For the evaporated milk scrape the sides and mix it back in the milk, that’s the fatty part of milk so mixing it back in will ensure a creamy thick consistency

Coconut milk is the direct alternative for evaporated milk as described in this video, but you can also try other plant milk such as soy, almond, rice all works. You’ll just need little more in quantity to make that thick creamy version you are planning of 🙂

@@wxw4289 yeah this recipe doesn't get fluffy with whipping. i needed the cream to make fettucine so i just dumped the unmixed milk and butter concoction into my pan and added cornstarch to thicken up the base and it was pretty good! the butter didn't sit on the top after adding the cornstarch.
This option doesn’t whip its clearly indicated in the video as milk is mostly water and butter is oil. This version to be used in recipe where heavy cream is needed in liquid form. Also did you use room temperature milk and slightly warm butter. If butter is too hot from melting it won’t mix with the watery consistency of milk. Try mixing and if it keeps separating use a double boiler to combine them with a whisk.

If you are using this in liquid form in your recipe roughly mixed butter and milk will just do the job.

Since there’s no emulsification of fats of butter it’ll separate. That’s why using it right away is recommended.

How long does the butter and milk heavy cream last in the freezer for later use?
I haven’t kept it in freezer, but it can stay refrigerated upto 1 week I believe as that’s how long I stored mine once.
