Kay, I just wanted to maybe give you some pointers about what a risotto is, and to hopefully help you develop as a cook (if that is your intention). 1. This is not a risotto. You need to constantly stir the rice to agitate the starch, which makes it creamy and soft. you cannot cheat, and put a risotto in the oven. 2. You put the prawns in too early. If you insist on using pre-cooked frozen prawns, then add them in at the end just before serving. they are already cooked, so only need warming through. (I urge you to use fresh raw prawns if you can) 3. Use fish stock or chicken stock instead of water 4. Add some white wine to the rice and onions, and cut the onions smaller. They will release more flavour 5. Best rice to use for a risotto is carnaroli. It makes a creamier risotto. You can buy it at Asda and costs about the same as arborio. 6. Use Olive oil, not veg oil. Even the cheapest olive oil is going to give you more flavour. Veg/sunflower oil is for frying, and has no flavour for something like this.
I wouldn't waste your time washing the onions Kay. Once you get the skin off etc, they are fresh underneath. If you see on packets where it say 'wash before use', then this is to wash pesticides off (which are harmful), from stuff that you are will eat straight into, like apples, tomatoes, maybe potatoes, grapes. I wouldn't bother washing oranges for example, as it's the same as the onion - fresh/protected underneath. Keep up the good work. You're very dedicated, harmless and fun, which is hugely admirable! We never used to wash our meat and vegetables in our home but since I saw you doing it I've started and now everyone I know is washing they're onions and mince meat it's no wonder I used to get so Ill! Was hoping for a dog friendly recipe, far too many onions in this one! Have been making sure my dog gets the recommended 2 sausage rolls and 2 eggs as recommended by yourself and lee though, keep up the good work.

Hi Kay, if you've seen Gordon Ramsay's risottos, well, the ones he gets people to cook on Hell's kitchen, you'll already know that your version looks a million times better than any risotto ever made on that programme. His just looks like a porridgey slop whilst yours looks really interesting, with all the rice grains nice and cooked but still with their shape and all the other ingredients looking really nice. For anyone who thinks I'm being sarcastic, I'm not. Just go and watch Hell's kitchen and you'll see what I mean about the horrible green gunk Ramsay calls risotto! Well done Kay!
