    Christmas is right around the corner. No need to pull out the pastelle press because we’re making Beef Pastelle Pie! This one’s a special request by Chef Jason who will say ‘see you later’ to the Foodie Nation fam soon. He'll make a few more recipes with us before his farewell though, so stay tuned because they’re GOOD!

    We put a piece of greased fig leaf in the bottom of the dish before assembling the pie, then as soon as it’s out of the oven! Place another piece of banana leaf on the top and then cover with foil and to steam, in that way, you get the some of the real pastelle smell and flavor.

    Oh yes!! I am in Canada and can’t get the fig leaves to make the pastels. This will be a great alternative. Thanks so much for these great demonstrations of my favourite foods - and your fantastic personalities too!!

      Where in Canada do you live? You can get banana leaves from Asian supermarkets

    Wonderful recipe. A little variation for me would be to some how line my dish with greased banana leaves before adding my cornmeal. And still add some at the top to create that true true long time flavor. Might be tricky being in the oven but with some thought its doable.

      I totally agree but the leaves add that earthy flavor so I'd try it at the base n top ....no tying no folding no steaming

      @@DC-vw7yf yes. Just like with the actual pastel, after heating the leaf to make it pliable you rub a little oil to help it come out smoothly from the pan.

    Excellent👏👏👏 I like using shadow benny and spanish thyme to cook the meat and finish off with chopped chives and hot pepper😁 to spice things up..the colour was sooo tempting👍👍great job👌👌

    Tried it with corn meal (just making with what I had) so it was dense but still quite moist, and reduced by 1/3 to fit in a 9x9 inch dish. I'm probably light-years away from anything resembling a pastelle, but it was easy and came out tasty.

    Thanks guys.. I combine the meat and the cornmeal, I never thought of using BBQ sauce though, I'll give it a try, must have capers for me and I top with cream style corn instead of cheese

    Reminds me of Chilean pastel de choclo, which is a delicious corn kernel based cottage pie.
    I can see that working with Caribbean flavours for sure.

      Now I want to make that again. (Not Chilean, but my cooking is eclectic)

    Made this but it used about 2 cups of corn meal alone. 3 cups would have gotten it stiff. Note that I followed all the measurements. Not sure if this happened to anyone else.

    I like to cook the beef Halfway, then remove it from the pot and I cook my aromatics in the beef fat before adding the beef back in to finish cooking...

    Hey foodienation, I was wondering how come we don't wash minced meat (chicken, beef, pork etc) with lime or vinegar but we wash the chicken pieces, beef etc.

    In order to get the real Pastelle taste I base the bottom and top of the bowl with the banana leaf and put the foil over it.
