    tip: open the can from upside down. that way you can just pour the water out and scoop out the coconut milk more easily ;)

      I meant to do that and then I already started opening the can the right way up haha Surprisingly it was still really easy to scoop out without mixing with the water.

    Wth,are y'all blind?When she said she was going to use honey she also said you could use agave or maple syrup if you're a vegan,she just didn't have any on hand.And why tf are some of you calling her out as fake vegan?She never said she was a vegan.Instead of thanking her for sharing this recipe with you guys you just criticise her for being a "fake".

      I never really got why honey isn’t vegan. I understand why now because of the animal exploitation but if you get your honey from a humane source or an actual bee keeper... it’s vegan.

      Attilio Russo I meant from a local source, but when it’s mass produced there’s more exploitation but that’s due to the laws that aren’t even there to begin with to protect bees.

    If you can’t get the coconut milk to thicken up, just seperate it from the water the best you can. Your final mixture will be thin at first, but the next day after putting it in the fridge, you can pour the bit of water that will be at the top of your container out, and then shake it with the lid on. It will get thicker I promise!

    At trader joes you can get a full can of coconut cream, no water or hoping the can has enough cream

    Exactly what I have been looking for. Racked my brain today trying to think of a way to do this without eggs and sugar. This looks fabulous...note to self...do NOT use egg replacer as a whipped cream option.

    I can't eat coconut, but did a variant of this with canned garbanzo bean juice, cream of tartar, cane sugar or agave and vanilla. Came out more meringue like and a little too sweet for me, but was delicious. I've also seen similar recipe with no cream of tartar but chef used powdered sugar instead. So, can easily be made vegan.

    As tradition in the Caribbean we normally mix the water and fat together. its ok to do that :-)...then put it in a glass jar and refrigerate :-)

      great question! It actually doesn't have a strong coconut flavour. You taste a lot of the vanilla extract and just an overall creamy flavour like actual whipped cream. In my opinion anyways :)

    If you are using the coconut fat wouldn't that be the same as just using virgin coconut oil which solidifies below 75 degrees?

      No because it contains the coconut meat as well which is why it's white :)

    Doesnt hold up in hotter temperatures. You will need to stabilize it with agar or gum.

      @@varshinikunderu1834 no, but I found the problem. The coconut milk had other additives which diluted it. So I tried another brand with higher fat content containing just 2 ingredients; coconut extract and water. Worked like a charm.

      T Woods I feel like it makes 2 cups or just under. I havent actually measured it out before. I would have an extra can of coconut milk in the fridge as back up in case you need more for your cupcakes.

      Four minutes to make. Any cook will tell you prep time for items is not the same as making time/ cooking time.

    My chilled, full fat coconut didn't whip up. I added powdered sugar and vanilla right away and it was just a clumpy mess. No amount of whipping altered it. What did I do wrong?

      +KMG68 sometimes its the brand but most should whip up. Try the Thai Kicthen brand and maybe dont add powdered sugar as it might of weighed it down..

    I keep my coconut milk cans in the fridge and they're always liquid. I tried whipping it once and nothing happened. Perhaps she put it in the freezer? (Or I there is the wrong brand of coconut milk in my country?)

      Does your coconut milk brand contain stablizer, such as guar gum? If so the product will not separate.

      @@karireyes7603 Yesssss! It is an imported brand called "American Green" and the ingredients list names more than one stabilisers. Unfortunately, it's currently the only brand I can find in my country (I live in Iran).

    i had my milk in for 16 hrs and it was not solid, thus is the second time i tried this whats wrong

      Perhaps the fat content is too low. Check the nutrituinal information to make sure it has a high fat content. I guess it should be at around 18 grams per 100 grams of milk. I hope this reactio will be of any use, since you asked it 3 yars ago, but yeah

    Light agave nectar is a good alternative for honey. Honey isn't vegan.
    Dairy free whipped cream might be a better title than vegan whipped cream if you used honey. :D

      I meant to use maple syrup but then I ran out so I had to use honey. I mentioned other great sweeteners you can use as well like coconut sugar, stevia, etc :) Thanks so much for watching! xx

      Agave nectar is just as processed as high fructose corn syrup. In fact, it's also high in fructose. Not good for you. tineqwa ratib

      That defeats the purpose of dairy free but if you wanna make normal whipped cream then you have to use heavy whipping cream milk won't work

    Tried twice. Just unusable chunks of coconut cream in the bottom of the mixer. Never turns to cream not matter what speed or time. I suspect addl ingredient in North American canned coconut milk that allowed this to take place. Back to my black coffee.
