My mum always made Gajar halwa without sugar as my dad has early onset diabetes. We got used to having it without sugar because if we roast the carrots well enough it caramelizes and gets a naturally sweet taste
Here it is - 1. Grated carrots ofcourse :) 2. Milk - 1:1 ratio with carrots 3. Chopped/slivered nuts - almonds, raisins, cashews, pistachios, poppy seeds 4. Spices - cinnamon powder, nutmeg powder and cardamom 5. Ghee or coconut oil Process 1. Sauté the grated carrots in ghee/coco oil at the lowest flame for about 10 mins. Once the carrots have taken a darker Color cover and let it cook on the lowest heat setting for another 20 mins 2. Simultaneously, let the milk evaporate at the lowest heat - Do not cover, stir occasionally so the milk solids at the bottom do not burn / you can skip this step altogether and buy condensed milk - but it’s hard to find unsweetened condensed milk 3. Add the spices to the carrot and uncover and sauté for 5 mins 4. Add the reduced milk to the sautéed carrots and let it cook further to desired consistency. 5. Let it cool 6. Enjoy Extra Tip - 1 if you don’t mind a bit of fat - mix in some Khoya at step 4 2. If you’d like it to be extra sweet- try adding a tablespoon of Maple syrup at step 1 - the aroma of ghee and caramelised maple syrup is otherworldly 🤤
The nutritional benefits of Vitamins (be it fat soluble or water soluble) get diminished by heating. Therefore, the vegetables such as carrot, etc. need to be consumed raw to get maximum benefits. Only thing that needs to be followed is we should avoid eating anything raw, eg salad after evening. Salas should be consumed during lunch. I hope this helps.
Don't know where u got this from but Vitamin A doesn't get destroyed fully on heating I tried to find it but couldn't, it only gets destroyed when the food is overcooked hope this helps

If u re comfortable, then just add some organic coconut oil like 1/2 tsp to your juice.
