You should never mix proteins from two different sources together and in the same meal. Like milk/animal protein (paneer) and protein from nuts and seeds(sprouts). Always mix sprouts with other vegetables. Also, don't overdo it. Consume sprouts in moderation. 2-3 times a week also keep the quantity in mind. Sprouts are a very rich source of protein. Body can only process so much protein in one go. It can cause too much heating in the body. Ayurveda has details regarding the same. It can also cause acid reflux if consumed in large quantities and in raw form. Best is to steam it a little to facilitate easy digestion and reduce the chances of bacterial infections. The moisture in which the beans have to be exposed to for a long time for sprouting can attract the growth of bacteria like e-coli and salmonella. May result in food poisoning. So, it's always a good idea to cook the sprouts mildly to retain nutrition yet killing the bacteria if any.

You may mix moong and moth dal because their sprout time is about the same. I wont suggest mixing chana and peanuts with others as you need to keep them longer.
