    Gaw! That sound. Make it stop!
    I have (don't hate me too much) recommended pull through sharpeners on rare occasions. Years ago I would sharpen the knives at camp and hold a sharpening seminar. I called myself the Knife Knave but people came anyway. Their were always some people that buy only cheap knives and just get a new one when the old ones got too dull. Perfect candidates for a pull through sharpener. However, I also taught a technique of turning the sharpener 180 degrees for a light pull or two at the end. This balanced the edge a bit and gave better results.

    Brickley was right, it was painful to watch. We grew up with a pull through sharpener in the house, and it did keep knives sharp. My dad's favorite kitchen knife started out like a butcher knife, but after years of being sharpened with a pull through, I inherited it but by then the blade was more like a fillet knife.
    For years now i have just stuck with stones, diamonds, ceramic, and leather. Thanks for the video.

    with all pull through knives, the grind is parallel with the edge, this allows the edge to fold over very quickly even if a sharp edge is achieved.
    The best result with these is achieved with very light, high-frequency strokes with some lube

    I got myself an accusharp just out of curiosity, i found that it is worthless by itself, just leaves a horrible burred edge which will break off in your food, but it's actually pretty good if you use it to put a fresh edge onto a knife then use a ceramic honing rod to finish it off.
    It's actually pretty good if you want to put a perfectly even edge on something which has no edge at all, and then finish it off with stones

    Hey question for ya. What steels would be least worst for ....sharpening (cough) using pull through sharpeners.
    I would have thought fine steels like low chromium carbon steels would have less carbide pull out on the edge or at least by having finer carbides would be able to end up with a finer edge. Thoughts?

    in my experience, I have found that a different small Fiskars pull through sharpener than the one you used to be the least evil. It is similar in size & shape to the Lansky or Smith's but is black & has a pair of angled diamond rods on the coarse side & ceramic rods on the fine side. It actually produces a modestly acceptable edge in a pinch with the least amount of damage to the blade.
    Note: This type of sharpener should be held down on a table or counter as you did but make sure it is back towards the front edge of the surface so that when you pull your knife through it, you do not hit the table or counter & dull the knife as you sharpen it or damage the surface of the table.

    I actually like and buy the kitcheniq sharpeners for friends. I sharpen their knives properly and tell them to use the ceramic side for maintenance. Its onliy like $6 USD on amazon, so its pretty good as a gift or stocking stuffer.
    Personally, i have the lansky deluxe that i mounted, with the extra course and course diamond stones, the 2000 grit blue stone, a whetstone that is 3k/8k, the knives plus strop block with green compound, and a hanging strop thats has no compound and two different sides.
    Overall, slightly more than $100 USD. I like the fixed angle lansky to reprofile and propery apex knives i havent worked on before up to the 2000 grit, then use the 3k/8k stone for a more mirror polish, finishing on the strops of course.
    If i am doing it for friends, i set everything to 20 degrees and give them the kitcheniq sharpener.

    I’ve got one from “outdoor edge”.. it’s ok but I only really use the ceramic side. It’s set at 22 deg and I typically sharpen my edc knives to 20 deg with a 22 deg microbevel.. so that probably helps a little.
    The carbide side is basically useless tho.. I’ve tried my hardest to get a good edge on some garbage knives.. hell I’ve even tried sharpening an old license plate lol.

    Check out Warthog Sharpeners. Technically a "pull through" sharpener but they are spring loaded so you don't apply too much pressure and you can also change the grits. They work much much better than these typical blade butchering pull through sharpeners and are just as easy to use. They get knives paper slicing, hair shaving sharp with little effort. I myself freehand sharpen on an oil stone and sometimes use a Lansky 5 stone kit, but I bought my parents the Warthog sharpener for them to use and it works very well for the working knives of an average person who doesn't always have the time for more traditional methods. I even use it myself on a couple of my own knives at times

  • @JustIn-op6oy
    @JustIn-op6oy 2 ปีที่แล้ว

    Have you ever tried the edgemaker pro? It's a pull through (but with an orientation so it's a "pull down") that doesn't remove much material with the final step being more akin to a hone. I've used one for years on fillet knives and serrated kitchen knives with great results.

    • @JustIn-op6oy
      @JustIn-op6oy 2 ปีที่แล้ว

      I think the slight flexibility of the steel mounting is what prevents the edgemaker from thrashing the edge/hogging off a lot of material.

    Some people no matter how much you show and instruct them cannot sharpen a knife freehand. Some seem to just plain not be able to maintain the proper angle. I guess they have poor spatial perception. Then there are those that do not seem to be able to follow directions. Seriously have never learned to follow directions. I wouldn't take them to the shooting range for instruction.

    You totally picked the wrong AccuSharp pull through. The AccuSharp Pro 2 Step dianond/ceramic pull thru is excellent. Yes I said it, it's an excellent pull thru. No carbide to eat the blade. I was able to get hair shaving sharp edges on some of the hardest to sharpen knives in < a minute. I don't use it often as I like custom angles on my knives but in the field, when I really need a wicked sharp edge, this sharpener works. The price is great and it often comes w a super sharp, surprisingly good quality folder for $14.99.
    I was given a cheap gerber that just wouldn't take an edge, even my friends couldn't get it sharp. i was going to toss it but decided to try it on my AccuSharp first. Wow; I got shaving sharp edge on that knife fast. Now I have a very functional beater. I never thought I would use a pull thru as I love my knives but this is one I will keep in my bag and use on any of my knives in a pinch w/o working abt damaging the blade.
