loving and supportive. Also happy you enjoyed your first meatloaf. 😊
It turned out beautiful!!
I use cracker crumbs and no pork.I also use a bigger pan and put potato wedges in the pan they bake in the meat juice.
You can also put in freezer for 10 minutes
I don't know if you have ever tried stuffed cabbage at a church picnic but those older women almost alway use pork in the stuffing. Its about 1/2 pound of ground pork to at least 3 pounds of ground beef. It's really delicious, not what you might think.
@@jeanruttgen5503yeah we use cracker crumbs as well. I think pork in meatloaf is disgusting. I don't even try a meatloaf in a restaurant unless I ask them if there's pork in it. 100% ground beef is what I want.
Victoria is super! I hope she starts her own channel.
Ikr what a sweet mommy... She a gem.😊
*sniff sniff* 😋Victoria's in the kitchen again! Please start a channel!
Vicki
I enjoy seeing y'all enjoying and appreciating American food, etc.
I have never heard of meatloaf with pork in it. Lived from TX to CA to ND, it is a beef recipe.
Love your Mom James! Put her in the videos as much as possible. Also, love your Mom Millie. They add a lot of depth to the vids. They're both pretty cute as well!
His is cuter than hers, just saying.
@@davidcosta2244Women don’t owe you “pretty” or cute…just saying.
@@davidcosta2244 wow that gross, keep shit like that to yourself.
MUM ROCKS!!! GREAT of her to try these new recipes and have them for ya'll to try!! GREAT REACTIONS!!!! GOOOOO, MUM!!!!!
Your mom did a great job on her meat loaf! I can see many more to come because it's so good!
James. Your Mom is such a sweetheart! She’s amazing at making these items from recipes she’s never seen before and doing such a good job. I really enjoy watching these videos!
Vicky, love your positivity and interest in the US. You are doing a great job with your presentations and will get better and better with each dish you make. Thanks for joining in!
James, your mother is a living doll! So kind and sweet! Y’all’s little family is the best!!! Blessing to you all!!!
Pork and beef mix! Mmmmmm excellent choice!
Excellent ingredients!!!
Ground turkey works just fine as well, in equal proportion with beef.
My mother always used beef, pork and veal.
Absolutely amazing! Mum needs her own cooking channel! Get it going Vicki!
I love your Mom she is adorable! ❤️
Wow Vicky! You rock! That was a fantastic looking meatloaf ❤
Take out the celery and that’s exactly how I make mine. Which I learned from my mom who learned from my grandma.
@@imfirehawk72 Sounds good to me. My eldest daughter has a reaction to celery, so back when we did this we had to leave out the celery. I can't have it anymore, so of course I would love it either way.
This is absolutely awesome. Now James mom is a star!!!
I also love using meat loaf slices to make meatloaf sandwiches! I love watching James' Mom cook! Great job Victoria! Vicki's meatloaf looks delicous and I can almost smell it thought the computer monitor screen! Speaking of Dollywood, The Beesleys and Vicki should react to Jolly Channels trip to Dollywood! It is a great video to react to and I bet James' Mom would enjoy reacting to that!
My favorite meat loaf was at a local restaurant and they put a teriyaki sauce on it instead of tomato.
Looks delicious; James your mom is a wonderful cook
I use the same but use eggs instead of bread, and put ketchup in it and then ketchup on top
Sounds good got to have onions for sure French onion soup mix or sauteed onion I don't like it without onions.
Love the mother. She could have her own cooking show on TV. Go, Mom!
I’m an American that lived in England for three years! Just joined today.
It’s so fun hearing your stories compared to my England ones!🙏❤️🇺🇸🇬🇧
I love you guys, its infective watching your enthusiasm for new things.
I absolutely love your mom❤ Ms.Vicky is the real MVP!! (Most valuable person) ❤ keep them coming I love her videos 🎉🎉
You're the first person in the comments that mentioned Oats instead of Bread crumbs. That's the way my Grandmother made her's.
Uncooked oatmeal sounds very promising! Going to try that one next time
Yeah sorry, YUK.
Meat loaf is very good.Vicki did a great job making that.I like it with sides of mashed potatoes, corn and green beans. Thanks you all for this video.
Yeah. My mom my grandmother and my aunt's. They all make their meatloaf different. I don't know why but they're all. Delicious. William s
It's just as good if not better the day after, and makes GLORIOUS sandwiches. Cheers!
Much love to your mom. Love her cooking videos.
Yes it is! And then having Meatloaf Sandwiches the next day for lunch. 🥪
Meatloaf is like soup. You throw in whatever you have on hand.
I use breadcrumbs or instant plain oatmeal, but I combine them with the milk (a panade) before adding to the meat.
Would love to hear about the Children's library.
Milk and breadcrumbs is called a panade and helps keep your meatloaf moist.
Meatloaf sandwich - couple of thin slices (warm or cold), mustard between two slices of bread.
My mom used to make it that way too, many years ago.
Thank you, I will definitely use your suggestion.😊
That's now my mom made it! A row of peeled hard boiled eggs in the middle and bacon on top.
Buffalo area - 1960's.
I love Vicky! Keep it going! I love how much you love our food - I am going to think of some things for you to try.
Looks good! Your mom did great
Meatloaf is part ground beef and part ground pork and it's good for sandwiches or added gravy and mash for the meal
Great job Mom! It looks delicious! Love your cooking videos too👏
Lovely job with your first meatloaf, Victoria!
I grew up on pretty much this recipe. Good for you for trying new things!
It's hard to go wrong with meatloaf. Your Mom did a great job.
I support the Imagination Library. I’d love to hear more 😀
Everyone has their own favorite recipe. You are a great cook and do a wonderful job with these recipes.
Yum..
I add stuffing to my meatloaf, sometimes add some instant mashed potatoes.
@creinicke1000 My mom used cornflakes in her meatloaf.
When my boys were growing i used a 5 or 7 grain mix to keep them full!😂
A bread loaf pan will evenly cook it from all sides.
NOTE: take a pinch and fry it off to test your flavors before cooking!❤
What a beautiful view outside your door!! I would love looking at that everyday!! 🥰
