In all honesty, whenever I cook following the recipe to the T, I mess it up. So I just eyeball everything and throw spices into it. That's what makes my cooking good.
It's why the best chefs are big and fat. You just have to taste and eyeball all your creations.

As a Taiwanese and a fried rice lover, I must say his fried rice looks reallllly good! It’s like fancy (maybe unaffordable) fried rice served in a high-end, authentic Chinese restaurant 🤤
BTW, using a drainer to wash rice is in fact a much more convenient method comparing to washing rice in a pot cuz in this way, the rice wouldn’t be scattered everywhere when drained. I’ve learned this from a Taiwanese chef youtuber and found it very useful.

one of my biggest issues with joshua weissman is actually how he just expects all his viewers to have all this expensive equipment to cook the same stuff he does, so seeing uncle roger point this out is actually quite entertaining.
He doesn't expect anything. He knows, that he's "overdoing" it, but that is the ENTIRE point of his "But Better" series. He has two series of videos: "But Better", where he goes all out and overdoes stuff (like he does here) and "But Cheaper", where he actually does stuff, well, cheaper.

Zojirushi definitely makes the best asian kitchen appliances, but is honestly overkill for like 90% of families out there. But if you do want to make really high quality dishes, it helps tons. The heat distribution of Zojirushi is a lot more even and controlled, which allows the grain to cook better and also to reduce the carby stuff from boiling over the top, which is especially important for Japanese koshihikari rice. Most cheap rice cookers use the "brute force" method of cooking rice which is crank the heat as high as possible and boil all the water off. Even so, it's still nicer than trying to make rice in a pot on the stove.

I put 1 part rice to 1.25 parts water in a pot in my stove, reach about 15 inches to my timer and turn my stove off when it beeps.
The most time consuming part after getting my rice from the pantry is washing the crap out of it

Rice is notoriously difficult to cook, the cooker just makes it's consistent
Being a chinese chef for 4 years and started from bottom first 2 years cooking rice everyday....i can confirm that cooking rice without a rice cooker is super hard(been there done that when the rice cooker died middle of service). When the rice is fully cooked you only have few seconds to switch the fire off cause it burns quickly, or you have to control the fire at the right temperature if not the bottom will burn and the top remains raw. You just eye it but you cant open the lid ! it would fuck the rice up too! Its worse than baking a cake.

Well most of them don't need to be used, could measure the tablespoons etc straight into a bowl. They're premeasured in individual bowls for the sake of videography but at home you can make his in not that many. 1 wok (reuse for onions and rice), 1 for sauce, 1 for eggs, rice cooker pot, chopping board to store all the veggies etc.

No. That man doesn't understand culture. But I do respect Gordon on the other hand, because he actually does respect the culture the dish he is cooking comes from. I was so glad to see the amount of respect he gave to the people who taught him how to cook real Indian food, his willingness to learn and he always strove to make it fit our taste. He didn't go all, "oh I bet I can make a British version of this" like most British chef's do. There is a dish he cooked which is very famous in my culture and I couldn't help but feel proud of the effort he, as a white man with low spice tolerance put into impressing the ladies who taught him how to cook it. That's a true chef right there.

all jokes aside, zojirushi is legitimately one of the best rice cooker and general appliance brands out there. my grandad moved to the US from Japan over 40 years ago and bought one of those older styled ones with the cook/warm switch, and my grandmother still uses it to this day. still makes perfect rice every single time.
