If you can’t get the coconut milk to thicken up, just seperate it from the water the best you can. Your final mixture will be thin at first, but the next day after putting it in the fridge, you can pour the bit of water that will be at the top of your container out, and then shake it with the lid on. It will get thicker I promise!

great question! It actually doesn't have a strong coconut flavour. You taste a lot of the vanilla extract and just an overall creamy flavour like actual whipped cream. In my opinion anyways :)

@@varshinikunderu1834 no, but I found the problem. The coconut milk had other additives which diluted it. So I tried another brand with higher fat content containing just 2 ingredients; coconut extract and water. Worked like a charm.
T Woods I feel like it makes 2 cups or just under. I havent actually measured it out before. I would have an extra can of coconut milk in the fridge as back up in case you need more for your cupcakes.
My chilled, full fat coconut didn't whip up. I added powdered sugar and vanilla right away and it was just a clumpy mess. No amount of whipping altered it. What did I do wrong?

@@karireyes7603 Yesssss! It is an imported brand called "American Green" and the ingredients list names more than one stabilisers. Unfortunately, it's currently the only brand I can find in my country (I live in Iran).
Perhaps the fat content is too low. Check the nutrituinal information to make sure it has a high fat content. I guess it should be at around 18 grams per 100 grams of milk. I hope this reactio will be of any use, since you asked it 3 yars ago, but yeah
Light agave nectar is a good alternative for honey. Honey isn't vegan. Dairy free whipped cream might be a better title than vegan whipped cream if you used honey. :D

Tried twice. Just unusable chunks of coconut cream in the bottom of the mixer. Never turns to cream not matter what speed or time. I suspect addl ingredient in North American canned coconut milk that allowed this to take place. Back to my black coffee.
tip: open the can from upside down. that way you can just pour the water out and scoop out the coconut milk more easily ;)

At trader joes you can get a full can of coconut cream, no water or hoping the can has enough cream

As tradition in the Caribbean we normally mix the water and fat together. its ok to do that :-)...then put it in a glass jar and refrigerate :-)

+KMG68 sometimes its the brand but most should whip up. Try the Thai Kicthen brand and maybe dont add powdered sugar as it might of weighed it down..
