Great progress! Two small bits of advice:
Your oil pan. Remove all the screws, then install and torque the replacements in an opposing fashion. Simply running around and removing one at a time and replacing/torquing the new ones can warp your pan and cause seepage. (Best practice)
If you want to use a wire wheel to remove corrosion on bolts, buy a stainless steel, loose wire (crimped) type. The carbon steel wheel you bought strips the zinc/cadmium finish and will cause rusting on those bolts. The stainless is softer, and won't impart any carbon steel onto the bits (especially ally bits) that will rust later. In fact, you can find stainless wire brushes in the Welding section of Harbor Freight, Home Depot that are ideal to use on ally. They work great at removing gunk, corrosion, oxidation without grinding up the surface.

If those rims matched the inverted forks, man, it'd look sick. Still, beautiful work. I have been restoring a 1987 Honda Magna myself but I did lack proper tools, light and space for it so it wasn't much fun which is why I didn't capture the process. I replace JIS/Philips screws with stainless Allen screws whenever I can. I can't wait to get my own place again so I will have proper place to work plus I can get proper tools, too.
Thanks for the uploading this fun to watch project!

*- The illestrator -* It is starting to look really really nice, the powdercoating on the wheels also looks very nice too, very Marchesini/Ducati alike colour-wise with the graphite/granite frame is also contrasting nicely in a subtle & power 'just right' sort of way.
I am liking very much its forwards street fighter stance - *'The Flying Brick'* always lends itself well to that
stance/attitude (*the honourific nickname given to the K75's & K100's, because of longitudinal flat inline engine by its admirers/fans, at least in the UK it is affectionly known as such.)
Sorry to say this similar thing again if you read a much earlier comment I made when you cut the original rear frame loop off.
The K75 & K100 frames are known to be a bit weak, as they are of the 1980s tech era of late 70's small diameter tubes tradition with minimal triangulation of forces & occasional reinforcement gussets/braces with some small weldsurface areas, but generally with quality done welds; Tig welded I believe, for German T.u.V. (D.O.T) safety regulation standards, - sometimes you can see if one or more welders have worked on a frame at a factory back in the day, by the different types of welding style, or when the shielding gas was starting to get a little low in pressure.
There is an ability for the frame to twist/roll without additional support to account for it as the top end of the headstock mounting tube/stanchion has only a single larger diameter 'top tube' centally supporting it via a reasonable gusset/brace and a only single union to a rearwards middle crosstube and not onwards to the rearmost crosstube Eeek :O !
The sidetubes of the upper frame from the bottom of the headstock are reasonable crossing & welded to each other and have some thin bracing gussets to help keep the shape from the twisting forces of the lower headstock sidetubes and upper headstock downtubes from squeezing inwards the sidetubes when the bike is riding leant over, but nothing
for the sharing the forces of the of traingulations individually have to tolerate together apart from some thinnish stamped (hopefully more 'drop forged') sheet between the front downtubes - the thinner 'side' gusset plates behind the front downtubes are more for fairing/cosmetics, battery box or cooling system mountings of some kind I am guessing?
    - *---------------------------- Please Take This Section Under Advisement ----------------------------*
*Sorry, Do you want the rear suspension to collapse when enjoying the bike, because inless than 250 miles, one of those will, and it will kill you or who ever is riding it !?!?!?*
*If the welder said its good enough.. Please Never Ever use them for anything critically structural on a bike ever Ever Again! if they cannot see the inherant weakness !! .. I wouldn't even trust them for cosmetic light welding needs, they obviuosly don't care to warn you, but take you money for what would be a criminal job from their lack of insight, foresight & customercare.*
The weld is smooth, but that hides the weaknesses, but the bracket that lower mount is upon, clearly is not! The lower mounting frame plate was not chamfered and shaped to fit against the frame or the better, on inside the frame tubes for stronger and larger broader surface area to be welded with, to safely spread the forces better it Will definately face repeatedly, since convertng the bike from duel shock to a monoshock system.
As weakly done as it appears to be, sorry to say, I have to say, but it Will fail and shall rip off at somepoint as it is only just sat ontop the frame, being loosely with very small areas of abuttment weld around the its lower edges of lower mount plate to frame no where enougth for rider weight, suspension, power and road surface forces going through it.
Apologies for being a pedant on those chassis points - with your good work and your honest style, ethos, humour and presention in your videos, I sincerely feel I'd be in much remiss to not say nothing about it.
I am aware of which could be helpful to you, or atleast food for thought insome useful manner; and I hope not to trigger any infuriations. I don't mean to read/sound like a know-everthing A-class a££hole; I know I do thinking about it..
    -*----------------------------------------------------------------------------------------------------------------*
If and when possible, & able to, I would think to find a 2nd K100 frame, that hopefully could have had less miles on it/is 'younger' in is endured life. ...to modify as your Mark II 'Mod Improved' version frame, with additional bracing in areas missed on the one you currently have if you coonot have other peices of metal welded up to build up that frame plate mount and its secure attatchment to the frame.
*Rear of toptube having another piece between the two rear crosstubes to extend the area of transfered force back from the rear middle crosstube, thus lessening the load on it and its welds from the central toptubes job of trying to keep the angle of headstock fixed, lengthways over bumps.
*If you cut off the old rear loop section of the sidetubes off the improved frame, cut down the cut off section to keep the end curved piece - you can reweld it to the end of the cut sidetube - with some bushings tubular inserts inside the tubes to bridge the weld, and help increase anti-twist forces between the two sidetubes. Plus it'd help to use to equalize the angle of the billet subframe plates too, with central marker line to measure from.
*A bent single pipe if possible (85%+ passing underneath the top tube with a small area of it is cut out to fit & join the toptube,) ..whos ends join from inward unions on inside surfaces of the downtubes and upper surfaces of the sidetubes weld areas, and its length being towards the central toptube, where it bends/arcs towards its opposite end, the centre of its bend being ahead of its anti-flex bracket/gusset (near your new front fueltank mounts,) where is slighly ground out & welds to the central toptube.
*An addition tube per side from lowerside of the downtube & sidetube union, downwards towards above the just rear engine mounts, at a similar height to the new rear suspension system mount (the right 'suspension' sides additional tube having additional welded bracing from the innerside surface of the tube out towards the inwards unsuported edge of the suspension mounts own bracketry), adding support between the engine (& suspension) mounts and the towards headstock triangulations.
*The rear monoshock mounting needs to made better, safer, stronger, the frame mounting plate Must be at least contoured to fit the frame tubes, to be able to have a provide a deeply fluxed & large weld surface area to take forces, not that poor, dangerously abutted on plate currently.
I hope you can sort of visualize what I intend to mean, I know your working to a budget with transport contrants, I don't wish to crap over your own ideas.
I am sure you know of other BWM 'Brick' owners, riders & tuners etc, who know infinately more than I. who you've discussed with online forums, in person, via some BWM bike-club or other method etc etc, or searched & trawled through forums, comments, club letters etc - of which you have my heartfelt commiserations ;)
Myself I've not owned any BMW, but have owned and ridden an 87' Yamaha RD-125, 73' BSA Bantam D7, an 86' Suzuki GSX 250E, and ridden a 80's Kawasaki Z400, and fooled alot around on a 90'/91' ex-Factory Honda Team CR-250R as well - dog gammit I miss that dirt-rocket, around 118kg, over 40+ bhp (by the seat of the pants dyno), unofficially timed at to have a top end of 115-ish mph on dirt knobblies during its career; it was both controlled fear & yet adrenalised enjoyment on its throttle twistgrip with reactive speeds to inputs from just thinking, feeling etc..
Forgive me, I'm a tangentally minded person who loves bikes (although I'm certainly Not a hog 'tractor' potato-potato fanboy), tech, engineering, and who admires your effort in restoring and customising your 'Kay Hundred' and wishes you well.
Apologies for any typo's or minor spelling mistakes too.
Best of luck and good wishes in your continued project(s)!
*P.S. Please Please get that rear suspension mounts plate fixed before you ride bike far, or at anything close to twisty roads, or above any moderate speed - otherwise one of them will fail insome dangerous manner withi less 50 miles of any enojoyable riding speeds and roads!!*

Ah yeah and a tip for painting. Grind the old paint off or get it sandblasted. Then apply 3 layers
1base layer with base paint. Then your color and then a finish. There are cans that have finish and color all in one. The final layer gets super hard and prevents scratching. I actually repainted my whole bike using this technique and it turned out extremely nice for a rattlecan job done in a garage. If you want I can dm you the results on Instagram
Edit: and before painting make sure that surface is 100% clean. Any grease will make bubbles

Disclaimer : I'm not gassing you here...
Everything you are doing is 100 percent win on that bike. It's costing a bunch but worth it. You'll be able to pass that on to your son and he will be the coolest kid on the block. Instant celebrity.

Glad to see you back and making progress mate. I think the sticker bomb looks good. It won't be to everyone's taste but that's the point of a custom bike. It's not for everyone, it's for you. Good work as always.
