It's that time of the year again. I make pastelles every year and I still need a refresher. This is one of the better recipe and technique that I have seen.

I have never made pastelle because I taught is was slaving hard work to make but it was so easy to make so i'm surly going to try this. My 9 year old son is all excited to help make also because he loves loves pastelle .

I made a vegan lentil and bodi filling (adapting Natasha's lentil and mushroom recipe). However, we used this video to make the dough and assemble the pastelles, which were delicious. Thank you so much for these clear instructions.

In Puerto Rico ower dough is complete different but filling is almost the same. We use roasted chopped pork shoulder then we mix it in stewed pork broth, ham, rasians, hot pepper, chickpeas, olives, tomato sauce (not paste), capers, sofríto (similar to green seasoning), annatto, thyme, and paprika. Some people add chopped potato but I like my potato grated in my dough.

Hi. If you don't have the fig leaves you can use parchment paper or foil but the parchment is better. The fig leaves is what adds that beautiful flavour we love.

I used corn flour and tried this and it did not come out good. My friend told me that corn flour is the wrong product and that I should use pre-cooked cornmeal. I'm going to try it again with the pre-cooked cornmeal.

Promasa cornflour is what we use in Trini, looks like cornmeal bt finer. Nt white corn flour that looks like corn starch.

Hi. If you don't have the fig leaves you can use parchment paper or foil but the parchment is better.

Cornmeal is used. Just make sure it's a refined cornmeal like Promasa.

Most grocery stores have them especially around Christmas...if you’re in Trinidad check JTA, Massy, Price Club or even Xtra Foods!
