  • Coffee’s earliest consumption dates back millennia when the tribesmen of Ethiopia used its ground-up berries to help aid concentration during prayer.
    Arriving in Europe in the 17th century, Coffee quickly began to replace beer and wine as a favourite breakfast drink.
    In the 20th century, coffee was blamed for high blood pressure and heart attacks, and more recently linked to a rising epidemic of poor sleep.
    None of this has prevented coffee’s relentless rise. Over 2 billion cups of the stuff are drunk each day.
    So, is coffee a guilty treat as many of us suspect? Or is it a health drink feeding your good gut bacteria?

    It’s funny when people worry about the caffeine in coffee for their kids, but let them consume Coke in an unlimited amount.

      I am glad my country put a restriction on selling energy drinks to only those over 12 (should have been 14) because there is much more caffeine in those than a more expensive Coke. I shake my head at those young adults downing an energy drink as they puff on their vape.

      Coffee beans are from the carribbean that the one i use too as a child we roast an beat in a murta the shift the brew for tea some people mill it aswell

    I've given up coffee for good now. Being Italian I grew up drinking espresso. Decades later even one espresso made me feel wired and affected my sleep. I'm much more chilled out now I'm coffee free. Hopefully my sleep will improve over time

    As someone who grew up in the Caribbean, coffee was an everyday drink even as a child. My parents would roast there own coffee as the trees grew locally and roast the seeds. after they had theirs we the children were given a weaker version to drink. We would even help in the roasting process as kids by sucking on the sweet juicy pulps around the seeds before they were roasted. Growing up we did not make anything of it and up to this day it is still grown locally on the Island. Funny though, I guess it's me, but coffee does not keep me awake at all whatsoever. I could drink a litre now and fall asleep in the next 10 minutes lol. Great information Sirs

      Caffeine might not affect you falling asleep but it could be affecting your quality of sleep!

    This is a little surreal for me - I spent the lockdown advocating Tim as a trusted source of Covid info whilst binge watching James' videos on coffee to distract me... never thought I'd be watching them in a double bill on the same video 🙂

    I started repairing coffee machines nearly 50 years ago and I started drinking at least 4 cups of ground coffee made from a 4 head leaver type coffee machine. Now I’m 83 years old and still drinking double shots from my Italian machine and if I missed my 7 PM coffee when I get back home I will make a coffee before I go to bed around 9 pm and I have no problem going to sleep in fact I sleep very very we’ll waking at 6 AM that’s been going on for all these years. My doctor can’t believe how well I am with no 83 years pain like other men. I live in Australia. Cheers Doug Mazonowicz.

      Great, but someone with the same exact consumption probably has died at 35. I am not saying coffee is either good or bad just that one persons experience means nothing.
      Anecdotal experience is great but it is not statistically relevant. You cannot extrapolate to entire populations and it is impossible to determine causality and isolate from hundreds of factors.

    I would like to thank you for the content shared and for the incredible work that is being done. I'm Brazilian, I'm 37 years old and I've been drinking coffee since I was 6 or 7 years old, many children of my generation grew up consuming coffee. However, nowadays this is not common, my stepdaughter for example is 13 years old and does not consume coffee or soft drinks. I love having coffee in the morning or before going to the gym, in addition to enjoying the ritual that involves preparing the drink, I feel focused and in a good mood.

    My mother's breakfast was Coffee.
    I am an Ethiopian who loves to used Coffee.My mother took her Coffee as a breakfast and She is healthier than others.
    Its advantage is its stimulation and increases your attentions !
    Our mothers know how to roasting Coffee and they know it in its colors .

      She's healthy bot because of the coffee but because she would eat less frequently. Coffee suppressed appetite and if consumed without sugar, would put a person in autophagy.
      Your mother would be even much healthier if she just skip the coffee and fast normally.

      I find that hard to believe. How do you get the fiber from the drink? We only consume the flavour (and effects) of coffee, not the actual bean. I'd like to see the studies of this.

      @@MisterDibitybopty Because some fibre is water soluble. So it dissolves in the water, and then you drink it. I think pectin is another form of water soluble fibre.
      Not all fibre is "roughage," or insoluble fibre. 😁

    Although I had known most of what you covered about coffee, it was still a pleasure listening to my favourite subject dissected by 2 experts! My favourite version of coffee is a variation of Turkish coffee which I make myself in a special pot on a hob and drink black with no sugar. A real treat! May I add that James has a very soothing voice!

    In Finland we got law that every worker that have 8 hours of work, should have two 12,5 minute 'kahvitauko' wich means literally coffee break. Of course we got morning coffee and coffee after each main food so it is common to drink coffee 5 times a day and typical coffee cup is 1-2 dl. Casual coffees like after sauna coffee or going to city is add to that. Commonly we first make one pan of coffee for quests and visitors so they can take few cups if they will and only after that we ask "do you wan't more?". I got expresso cups but they are for little kids.
    I think Finland must be good place to research issue of "coffee/caffine and health". Finnish coffee culture is also worth looking - it goes trough society. After a giving birth you got coffee and it is important part of funerals also.

    A really great discussion! In the dark ages when I thought coffee was Nescafe, drinking it black was was a foul experience. Therefore, coffee had to be drunk with milk. Fast forward to my late 50s and I discovered high quality arabica beans, which, consumed black was an entirely different - and wonderful - experience. I discovered, in the light roast, such a complex symphony of flavours. I do remember that on opening a new jar of instant coffee that the smell was wonderful, and the taste a comparative let down. Now I have discovered coffee which tastes like it smells. Subscribed! BUT...which of you British guys spelled 'fibre' as 'fiber'? Hmm....?

    Nice video. Had a healthy dose of fiber and a borderline dose of caffeine while listening to James and Tim. Quite a relief that Tim approves coffee, otherwise I would have had to find a way to stop trusting him

      I like Renato's sense of humor. Almost stopped coffee this morning and substituted pushups, because I've been feeling old and thought maybe coffee was the reason. Watched the vid as reality check and decided my 80 years probably accounted for feeling old, so brewed a cup and feel - fine.

    I just finished my 4th cup (32 oz) of coffee today, while watching this video. I usually french-press 4 cups (32 oz) each morning and drink that through lunch (but I don't eat breakfast or lunch, usually, each day). Since I only eat OMAD, I like that drinking coffee puts something on my stomach and kind of gives me that eating sensation. I've lately been interested in understanding the polyphenol aspect of coffee. The low-carb world (which I'm a part of ) seems to be pretty evenly split on the questions of whether coffee is good or bad for you. Just last week, I asked my GP about coffee consumption. She asked how much coffee I drank each day, and I replied four 8-oz cups; she responded, "That's too much. You need to cut back to one or two." I'm learning today that as long as I stay below 6 cups per day, I'm good. You're my new heros!!! Heck, maybe, I'll make another two cups of coffee, to get up to my new limit of 6 cups/day. :-)

    In the beginning of my coffee drinking experience (30-40 years of age) I couldn't have coffee without milk because of the bitter flavors. It wasn't until recently that I tried very fresh roasted, lighter roasted specialty grade coffees. The flavors of those coffees are so wonderful to me, that I very much prefer them without any type of additives.
    Kudos to excellent coffee roasters around the world, making people's lives just that little more enjoyable. 😀 👍

      It wasn't until I realized that it was the overcooked and old coffee that tastes bad and isn't very healthy, that I thought maybe I was viewing things through a dimly colored lens.

    Yes, Coffee is additive for many people. A person that drinks coffee every day when you are without it, you can get really bad headaches from caffeine loss, also you have issues with restless legs and anxiety until you consume your regular amount. It is not the same as drug addiction; but does affect you addictively

      Not me at all. I have stopped drinking coffee abruptly... Never have I felt the need to grab it immediately or never have I felt my body not functioning without it. No headaches no craving... Nope.
      And I am a regular early morning black coffee drinker.
      Remember its the mindset not the food that needs to be in check.

    Enjoyed the discussion and shared it with more than ten friends some are still working in coffee business, some studied and discovered CBD resistant varieties. Very well presented, I like the main title as well " Science and Nutrition". I am Dr. Eshetu Wondimagegne, Projects Coordinator for the Norfolk African Community Association Organic Allotments Project in Norwich UK. Strength 4 arabica coffee one cup in the morning with ground Cinamon and clove but black is my favourite, Ethiopia grows both Arabica and Robusta varieties. Good Health to all of you.

      Is Coffee healthy? No. Because it cuts off people's natural response system. When you are tired, your body sends a signal to your brain, and you rest or sleep. Coffee hijacks the signal, and your brain doesn't get the signal, therefore you keeps going. Anyone has basic sense knows it is crazy to do that. I quit coffee 5 years ago, and I feel much healthier.

      I have heard from some health care advisors that cafe without sugar is good for health.

    Super interesting episode.
    Coffee is great. Not much more is needed to be said, to be honest. Stress reduction from experiencing the scent of freshly ground coffee every morning is a benefit good enough that diminishes all potential drawbacks :)

    The part i was most intrigued by is 45:18. I've always felt like my bowl was stimulated from the moment i even smell the coffee as i grind it. Id love to learn more about how and why that happens. I often find my self (on my days off) running to the bathroom as my coffee cools.

    What a really informative and and fascinating discussion. As a Decaff drinker I think I'm going to move back to non-decaff in search of new flavours/tastes, as caffine has never been a problem for me - I just thought decaff was better turns out its all personal preference and tolerance to caffine.

    During the perk coffee era, it would be normal to add salt. Salt somehow reduced the bitterness of coffee according the going theory. I have tried salt in coffee and it works quite well, even filtered coffee if you had the misfortune of purchasing a brand/type of coffee which is bitter can be smoothed out with salt added.

      @@armadillito I was also taught that caffeine strength is also determined by how long it is in contact with water. So espresso has less caffeine due to the short time pushed through the beans, however the old perk over the fire cowboy coffee is stronger since it takes so long to warm up and perk.

    I would love to hear the scientific results from testing done with different roast levels and different lengths of time off roast and different species of coffee. Because of the different reactions my body has to these three variables, there must certainly be different effects on the body due to these factors.

    I'm Indonesian and coffee is widely consumed by us usually at night in here. For me, I drink two to five cups of arabica coffee here and I don't have any problem with sleep at all. I don't know whether my body metabolizes caffeine that fast or it's just my body get used to the caffeine in the coffee. I still got my 6-8 hour sleep and my blood pressure is normal (110~120/70~80) . So, It doesn't hinder my activity much, sometimes I drink it just for the taste of it (yes, arabica bean has a lot of notes flavor post-sipping or drinking). My favorite is Natural process and Honey, kinda like the fruity notes and that hints of acidity followed by pleasant after-taste that lasted in your mouth for several minutes~ Ah~~~ gonna brew one now.

    KAFFA region in Ethiopia is home to Coffee arabica, where coffee trees are found in the wild in tropical forests. The low altitude variety Robusta is also found in Harar region in the East of Ethiopia. The Ethiopian coffee tastes better than coffee from other countries. The soil type and it's organic management makes the difference. Coffee is the main export of Ethiopia. Currently Ardent coffee is doing good job in the community in Southern Ethiopia. Dr. Mesfin Amaha my colleague has researched and found coffee berry disease resistant varieties involving the wild varieties I mentioned above. The rest next.

    You three work so well as presenters I think I would enjoy you three talking about biomechanical engineering just as much.
    But I hope you will do this again at some point.
    I know people look to the past & claim it was a golden age of television. That back at the start of TV people would give lecturers on philosophy etc, but I disagree. TV is just getting better & better over time because of the increased specialisation & the ease at which great conversations can be documented.
    At one time this would be a fun Conversation at a University in Central London seen by a hundred people or so.
    Now that it's recorded & I get to see it, in a bedroom in Oxford as I drink my last coffee if the night (I have ADHD I use amphetamine as way to chill down & focus) so for me Coffee is a wondrous bedtime drink! Hot, delicious & a great way to drink my magnesium, potassium & sodium chloride for the day.
    But it could be also being watched in a different right now (hi if your our there, hope you have a great life) by someone interested in the history of coffee 200 years after we are all dead, buried & recycled by the soil.

    I gave up all Caffeine because its terrible for the adrenal glands. I drink water when i wake up and i eat more fruit during the day. I've never felt better high energy, sleep amazingly just to name a few from a huge list of improvements. Edited to add I no longer have daily anxiety which I had experienced my whole life and more recently started getting low moods completely gone.

    I had to give up drinking coffee at a fairly young age due to getting heart palpitations although I did not drink a lot & was mostly a tea drinker. I then used decaffeinated coffee just a few mugs a day but still mostly tea. Then suddenly after many, many years for some unknown reason I went completely off coffee although I have loads of packets of decaf granulated coffee refill packs in my cupboard. All I have fancied at home is tea for about 4 years. Why I don't know. If going out somewhere I would then sometimes have a coffee unless very thirsty.

    I love adding cinnamon and or allspice to my coffee pot. We tried adding to the coffee and that was ok, but i think its better in the pot or the cup itself.

    Apparently there are up to 4 methods to decaffeinate coffee
    The Swiss Water decaf is a chemical-free decaf coffee that retains most of coffee's precious flavor and potent antioxidants, making it the healthiest decaffeinated coffee on the market. The lack of chemicals compared to the other popular methods also makes it a more earth-friendly option.

    I think it would be really interesting to look into the levels of various beneficial microbes, chemicals, anti-oxidants, etc… in a range of coffees such as instant Vs high quality naturally processed and gently roasted coffee. In fact, this would be interesting regarding food in general, looking into all aspects of the supply chain. I would hope the results would show the value of carefully produced, naturally processed and fresh products…

      Thank you for saying this. Every time he referred to espresso with an X in it I cringed a little. I also didn't like the way they talked to James. James Hoffman is an expert, he isn't an aficionado. The cutsiness and condescension were difficult to listen to.

      Then I went to Italy. And France. Not sure why we changed it for English. Now it sounds fine to me either way.

    I never drink coffee beyond 12pm, but from 7am to 12pm I drink 4to5 cups 2 of which are black coffee. I do think it is habbit forming but not a dangerous habbit as Tim said. I've found this discussion extremely helpful and interesting. I personally don't get palpations. But my sister who drinks decaff tea suffers alot with palpations and has made me wonder if this is why. Great informative conversation

    I just bought a new coffee press because I need to get those polyphenols! I used to drink coffee black in my early 20s both when I worked for American oil companies (first job of the day to get the coffee drip machines running) and in Germany where I just used a plastic filter thingie with paper filters inside. I am really enjoying my new French press and listening to you guys have already had 3 mugs (I don't use cups but think I am at my daily limit even though its only 13 minutes past 9), I started at 0630 and only just opened my eating window as I am trying to keep it early.

    I was brought up in equatorial Africa and from a very early age I drank several cups of tea daily and as I got older, coffee. Water wasn’t drinkable unless it was boiled so it was a good way to rehydrate.
    Years later I was planning a pregnancy and decided to stop drinking so much coffee. Oh my goodness, I was so ill , vomiting and dizzy. The come down from the caffeine and coffee made me so ill ! Never again!
    Now I’ve got a Nespresso Vertuo machine. The pods declare how many mg of caffiene are in them so I can moderate my intake. Three cups, two before I can start my day (about 250 mg) and one stronger one at about 4 pm.
    In contrast, my son, who has attention deficit disorder and finds the stimulation of strong coffee calms him it’s surely better than amphetamines, which is all that medical science can offer.
    At nearly 55 I’ll be drinking coffee, black and strong, for the rest of my life.

    Very surprised you didn't discuss the relationship between coffee and acid reflux / heartburn. That's something I would have been interested to know more about and something that could potentially have a huge health impact for those who suffer from it...

      This is one of those highly personal edge cases. Best thing to do is try it and see.
      Personally I find sticking to the higher quality lighter roasts, drinking it black, and never in the afternoon is fine. But instant coffee with milk is a bad time.

      Yes .Millions around the world suffer with GERD. For them the advice from medical fraternity is dont drink coffee as it will increase acidity. What is the coffee experts opinion or research on that Important aspect where millions are deprived the pleasure of coffee drink.

    I think coffee could be bad for the brain. My mom has been active her whole life, always read but I can see she is getting some kind of dementia or brain disease because you have a conversation and she'll be bringing up the same thing 5 minutes later. She use to to drink 2-4 cups a day. I also have problems with coffee, it makes me feel quite lethargic and I am quite forgetful myself. I've been drinking it for many years. Of course, my experiences of coffee doesn't represent the whole population but I think there needs to be better studies on coffee. It is essentially a drug that makes you feel alert and good, so that has to do some kind of damage in the long-term. Also, caffeine has a half life of 6 hours (so half of the caffeine is still in your system after 6 hours) so if you have it after midday, you will probably have less quality sleep which can cause a lot of problems to the body.

    I am Ethiopian, grew up drinking coffee(since three years old). It was ceremonial and blessing of the day started by cup of coffee. The day rounds up by another coffee, didn’t matter when it was, sometimes at midnight, and went to bed . It didn’t bothered any body at all. Coffee doesn’t bother if you are regular drinker. If you stay away from it, and come back to it, that is when it bothers.

    Regarding the different ways to brew your coffee and produce your cuppa, it seems off-putting to me that so many methods, particularly drip coffee makers, incorporate a lot of plastic components, which are heated and therefore seem prone to leaching plastic chemicals into your drink. Is this a justified concern?

      I use an all metal kettle and a French press, plastic in contact with hot liquids is a big no for me, is it going to kill you? No, but it definitely can affect your hormones and may cause some other problems long term.
