The obvious explanation needed here is how long must coffee be separated foods that bind to polyphenols? Do you have to drink coffee/tea on an empty stomach or is several minutes after a meal OK? Is it specific amino acids only? Is there something else they can bind to to free up coffee? The problem is, this is way too vague. You need protein to survive and if it takes a couple hours to digest food, especially if you add fiber or fat, you’re going to have to wait until 5pm to finally have coffee after your late breakfast or the polyphenols will be mating with coffee in your stomach or gut instead of your cup so it’ll all be for not.
More details are needed in order to understand and develop protocols to reduce this binding effect. Understanding what foods bind to nutrients the we are ingesting could be a valuable asset in better health.

I like Dr Gundry's presentations. Occasionally though he goes a little overboard with assertions. First off, mentioned Japanese and Chinese have extraordinary life expectancies (seemly thru use of teas). That is half truthful: Japanese exhibit world leading longevity. The Chinese (PRC), no. They are quite far down the list. Second, when I look at the amount of protein contained in almond milk per serving (which is more that one uses for coffee) is all of a single gram! Very low amount - don't think that is enough to material alter the coffee's polyphenols. The one thing I do agree is that such "milk" may contain higher levels of glyphosate. Idk, maybe seek an organic version to eliminate this particular issue?
From a coffee consuming nation, we also put milk in a coffee, I prefer less or straight up black rather than latte, also we drink mostly light roast (on scale 1 out of 5) but medium roasts have become popular over the years
Light-roast is good, and has the most caffeine, best for a morning jolt. The more the beans are roasted for longer time, the more denaturing of caffeine molecules happens. Dark-roast is sometimes misunderstood as "strong" but its just burnt beans, and the caffeine molecules are diminished to fewer numbers. Medium is a nice in-between, great full-bodied flavour, and relatively moderate caffeine level.
I drink coffee because of the flavor. I drink dark coffee with half and half and boiling coffee makes it taste horrible. I'll try the coconut and the macadamia nut creamer but my hopes for it are not high LOL
Dark rosts are easier to produce because it is shock roasting of coffee. Slow roasting is costlier as it takes more time. My dad used an old 60kg machine for that. For darker roasts we just more Ethiopian Siddam instead of Brazilian Santos. Indian Malabar blends were used for clients who loved it least strong.
What about instant coffee that I prefer? And I'm used to put a spoon of instant coffee in my milk brought to boiling... Sometimes I add a teaspoon of dark chocolate to make something similar to Swiss style coffee, no sugar, though...
Sorry Doc, but thus video is hard to confirm, "Polyphenol equivalents in blood plasma (ferulic, iso-ferulic and caffeic acids) were measured, and the overall bio-availability of the various coffee varieties was established. The results of the study showed that the addition of milk to coffee didn't have any effect on polyphenol bio-availability"
I'm wondering how the milk proteins in raw milk affect the polyphenol concentration of foods. I read the research about blueberry antioxidant activity being blocked by consuming blueberries with yogurt, but would this also apply to raw dairy products? Could it be that the proteins, immunoglobulins, antioxidants and enzymes present in raw milk and dairy products could have a synergistic effect on the polyphenols instead (that pasteurized dairy products have lost)? I tried to look for research clarifying this but was unsuccessful.
This video could be wrong or inaccurate. I see evidence to the contrary online in studies. Milk seems to improve bioavailability. Much respect to what he has to share but he should really show his sources. This is not pre-internet days where that would be normal. People want first-hand information now.
I have a tendency to put ice cream into my coffee -- a nice dollop of butter-brickle or similar really elevates the coffee to the level of dessert... one pot of dessert every morning. Cheers!
Using info from this content and others, I just made the best pot of coffee I ever had. I put 140 g of coarse ground coffee into 4 lt of slow boiling water for two hours. Yeah its a long process but I have a 4 lt carafe of the best coffee in the fridge that will last for days.

"Sadly, the British have lousy longevity." Of 195 countries, UK is 30th for longevity. That "lousy" performance, according to Gundry, is because of milk in tea. China is 45th, which according to Gundry makes their longevity "fantastic." As so often with Gundry, I'm wondering where he gets his information. By the way, his own country is 51st. Not so hot. Is that to do with milk?
This is also taking countries diets as a whole, my best friends eat NOTHING like me and it shows, now we’re lumped in together as a singular statistic? This guy is also a surgeon, not a nutritionist, so I think that’s your grain of salt. I’d be a lot more diligent in my anti-blank rhetoric if I was performing surgeries that would be deemed unnecessary with dietary changes. (Not sure what type of surgeon he is)
He didn't say it was because of milk in the tea only. And as for longevity, if we compare different countries it would be correct to draw the comparison across the social groups with similar attributes, like income, level of education, lifestyle specifics, etc. China is 1.5 billion and it's probably more diverse socio-economically than the UK.

Am 64 been drinking coffee with milk and sugar since I was 10. The reason is tasts so good with breakfasts when I was a kid. If I drank milk or OJ my mouth would get dry and I’d get thirsty right away. Coffee nicely quenches my morning thirst. These days I drink 2 cups first with sugar and milk second black no sugar trying to cut down my sugar intake.
If the extra calories aren't an issue for you, you can also use heavy cream, which has lots of fat but doesn't have the protein (or lactose either). It takes less of it to whiten, so you probably will only be doubling the calories over milk.
If I have A2 milk midday with my Proplant complete shake (vanilla for me), how long should I wait before ideally drinking coffee or consuming other polyphenols such as Power Phenols?

Caffeine is an alkaloid which is hard to absorb. Add a bit of cream and it absorbs better so you get a caffeine fix with less coffee. Personally I prefer my coffee with a tsp of mct oil and a tsp of Ghee in the morning. If I want it creamier I add a raw egg yolk and blend. Sounds disgusting but actually quite good. My take on Bulletproof and it’s filling.
Thank you for such an interesting video. As an avid black coffee drinker, and usually iced black, I was wondering if it is better to use a machine that grinds the beans and then brews the coffee (typical coffee paper filter machine), or alternatively, one of those automatic machines where the beans are grounded and the drink chosen is dispensed. Regards from Spain.
Hi Dr. Gundry, what about having cheese on the side while you are drinking black coffee? Does cheese do the same thing that milk does? Just wondering and thank you for your content!
Really?!! I stopped drinking my favorite Starbucks coffee drink (Peppermint mocha, no whip) because of the high sugar. I make my own coffee at home in a French press. Dark roast (will go for the light roast in the future like you suggest) and I add 1/4 tsp turmeric, maybe 2 tbsp creamer which contains MCT and stevia (Super Creamer is the brand name). I decided to try that instead of the straight, pure MCT oil I was adding myself before, along with a creamer. I thought I was doing good! So, some people drink their coffee black with butter and no sweetener. Butter is dairy too, so how is it different from using a creamer? What do you think of using butter? I appreciate your advice. Thank you.
Isn't it the milk proteins that bind to the polyphenols? Hence what you said about blueberries and yogurt. Did I not hear the word butter? No one's talking about adding butter to coffee but going way around to, I never even heard of this, Macadamian milk which usually contains pea proteins? They are quite far down the list. Second, when I look at the amount of protein contained in almond milk per serving (which is more that one uses for coffee) is all of a single gram! Very low amount - don't think that is enough to material alter the coffee's polyphenols. The one thing I do agree is that such "milk" may contain higher levels of glyphosate. Idk, maybe seek an organic version to eliminate this particular issue?
What about half and half, with no additives? I just bought 3 more quarts, organic.
I've been adding collagen peptides to my coffee. Does this also bind to the polyphenols?
good question
same here
So doc, what about heavy cream? No milk proteins in that, so nothing to bind up the phenols
Once again with EXCELLENCE...Thank you Sir.
Great Video Again, But what about Heavy cream?????
Sorry Doc, but thus video is hard to confirm, "Polyphenol equivalents in blood plasma (ferulic, iso-ferulic and caffeic acids) were measured, and the overall bio-availability of the various coffee varieties was established. The results of the study showed that the addition of milk to coffee didn't have any effect on polyphenol bio-availability"
I can't confirm what he says also. I think he makes this up for views and to have a different take.
Maybe, but in that case you would have to have iced coffee. As adding raw milk to boiling water would make the raw milk pasteurised.
This video could be wrong or inaccurate. I see evidence to the contrary online in studies. Milk seems to improve bioavailability. Much respect to what he has to share but he should really show his sources. This is not pre-internet days where that would be normal. People want first-hand information now.
Berries or any fresh fruit except for bananas and yogurt creates a curdling effect in the cut. Anti ayurvedic.
This guy talks with a god complex and gives me a funny feeling.
Same here, lately. Yuck
I then set the Instant Pot to slow cook on high for two hours and then overnight on Keep Warm. I used a paper filter, slowly reheated to a simmer and added two Tbs of coconut milk. Wow! Yeah its a long process but I have a 4 lt carafe of the best coffee in the fridge that will last for days.
You have entirely too much time on your hands.
I've often thought of quitting coffee altogether. Drinking lite roasted non dairy would do the trick!
I read in an article in a bodybuilding article years ago that a small amount of milk binds to the acid in coffee, neutralizing its acidity. thus, a small amount of skim milk in the coffee can actually keep the acidic from affecting your body.
I still don’t understand why the whole world is turning against milk Well milk is very healthy especially when it’s organic
Man is the only mammal that continues to basically breastfeed for life.
@@samsungtablet5744 sorry but drinking milk and consuming milk products is not breastfeeding our god created animals and what they produce for our consumption but today everyone is keen to go on plant base diet which will only cause imbalance in their health so weird
Not USDA organic. Dirty agency.
@@daz5895 Wrong, the fat is taken out of skimmed milk and sugars put it to make it taste nice.
And Goats
Adding coconut oil or butter will offset the pholypenols??
Thanks for the info
Even if you skip the cream in the coffee what if you are eating a cheese omelet with it? Tried black coffee with orange slice in it today improved it, hey lemon slice works for black tea. Like Armenian Coffee but has sugar.
You will never change the way i drink coffee ☕️.
that's crazy that I cut coffe and tea for 2 years and . now I made I cup of coffee and logged into youtube to enjoy it and I came across your videos
The Universe seems to speak to me in the same way. 😅
@@rebeccaaldrich3396 by the way I had a terrible sleep last night . but I never had that energy during the day
Thank you for these precious health informations. Actually, I never put milk in my coffee, but I am not an amateur of coffee. I don't need coffee every day, but when I get one I put cinnamon sticks in it and I drink all the day long. Is cinnamon good with coffee ? Thanks for your answer.
it tastes good to me with coffee and can be good for you, supposedly reduces inflammation.
you can make chai and add pepper and fresh turmeric making for even better anti inflammatory
Don't Italians drink an espresso immediately after lunch? Wouldn't it mix with the proteins from lunch in the body?
For oat lattes I always put cinnamon to prevent or control blood spike, but how about goat milk? Can that be a healthy milk alternative for coffee? 🤔
Think the point was milk protein cancels out the polyphenol benefits.
here in Greece we drink "Frape". We take a glass of water add a spoon of Nestle instant coffee (and optionally sugar and milk). Is Frape without milk and without sugar good or bad?
"Sadly, the British have lousy longevity." Of 195 countries, UK is 30th for longevity. That "lousy" performance, according to Gundry, is because of milk in tea. China is 45th, which according to Gundry makes their longevity "fantastic." As so often with Gundry, I'm wondering where he gets his information. By the way, his own country is 51st. Not so hot. Is that to do with milk?
I posted a comment saying the same thing. American academics usually have a corporate agenda of some sort. There was a lot of crap spoken here.
(Not sure what type of surgeon he is)
Also, bring a doctor he should know his stuff off by heart. Why is he reading a script?
He didn't say it was because of milk in the tea only. And as for longevity, if we compare different countries it would be correct to draw the comparison across the social groups with similar attributes, like income, level of education, lifestyle specifics, etc. China is 1.5 billion and it's probably more diverse socio-economically than the UK.
Hey, i kve been drinking coffee with milk all my life as far as I coud remember, am niw 85 yrs old and still drinking it without any problem
Thankyou Dr Gundry
I use heavy cream with my coffee. This is an all fat - no proteins creamer. Does this still fall in the no-no column.
I have my first coffee in the morning with mascarpone. Mascarpone is very fatty and has not so much protein and lactose. My second coffee I drink it black. I get the best of both worlds 😋
Hi Dr Gundry. What do you think about using half-and-half by Horizon Organic? I can’t seem to drink my coffee without creamer. Or do you have a better recommendation for creamer. Thank you.
Drink structured water to quench your thirst instead 🙂
What in the wide wide world of sports is structured water?
What in the wide wide world of sports is structured water?
Try pure organic stevia. Use only the real stuff and you may like it, while getting your sugar intake down.
@@johnschaefer2238 Structured water is where it comes out of the faucet as structured molecules 😊
😊Just ordered an MCT creamer. Mostly I'm a black coffee drinker, can't drink anything sweet in coffee
If the extra calories aren't an issue for you, you can also use heavy cream, which has lots of fat but doesn't have the protein (or lactose either). It takes less of it to whiten, so you probably will only be doubling the calories over milk.
My mother relayed this to me in the 60's, explaining drs. had told her father this in the late 50's, later passing away from heart attack.
If I have A2 milk midday with my Proplant complete shake (vanilla for me), how long should I wait before ideally drinking coffee or consuming other polyphenols such as Power Phenols?
What about goat milk? It has MCTs, but I don't know about the bonding-with-polyphenols issue. Any thoughts...anyone?
I have tummy pain after coconut products.
I am afraid if they are not putting too much chemicals into it.
You said buy light or medium roast to get the most poly's but then you said some culture boils their coffee all day is that not the same thing? does it lower the poly's the same as buying dark roast ?
Google adding milk to coffee benefits, all lean towards milk with coffee is better for inflammation, diabetes prevention Etc, now I am confused. Because MCT or coconut cream increases heart disease, as well as it’s harder for the liver to breakdown. Please help with the confusion.
Des yoghurt have the same bad affect as milk? What should I combine with my black coffee for breakfast?
Every day's a school day. Best thing I've learnt today.
That raw egg yolk thing works over here in South East Asia. Thought it was criminal at first...but it works 😄
Whoa. Never thought of egg yolk! So you just dump the egg white?
@@cpk2GIRL i sometimes use just the yoke or the whole egg. It’s frothier with a whole egg. Depends how you like it. Enjoy!

Hi, Is soy milk a good choice for coffee?
Thank you for such an interesting video. As an avid black coffee drinker, and usually iced black, I was wondering if it is better to use a machine that grinds the beans and then brews the coffee (typical coffee paper filter machine), or alternatively, one of those automatic machines where the beans are grounded and the drink chosen is dispensed. Regards from Spain.
What about drinking instant coffee? Is that as good as brewed coffee?
10:03
I also like instant coffee in milk...
so coconut yoghurt and blueberries is ok ?
Hi Dr. Gundry, what about having cheese on the side while you are drinking black coffee? Does cheese do the same thing that milk does? Just wondering and thank you for your content!
Doesn't fermenting of homemade yogurt break down most of the proteins?
Thank you.
Good info. But how much coffee in milligrams should I take daily?
Is decaf has the same benefits?? Thanks
how is the polyphenolbinding on jogurt or kefir is it the same as milk?
Thank for the clarifications !!
What's the point of comments if there no inaction from the content creator
Isn't it the milk proteins that bind to the polyphenols? Hence what you said about blueberries and yogurt. Did I not hear the word butter? No one's talking about adding butter to coffee but going way around to, I never even heard of this, Macadamian milk which usually contains pea proteins? Goodness, did all grass-fed butter get licked up and is all gone?
Possibly drinking Organic Coffee (Lifeboost coffee = one source, no mold)...with Non-Dairy calcium-rich Organic "milks" + add some Sea Salt ~ Use Vegan Yogurts. I also use Organic Decaffeinated Instant Coffee, Hagen brand.
i use Clipper Organic Decaffeinated Instant Coffee with non homogenised Guernsey milk [bought from Able & Cole in UK. i always buy clipper tea, black, earl grey & green due to their healthy decaffeination process & unbleached teabags Delicious my coffee in morning, however have stopped drinking milk with tea, wasn't hard and prefer it now as easier to prepare but will have black tea with milk if feeling parched as very refreshing. as a cancer patient I stay away from raw milk just in case of infection unfortunately
