The BEST Egg Bites - 3 WAYS! | BLT Kitchen
Level up your morning menu by learning how to make egg bites like Starbucks at home. This is the best egg bites meal prep recipe for anyone living dairy-free! There are a TON of Starkbucks egg bite recipes, but VERY few egg recipes for breakfast -- or healthy breakfasts for that matter -- that actually taste good reheated. This one not only tastes good reheated, it does in 3 ways! That's 3 DIFFERENT flavors. Never get bored of your healthy breakfast again!
Ingredients:
Egg Bites:
- 12 Whole Eggs
- 8 Oz Of Crimini Mushrooms
- 1 Red Bell Pepper
- 1 Cup Of Dairy-Free (Or Dairy-Filled) Plain Yogurt
- 1 Cup Of Dairy-Free,(Or Dairy-Filled) Parmesan Cheese
- 1 Cup Of Basil Leaves
- 1 TBSP Of Lightly Salted Pistachios
- ½ Cup + 3 TBSP Of Olive Oil,
- 2 Teaspoons Of Salt
- 1 Teaspoon Of Freshly Cracked Black Pepper
- ¼ Teaspoon Of Ground Cumin
Method:
1. Cut some crimini mushrooms and a red bell pepper into bite-size pieces. Then toss your veggies with a tablespoon of olive oil, salt, and black pepper, before popping on a lined sheet pan and into the oven at 400 degrees Fahrenheit, or 204 degrees Celsius. Allow them to cook until they turn golden. This took me about 20 minutes
2. Then in a food processor, put 1 cup of basil leaves, 1 tablespoon of lightly salted pistachios, ¼ cup of dairy-free or dairy-filled parmesan, ¼ teaspoon of ground cumin, ½ cup of olive oil, and salt. Blend until you get a fine and slightly chunky consistency.
3. In a blender, add 1 cup of dairy-free or dairy-filled plain yogurt, 1 teaspoon of salt, ½ teaspoon of freshly cracked black pepper, and 12 eggs. Crack your eggs into a separate bowl before adding them to a blender one by one. This way you can scoop out any shells before they become a problem. Blend at low speed for about 1 minute. Your egg mixture should come out completely mixed and a pale yellow color.
4. To assemble your egg bites separate your roasted veggies into their respective pre-greased muffin cups. Mushrooms on one side, peppers on the other. In the middle, add a generous helping of pesto. Then add more of your cheese to your mushroom cups and sliced spinach to your red pepper cups. After which you can pour in your egg mixture until the cups are ¾ of the way full. Be sure to give each cup a nice swirl to make sure everything is mixed.
5. On the bottom rack of your oven, place a baking dish filled halfway with water. During the cooking process, the water will slowly evaporate, steaming your eggs and creating that nice soft texture. Bake your eggs at 350 degrees Fahrenheit, or 177 degrees Celsius, for 18 to 22 minutes. Then allow them to cool completely before wrapping them with a damp towel and popping them in the freezer.
6. To reheat, microwave them in the now frozen towel you stored them in for 1 and a half minutes. Allow to cool a bit before eating.

Can you still use the mushrooms? I'd hate to waste them.
Hmm to be honest I've never tried using them after. I'm sure there's a way, but they are quite squishy after they're done and you'd have to account for all the water they absorbed. Their flavor will be really weak. But maybe if you dehydrate them a bit then put them in a food processor you can use the pulp to add texture to another meal. I'll have to try this next time I make it! Thanks for watching.
what do you use the stock for?
Stock is pretty versatile. You can use it in soups, risottos, and/or sauces. This one I used in an upcoming pasta recipe. I cooked the pasta in it to give the noodles more flavor. It can be used anywhere you want a more savory version of vegetable broth.

Get a Mandoline! It makes the process so much faster and because the vegetables are cut the same thickness, they'll cook evenly.
Haha I really do need to and also a new knife this one can't keep it's edge for anything. I'll work on getting both of those in the very near future.
@@BLTkitchen What are you using for sharpening it? Steel or whetstone?
@@MauryCooks Whetstone. It's a knife from a set we got when we first moved out. It wasn't that expensive so I just don't think the metal is holding up to cooking every day.
@@BLTkitchen Its german steel so they're traditionally very good knifemakers. A good steel before each cooking session will help you keep the edge longer. What grits are on the whetstone?
@@MauryCooks Oh, did you go check the knife in the video? Yeah, it's grade 1.4028 German steel I believe. I got the whole set on clearance for like $200, but that was before I had allergies. That grade steel is good for residential use, but when you're making every sauce and stock from scratch the edge gets used up quick. I went out and got a purple Wusthof Classic over the weekend so I'm excited to start using it. I have a 1000 and a 4000 grit whetstone.
You have a great personality that shows off on camera! Very fun video. Add garlic to the sauce. Wild mangos taste like garlic to begin with- sounds weird, but you're already in weird land to begin with. Great job.
Thanks! That's a great tip, but sadly I'm also allergic to garlic which is why I didn't include it. BUT for anyone who isn't that'd be great to try. I also wasn't aware that wild mangoes taste similar. I'll have to try some.
@@BLTkitchen You'd have to really look for them. They're not easy to find. A few years back I made some dishes for the Mango Festival in Miami and as a thank you, they invited us to a mango-themed brunch. They had a presenter there who based her PHD on Mangoes, and the many MANY different varietals. If you ever find Indian Mangoes, get them all. They taste like mango-coconut hybrid.

Yup, and a bunch of other things. 😔 But I've learned how to cook good food despite that. Now I make videos showing others how to cook without those foods so anyone else who's allergic, or just curious how, can have somewhere to turn to. IMO it all worked out. 🙂

You can use canned mangoes! Just if they're packed in syrup rinse them off first or it'll be too sweet.

Oh no. Okay well this probably isn't the recipe for you, but hopefully you can still enjoy tomato pizza and tons of other yummy food! 🙂 If you have any other allergies feel free to check out my channel. I focus on how to cook around allergies. I'm allergic to citrus (lemons, oranges, and lime). It's tricks like these that allow me to still have these awesome flavors! I make content to help spread awareness of different allergies and empower people to still live flavorful lives. Hopefully, if you ever meet anyone allergic to citrus too you'll pass this trick on. 😊

It was great! 😋 Honestly, really similar to what I remember traditional Shakshuka tasting like. Maybe slightly sweeter, but I think that depends on the mangoes.
