    Just in time for Christmas, I attempt to make a Candy Cane from scratch!
    After my failures at making candy corn, I take another stab at making a candy cane, starting from sugarcane. For flavoring I use cinnamon I harvested in Mexico, and mint and wintergreen I grew and foraged plus distilled alcohol to extract the flavoring.

    You should add the flavoring and coloring when the candy is incredibly hot, as it'll mostly boil out the excess liquid and won't change the consistency of your candy by adding extra liquid to it.

    • @freybendele968
      @freybendele968 6 ปีที่แล้ว +3

    I think the reason it never quite hardened was because you added the extracts at the wrong stage. Adding them prior to pouring and boiling the extracts with the sugar might’ve removed any excess liquids in them. Either that or the sugar never quite reached the ‘hard crack’ phase temperature-wise.

    • @seatiger8106
      @seatiger8106 6 ปีที่แล้ว +44

      slimkt Yes! He should have added the extracts when he added the red coloring (when the sugar was liquid)

    • @joyjoy5812
      @joyjoy5812 6 ปีที่แล้ว +15

      slimkt exactly! You want them to almost boil off when you add the extracts and color!

    • @slimkt
      @slimkt 6 ปีที่แล้ว +6

      Gummy Bugz true, it definitely would’ve been a challenge to manage all the different flavors and sugars at once, especially since this is his first time doing hard candy. But I think it’s a handy tip to have in the event he ever decides to give it another go. Hopefully, if he does ever try it again, he’ll be a tad less ambitious and just shoot for one flavor extract for both colors to ease the process.

    • @djcfrompt
      @djcfrompt 6 ปีที่แล้ว +10

      slimkt if you watch the pros like the folks at Lofty Pursuits they do batches by flavor - make all the base 'white' sugar at once, then separate it and dye it right away while it's still hot so the water in the dye boils out. You don't need four different pots.

    • @slimkt
      @slimkt 6 ปีที่แล้ว +8

      djcfrompt actually, I’m subscribed to Lofty Pursuits. And yeah, they mete it all out from one big slab, but they have special candy-making equipment like a cooling table with metal bars to separate them and a warming table to keep them malleable. This guy has a stove and limited counter space under some heat lamps (on top of just not being a professional candy maker,) so it would make sense that he’d produce his candy canes differently. However, I do agree, in that I think it’d be wise if he were making several different flavors, that he just make one flavor batch and then move onto the next, rather than trying to do all of them at once. It’d probably be a little tedious, but the end result would be better.

    As some others may have mentioned, the reason why the candy didn't set as hard crack is that there was too much water left over in the candy from when you added both the coloring and flavoring. You ideally want to add these when the candy is still hot enough to boil out all the water from the coloring and flavoring. If you check out the channel Lofty Pursuits, Greg goes over this is many of his videos.

      The How to Make Everything Team is made up of a three person team: Andy George, Chris Peck and Brian Stemmler. Together, we tackle everything that is needed to run our channel. Andy is the brains behind the projects and the on camera talent. Chris directs and shoots all the videos and Brian coordinates and manages the day to day operations of the company. Together, we all edit the episodes, so it's a very collaborative process.

    For the softness issue and stickyness, you needed to add the excracts during the boiling or right after you poured the sugar. This allows any water from the extract to evaporate and get rid of the stickyness issue, it is also possible that the dye or some other ingredient made it soft

    I would recommend adding the flavoring when you first pour out the candy, the residual heat will boil out the moisture and maintain the consistency you are looking for
