I'm a native Texan, and while I NEVER make chili with beans in it, I often eat my chili with beans added to it, just as I sometimes add chopped onion, shredded cheddar, or cooked rice to the bowl. It just depends on my mood an what leftovers might be around. In fact, leftover chili ladled onto a spinach and cheese omelette with leftover cornbread on the side makes a fine breakfast!

But beans are high in protein and so many people started adding those especially if they couldn't afford much meat to do the dish. I like both styles. Though you do get gas attacks with the beans...

I'm 70 years old and my mother taught me to make chili with beans. I've never even ordered chili at a restaurant that didn't have beans. I'm sure there are regions in the US that eat it without, but it is just as common to eat with. I grew up in Indiana. I have lived in New Mexico. They had beans in their chili. I make that and we call it chili pie. I like corn muffins and usually add a small can of creamed corn to the batter. The other meal I eat that has to include corn bread is ham and beans.

@@undie3x7it’s a Texas thing. The very name “Chile con Carne” translates to “chili with meat.” There’s obviously no mention of beans but that’s become the norm outside of Texas (where chili originated) P.S. the meat need not be beef nor even ground meat.

    • @undie3x7
      @undie3x7 ปีที่แล้ว +3

@santamanone umm I'm a Texan from San Antonio. Chili originated in Mexico, not Texas. I'm a chef here and obviously learned to make chili here. Chili con carne, which is typically just a topping(condiment) for tamales or enchiladas etc, typically doesn't have beans in it but can include beans. Even back in the 1800's could include beans. Chili served as a stew/soup(entree) typically does have beans in it. As for your point chili con carne name does not mention beans. It doesn't mention tomatoes or onions either but they are also part of it. Just cuz it isn't in the name doesn't mean anything. The name just conveys what is the main or most prevalent ingredient, which in any form is the meat.

My dad always ate them with butter and maple syrup or jam. With the chili, you can always add grated sharp cheddar cheese, avocado or diced green onions too. Great video! Thank you. I prefer it as a side dish. Goes with almost anything. Many restaurants in the US will offer muffins with the meals. The cream corn is my favorite. Was at someone’s house for dinner and their corn bread had the cream corn, but also had a small mix of the early peas and diced carrots! Had my doubts but it was really good! My dad , from rural Tennessee, his favorite meal was Ham, black eyed peas, collard greens, and corn bread! Enjoy Y’all!!! 🇺🇸

One of my favorite dishes of my late grandmother's was what she called Mexican Cornbread.
    • She cooked ground beef with minced onions and a minced jalapeño. (Seeds removed)
    • Then mixed her cornmeal with a can of cream corn.
    • Then she would pour a layer of the cornmeal batter in the bottom of the baking pan.
    • Then add the cooked meat on top, in the baking pan.
    • Then layer the top of the meat with sliced cheese.
    • Then add the rest of the cornmeal batter on top, for a covering layer.
    • Then bake until the cornbread is done.
    It's simple, but sooo good.

We make brown beans with a big chunk of uncured ham, slow cook them bad boys for 6 or 7 hours, and season with salt and pepper. Peel and slice an onion lengthwise and toss it in there to cook too! Make some buttermilk cornbread, butter it and then crumble it into your bowl of beans. You want the beans to be moist, but no standing liquid after you add the cornbread. Just mix it together in the bowl. Heavenly food!

      "Texas Chili: No Beans Allowed
Carol Hancock, President and CEO of the International Chili Society, makes a good case for why there are no beans found in true Texas chili: because that is just the way it is. “I think there is probably no consensus on one idea (of what defines chili), but the reason why we don’t allow beans in chili is number one: real Texas chili has always been known as meat and the sauce with peppers,” Hancock said. “Beans don’t come into play at the cook off because if our judges are trying to determine a taste, beans are a dominant flavor and we wouldn’t get the pure chili taste.”

Pinto beans with whatever is left over of the ham/pork butt and the bones over fresh cornbread full of melted butter with a fresh, quartered sweet onion to be eaten raw with home fries on the side and a nice glass of iced tea is a pretty damn fine Sunday dinner. It doesn't look amazing, but it does taste that way and you will be full for days!

I grew up on two types of cornbread: savory cornbread made from scratch (like you made it) and sweet cornbread (Jiffy Mix)... and I have to say that the sweet cornbread ended up being my favorite. Split a muffin halfway down the middle, add some salted butter, and its absolute heaven. I make cornbread three times a week in my house and there is NEVER any leftovers. Edit: Always bake your cornbread in a cast iron skillet, ALWAYS.

Another great mix is Zaterians-spelling likely wrong.. I like going from scratch but the wife needs gluten-free, with a mix I often add lots of extra cornmeal as most mixes are stingy on the meal, then more moisture is needed, so I dump in lots of apple sauce, I never measure, just add until the batter is right, a bit of cinnamon goes well, or get the applesauce with the Cin. I am already in it-lots of ways to go with it-we don't use sugar as I am diabetic-but Stevia works great- I like it better than sugar.

We call that tamale pie in west Texas. It usually has a little more heat and spicy seasoning, but it's essentially the same. So glad you enjoyed it. If you make cornbread by itself, do bake it in cast iron. Put some shortening or oil in the skillet and heat it in the oven before putting the cornbread in. Flip it over when you take it out and it will have a nice crispy top. TFS.

Chili is one of those dishes that Mom made to provide a quick, inexpensive, meal. Adding beans made it go farther. It is a comfort food because it "warms you up" and reminds you of home. Soups and stews also started with a basic recipe that was often extended with leftovers or fillers (especially if you were feeding teenagers). [Actually, my dad often made the chili. He once was inspired to make the "Jail Chili" recipe from The Saturday Evening Post. The prisoners did not get beans, but it was spicy, so they probably did get the cornbread to cool it down.]
