He started working up in different restaurants, getting the recognition he deserves now. Chef Wang never went to culinary school, nor did he have a proper background in cooking. And in times he needed help, he always went to this uncle in the video (his 四伯爷), and the uncle would always give him comfort. However, now his relationship with my dad is healed as he discovered his dad were collecting news articles about him (because he cared for him).
I also heard that the whole reason he started posting cooking tutorials online for free is to help other ppl like him who wanted to become chefs but can’t afford culinary school

The true story is that Uncle Four (the fourth kid of his generation in the family) raised and encouraged young Wang Gang to become a chef. That's why Chef Wang always pays respect to his uncle and auntie.
There's just something about masters of their craft, you know them when you see them. They aren't braggarts, they aren't doing anything to show off how great they are. They look like you and me, but as soon as they touch the tools of their trade, you can feel magic happening. This man is unequivocally a master of his craft.
Well, then I will tell you Wang Gang is actually a slightly above average chef in China. He is famous because he found an edge in the internet world, and of course his passion towards cooking. Skill wise, it is not that impressive because its just Cooking 101 for professional Chefs in China. However, this is not to bashing Wang, I love his videos and learned to make lots of dishes from him. Just stating the truth that You can name at least 3-4 chefs from every mid-size restaurant who have the same skill level as Wang has.
Wang Gang's channel is probably the best for learning Chinese dishes, his videos are clean, nicely edited and short, but he manage to teach everything at the same time, really decent chef.

For those who don't know, he needs to change the oil because earlier he 'seasoned' the wok. Which means heating it up so much, the oil exceeds the smoking point, ending up with a burnt flavor. So removing the burnt oil and adding fresh oil gets rid of that unpleasant taste. FYI, I used to make egg fried rice at a chinese restaurant for years. *EDIT 03-14-2023* Correction as pointed out per reply: "it's more to do with the metal expanding, the hot oil being absorbed and 'sealing' the metal. The cold oil then cools down the surface, seals in that hot oil from before and allows you to cook with a utensil that is pretty much 'non-stick'." What I described earlier, was my own experience in seasoning the wok by eating the wok and burning and discarding the oil. I never realized that Chef Wang Gang here did not need to let his oil exceed the smoking point and I never wondered why. 'Cause if you look closely, he throws the first scoop of oil back in the vat of the fresh oil as it was not smoking. With that said, there are still more reasons to change out the oil. And it's that the oil is still too hot to put garlic and shallots in, as it burns too easily otherwise.

He started from just a basic trainee in a restaurant by doing lots of tiring and easiest work but he would use the time outside of his work time to learn from other chefs. He had been trained and worked as a chef for many years and been to do many different restaurants to learn. That’s why he has such a solid and good foundation and techniques.
“wok hay” means “the energy or breath of a wok”.Wok hay is a Cantonese phrase used to describe the aroma that is created in a dish when authentic stir-frying is performed.
Actually "wok hay" can present in the dish that was cooked by Chef that mastered the way to create it. scientifically, it is a process to create Maillard reaction by using high heat + dry ingredients+ oil with experience.

Fyi for everyone looking for a serious answer why the water is running: it trickle on purpose because the seal connecting the wok "holder" and the metal base is connected by some type of waterproof seal. If you cook without the water, it'll dry out and eventually cause holes in the seal and end up damaging the kitchen. Take my word for it, my parents owned a Chinese takeaway for 8 years
Chef Wang Gang actually explained why he needs the water running constantly while cooking. It is because the stove he used is a professional stove and the temperature is so high that it will boil the water if you don't make it flow. the water turned on is to keep the temperature constant so the water can cool the stove down.

Two things I can share since I am Chef Wang Gang's follower - 1) He is married and has children; 2) the water flow at 11:01 is to prevent the wok stove from burning out (Burner generates too much heat and can damage the stove easily.... water flow to keep it cool) - He explained it before in one video.
Chef Wang has my due respect, many chefs can use a chefs knife, a parring knife, and so many tools, but a real chef, uses a thin blade cleaver, which can do everything and works as a bench scraper afterwards, beautiful
Just as a bit of extra info, the exhaust gas of the stove pass under the cold water pot, the cold water pot is serves two purposes. One is to cool the exhaust gas so that the inner insulating lining of the stove won't overheat and peel off, and the exhaust gas won't ignite anything in the kitchen after it's been released from the upper back of the stove. Second is the running water would create a water membrane on top the stove, stopping the oil from adhering to the surface. The amount of water needed to clean the stove twice a day is about the same as keeping the water running (the high heat during cooking would bake the oil on to the stove if the water isn't running thus needing more water to clean), it also significantly reduces the time needed for cleaning.

Let's take a moment to acknowledge how hard it is to actually flip a flat foodstuff in a wok. It's really fucking hard to do. Tossing loose food like rice or noodles is easy enough, but flipping something that's essentially flat is difficult because it just wants to slide around on the wonderfully round side of the wok. This is exactly what I say to my friends. In the West, when you think about best food/restaurants, 99% you think of the whole experience - the view, the service, the ambiance, the decor, the rareness of the food, etc. In the East, that's probably less than 10%. You could have shitty service, terrible location/decor, but as long as you got the taste, people would still come to you. It's a different level of appreciation for food and cooking technique.
Two corrections 1. It is not Mandarin when Chef Wang talking to his uncle. It's Sichuan dialect. Howevet, it is Mandarin when he is talking to the camera. 2. The running water is mainly for cooling the stove, since the fire is so powerful that the stove could be damaged.

If you don't use that much water the stove would overheat and break down, also if you see the grease baked on the stove you will regret not letting water running.

Let's take a moment to acknowledge how hard it is to actually flip a flat foodstuff in a wok. It's really fucking hard to do. Tossing loose food like rice or noodles is easy enough, but flipping something that's essentially flat is difficult because it just wants to slide around on the wonderfully round side of the wok. This guy is skilled.
Edit: He also didn't add any unnecessary ingredients. Just oil, egg, rice, chile, MSG, and spring onion. So simple, but executed perfectly.

This is exactly what I say to my friends. In the West, when you think about best food/restaurants, 99% you think of the whole experience - the view, the service, the ambiance, the decor, the rareness of the food, etc. In the East, that's probably less than 10%. You could have shitty service, terrible location/decor, but as long as you got the taste, people would still come to you. It's a different level of appreciation for food and cooking technique.

Two corrections 1. It is not Mandarin when Chef Wang talking to his uncle. It's Sichuan dialect. Howevet, it is Mandarin when he is talking to the camera. 2. The running water is mainly for cooling the stove, since the fire is so powerful that the stove could be damaged.
