  • Pizza is one of the best foods ever invented, but can we make it even better? We're answering the question “Can pizza sauce be made of mangoes?” by cooking up a mango-fied Margherita pizza that’ll make your taste buds go wild. Enjoy the taste of mangoes and basil on pizza!
    Ingredients:
    Pizza Dough:
3 ½ cups of bread flour
1 ½ cup of warm water
¾ tsp of active dry yeast
    1 tsp of salt
    Pizza Sauce:
    28 ounces of mangoes
    2 tsp of olive oil
    1 ½ tsp of basil
    1 tsp of salt
    ½ tsp of dried oregano
    ¼ tsp of sumac
    Pizza Toppings:
    Mozzarella Cheese (dairy-free or dairy-filled)
    Whole basil leaves
    Method:
    1. In a large bowl prepare our pizza dough. Combine 3 ½ cups of bread flour with 1 teaspoon of salt. Then, in a measuring cup, mix 1 ½ cups of warm water with a ¾ teaspoon of active dry yeast. Create a well in your flour mixture and slowly add your wet ingredients. Bring your dough together by using a fork to pull in small amounts of flour at a time.
    2. Once a shaggy dough has come together, continue to knead in the rest of your flour. Knead your dough for 20 minutes then in an oiled ball allow it to rest for 30 minutes.
    3. To create our sauce, lightly blend 28 ounces of canned rinsed mangoes. Then in a hot pan, heat olive oil until hot. Then cook 1 ½ teaspoons of freshly chopped basil until fragrant. Add your mangoes, ½ teaspoon of dried oregano, ¼ teaspoon of sumac, and, of course, 1 teaspoon of salt. Cook for 5 minutes on medium heat, stirring often.
    4. To assemble your pizza, start by shaping your crust. Separate your dough into two portions and freeze one for later. Shape one portion into a circle, then allow gravity to stretch it to shape by holding it by one side and slowly rotating. Once your crust is ready, add a layer of sauce, your dairy-free, or dairy-filled, cheese, and then top with whole basil leaves.
    5. Cook at 425 F until golden brown. To get a better color, remove your pizza 5 minutes before it's done and brush the exposed crust with light-tasting olive oil before placing it back in the oven.
    6. Allow the pizza to cool slightly before slicing and serving.
