  • In many Trinbagonian households, it's not truly Christmas time without some HAM:
Yield: About 64 (3 oz) Portions
    INGREDIENTS
    1 Large Shoulder Ham (11 - 13 Lbs)
    15 Spice Cloves
    1 Cup of Brown Sugar
    ½ Cup of Honey
3 Tbsp of Minced Fresh Fine Thyme
    METHOD
    1. Preheat oven to 350 degrees fahrenheit.
    2. Place shoulder ham on a flat sheet pan. With dry napkins, swab and dry the outer surface area of the ham and ensure it is dry all round.
    3. In a slightly shallow and wide baking tray, line the inner base with two layers of foil. Place ham in the baking tray with the fat cap up.
    4. With a small paring knife, stick slight holes into the surface of the ham and gently push one clove in each hole. (Do not put too much cloves as this can have an overwhelming flavor)
    5. Cover ham with foil properly.
    6. For each pound the ham weighs, cook for 18 minutes and place in the hot oven to bake.
    7. In a small bowl, mix the brown sugar, honey and thyme and let sit for flavors to mingle.
    8. In the last 25 - 30 minutes of cooking time, remove the foil of the ham and apply the Honey & Brown Sugar Thyme Scented Glaze. Do this evenly with a brush and place back in oven to finish cook or until the internal temperature of the ham reaches 150 degrees fahrenheit by sticking a cooking thermometer in the centre of the ham.
    9. Remove from oven and let sit for half hour before slicing.
    10. Serve sliced ham in sandwich style with homemade bread and top with a few teaspoons of chow chow.

I prefer to REMOVE THE FAT CAP before GLAZING.
I cook the ham with the fat cap on - 20 minutes per pound plus 20. At the end of that period , I remove the fat cap, stick the cloves ,pour the glaze and spread evenly with a brush.
Back in the oven for 15 to 20minutes .
I think keeping the fat cap during glazing will not allow an even penetration of the surfaces .

Thats going to be one salty ham. I usually boil the ham for a few hours to get some of that salt out. You can put some clove in the water to add the flavor as it boils. It does 2 things, it infuses the clove flavor and removes the heavy salt at the same time. Then I go through the baking process and insert more cloves in and around the ham. That ham was not cooked enough. Well, to be honest, I don't know what kind of ham you use but where I am they are salty as hell, so you have to boil them first before you bake. Maybe you didn't need to do that there with that ham. But other than, that I would say have a portion of high blood pressure. lol...

So this is my third year making it like this and they luv it. Best recipe ever. I do boil my ham first with lemon, clove and allspice. Then put to bake on a rack with clove. I put water, white wine, bayleaf, anise, few clove, and couple allspice/pimento.. cover and bake. And thise are like 2 pieces each.... thats jus for infusion. Truly i luv this recipe. I use to put alot of clove on the ham before. It wasnt bad but like chef said it gets over powering. So now is jus 10-15 and it wotks excellent. 3 time running and is always a hit. Thanks Chef👍🙏💚

    • @natashaalfred2645
      @natashaalfred2645 3 ปีที่แล้ว +2

Seno Ryan: I think if you are going to cook a dry ham encased in tar then you will need to boil out some of the salt first before baking it.
The frozen hams in the supermarket usually do not require boiling before baking...just thaw to room temperature, wipe dry and bake.

My hams are season with cloves most definitely. Orange juice sweetened with brown sugar, lil salt, lil basil, not a whole TBSP of salt nope. Aah lil bit to add a flavor to Oj. Little bit of stuff. Orange marmalade. Pour Oj syrup over it. Then pour jam over syrup. Cover just as they did. Nice & thight. Bake.
