Banh Gio - Vietnamese Rice Pyramid Dumplings Recipe | Helen's Recipes

  • Ingredients (12-14 pcs)
    50g woodear mushroom (abt 2 cups)
    500g (1.1lb) pork (or chicken), minced
    1 tbsp shallot, minced
    1 onion, diced
    1 tbsp cooking oil
    salt, sugar, pepper, chicken stock (1tsp each)
    **If to serve immediately after steaming: Use recipe #1:
    2 cup white rice flour
    1 cups tapioca/corn starch
    6 cups chicken/pork broth (at room temperature)
    **If to serve on the next days: Use recipe #2:
    1 cup white rice flour
    2 cups tapioca/corn starch
    6 cups chicken/pork broth (at room temperature)
    ***UPDATE 15/01/2018***: I made Banh Gio more often these days and figured out that I need more water to get the ultra soft texture of the dumplings, just like them in Hanoi. You need the amount of liquid to be 3 times the amount of flour (if to measure in volume). So I would adjust the chicken broth in the recipe to 9 cups instead of 6. Give it a try!

    1 củ hành tây
    3 chén bột bánh giò (hoặc pha bột năng với bột gạo)
    6 chén nước xương (để nguội)

    Hòa 3 chén bột bánh giò (hoặc pha bột gạo + bột năng/bột bắp) với 6 chén nước dùng (để nguội).
    -Nếu ăn liền sau khi hấp: pha 2 chén bột gạo với 1 chén bột năng.
    -Nếu để nguội hôm sau mới ăn (sẽ hâm lại bằng lò vi sóng): pha 1 chén bột gạo với 2 chén bột năng.

    In Vietnam we don't usually eat them with chillisauce. Banh Gio go best with garlic-chilli-sugar-lime fishsauce, a little bit sweet and sour, spicy and salty but the mixture should be a little thin so it doesn't overwhelm Banhgio. Anw good recipe, thank you Helen.

    Helen, I'm so glad I found your channel. This banh gio is all I craved for right now and I'm 5 months pregnant . Now I don't have to drive 1 hr away just to buy it because I know how to make it at home now. Plus banh gio that sold at the store are to hard and nasty tasting.     Này Helen, cảm ơn bạn nhé, mình đã có một mẻ bánh thành công ngay lần đầu tiên. Gia đình khen và chiến đấu nhiệt tình vô cùng, mình lấy bột tỉ lệ 1:1( 1 gói bột năng 400g và 1 gói bột gạo 400 dùng hết luôn cho tiện), lúc gói bánh hơi lâu một tí vì chưa quen, bột dẻo vừa, 3 ngày sau cho lò vi sóng vẫn tuyệt như mới hấp. Còn 1 món dân HN họ hay ăn cùng bánh giò chính là chiếc giò nhỏ xinh, to cỡ ngón tay cái, dài khoảng 10cm thôi, được gói trong lá chuối hấp cùng luôn. Ngon lắm lắm...

    Just wanted to let you know on the updated second try and i did it on recipe#1 this time. It came out perfect just the way how i like my banh gio, a little firm and not too firm. I was so proud of how they came out, i give them to my in-law and my grandpa. They all were shock that i know how to make it. hehehe

    cơ mà hình như cái tai mèo không nên thái nhỏ quá, nên để bự chút, bằng cái phím remote là ngon nhất mục đích để giữ độ giòn nhân bánh ý.
    i think the mushroom shouldn't be crush , it need to be cut to piece like remote button, that help keep
    brittle of the core

    The asian stores also sell the wood ear mushroom already sliced. After soaking, go through and sort out the really woody pieces but it makes the cutting job easier.

    in most cases you can replace minced pork with minced chicken. I also mentioned in the description boxes :)

    Excellent teaching! Exact steps of the instructions. Neither wordy nor repeated in explanations, but enough all helpful info included (For example, a recommendation of using frozen banana leaves for cost effective, etc.) Thank you so much to the shows from this beautiful, cute, and young lady :-) The only thing that made me suffer a little bit during watching this video is the background music's sound made me headache :-) (But probably it sounds pleasant to the others).

    I forgot to deep the spoon in vegetable oil :) It may help the spreading. The paste needs some practice to make but it is not that hard ;)

    Helen,I had eating this in Vietnam, Thailandia and Indonesia and they are just yummy .. Also I tried this is version Colombia in Colombia , Mexico and Guatemala but in my own opinion Asia are the best ... I been cooking later Asia dishes and I would definitely Cook this dish ...
