Yah, but if you really want to chop it finely enough, you smash it with the side of the cleaver which does most of the work, and then you choppity chop the mash. You don't need to slice it in this context (though in other Chinese dishes, you might slice the garlic).
Still, it's pretty hilarious to peel the garlic first. SO much easier to smash it, then the skin comes right off and it's easier to mince. I don't understand why'd you'd do that in any style of cooking.

I would argue that what differentiates a chef from a cook is the ability to develop and create cuisine rather than just follow existing recipes. If all you can do is emulate well but can't do anything original, that makes you a good cook but a worthless chef. That said, modern professionally trained chefs (especially "Anglo-Saxon" ones) tackle everything from the perspective of flavour theory and a more "scientific" understanding of technique, which means that more subtle cultural elements gets ignored. Gordon is as guilty of this as anyone else, just have a look at his abortion of a Carbonara video...

I'm Asian and everyone I know use the same kind of basic rice cooker. Zojirushi is expensive when all you need is something that can cook rice reliably all the time.
Yup, Zojirushi is the Rolls Royce of rice cooker. Don't need to buy such expensive ones. Decent brands like Tiger, Mijia and any mid range Chinese or Japanese rice cooker will suffice. Also when cooking with Chinese soya sauce or whatever sauce and oil, don't add them directly. Splash it to the side of the hot wok. It will cook and change the flavour as well allowing even distribution.
NGL the amount of soya sauce, sesame oil and MSG poured into that fried rice gave me a mini heart attack...I can literally taste the saltiness from the screen

Asian grannies have randomly materialized out of nowhere and steered me in the right direction at the asian grocery store many times. That simple rice cooker is the business, I've had mine for 10 years, it cooks all types of rice and I've used it for cakes and veg too. It cost £10 and is easily the best thing I've ever bought.

It'd work fine in egg fried rice. Uncle Roger does not have a point, other than it'd be less traditional. "Traditional" is not the only way. Only bad cooks (and ironically, Italians) think there is only one way to cook. I suspect the guy who plays Uncle Roger is well aware of that. Uncle Roger says you don't want to suddenly be hit in the face by garlic, but that is precisely the point of this method. Slicing the garlic thinly gives the dish a more subtle garlic flavour than if the garlic was minced. You slice it so you AREN'T hit in the face with garlic. The slices themselves are fairly mild once they have been crisped (think about how much milder a taste cooked onion is to raw onion, same thing) and they give you a nice bit of texture. Things like using a wok, using day old rice or not stir frying in olive oil...those have solid food science reasons for why it's done that way. Slicing garlic? That's just preference, like making it more or less spicy.
Just a quick note most places in Australia have only recently started selling the fancy fully enclosed rice cooker. The type used by vincenzo was the only one that most non asian Australians had access to.

Omg I ruined a really nice meal my husband made with soy sauce. We did a taste test before plating and it was gorgeous. we plated it and husband put a dash of soy sauce while I was getting the kids to sit down. Sliced garlic in fried rice is actually really good, especially if you fry the garlic first until slightly brown and crispy. I see it mainly in Japanese-style fried rice.

Asian grannies have randomly materialized out of nowhere and steered me in the right direction at the asian grocery store many times. I'm a pretty decent cook, but it' s always nice to try a new brand or ingredient I wouldn't have otherwise, and I appreciate their kindness. And none of them ever worked there 😂

That simple rice cooker is the business, I've had mine for 10 years, it cooks all types of rice and I've used it for cakes and veg too. It cost £10 and is easily the best thing I've ever bought.

6:15 Yes the thin slices is an Italian thing. You do it when you are trying to infuse olive oil with garlic for things like aglio e olio.
Yeah but not with egg fried rice or for asian dishes. Uncle Roger has a point. You dont want to be slapped with a big slice of garlic while eating rice.
It'd work fine in egg fried rice. Uncle Roger does not have a point, other than it'd be less traditional. "Traditional" is not the only way. Only bad cooks (and ironically, Italians) think there is only one way to cook. I suspect the guy who plays Uncle Roger is well aware of that.
Uncle Roger says you don't want to suddenly be hit in the face by garlic, but that is precisely the point of this method. Slicing the garlic thinly gives the dish a more subtle garlic flavour than if the garlic was minced. You slice it so you AREN'T hit in the face with garlic.
The slices themselves are fairly mild once they have been crisped (think about how much milder a taste cooked onion is to raw onion, same thing) and they give you a nice bit of texture.
Things like using a wok, using day old rice or not stir frying in olive oil...those have solid food science reasons for why it's done that way. Slicing garlic? That's just preference, like making it more or less spicy.
We need to see the both of you on a TH-cam video cooking a challenging meal. Now that will be entertaining to watch lol
Just a quick note most places in Australia have only recently started selling the fancy fully enclosed rice cooker. The type used by vincenzo was the only one that most non asian Australians had access to.

Omg I ruined a really nice meal my husband made with soy sauce. We did a taste test before plating and it was gorgeous. we plated it and husband put a dash of soy sauce while I was getting the kids to sit down. When I got my plate I put extra soy sauce because I didn't know it was already on there...turned a delicious meal into a salty plateful of food 🙄😂
