How to make Vietnamese Crepe - Banh xeo | Helen's Recipes

  • Ingredients (3-4 servings)
    400g rice flour (=14oz)
    2tsp turmeric powder
    500ml water (=2 ¼ cup)
    250ml beer (or coconut milk) = 1 cup
    3 stalk spring onion, chopped (=1/3 cup)
    500g shrimp (~1lb)
    300g pork belly (~0.7 lb)
    500g bean sprouts (~1lb)
    Salt & pepper

    Secrets of having crispy banh xeo crepes:
    - Use a good frying pan with thick/heavy bottom, eg. cast-iron skillet
    - Use more cooking oil (2-3 tbsp) for each crepe
    - Use less coconut milk (or not at all) in the batter
    - Fry 2 times: 1st time only make the crepes until you finish the batter. 2nd time you fry the crepes again and add bean sprouts.

    - Dùng chảo đáy dày, chảo gang càng tốt.
    - Đổ bánh với nhiều dầu (2-3 ms)
    - Hạn chế dùng nước cốt dừa trong bánh
    - Chiên bánh 2 lần: lần 1 chỉ đổ cốt bánh. Khi đổ hết bột thì quay lại chiên bánh lần 2 và thêm giá.

    I cooked this dish today and it was delish! I used minced pork only, (didn't feel up to preparing and cleaning my shrimp). This is a keeper and so delightfully different. :)

    Man, I hated making these growing up. They were tedious because you had to stand there and make them one-by-one. Here's a tip I saw a couple of years back on how to eat them without them falling apart (this works for egg rolls, too): lay your veggies and Vietnamese crepe on dampened rice paper and roll up just like a regular spring roll. this makes eating so much more pleasant for me. LOL

    At age 44 right now, never made bánh xèo before, always ate at mam's :). This evening, I challenged myself....let' s do it with beer.
    I must say, not bad at all. Mission accomplished, but they don't taste like home, mom's bánh xèo. Nevertheless, mine is good also.

    Yes I do eat the shells. I used small white shrimps and the shells taste good after frying. It also provides calcium hehe

    To make this dish vegetarian, you can use mushrooms to replace pork and shrimp, and soy sauce to replace fish sauce. The rest is the same ^^

    Hi Kristy, this is just personal belief but I think coconut milk really makes banh xeo less crispy! Some more tips to make it more crispy:
    - Use a heavy skillet
    - Fry with lots of oil (2-3 tbsp oil for each crepe. It sounds unhealthy but it works )
    - Fry 2 times: first time only the crepe, stack them on each other. When finish the batter, fry again for the second time, this time you can add bean sprouts

    chị luộc trứng cút cho tới khi nó chín rồi lột vỏ, rửa lại cho sạch ( dùng nước uống cho
    an toàn ) rồi chị lấy bánh tráng rưới chút nước, sau đó lại cắt trứng cút theo lát nhỏ rồi xếp lên , bỏ chút rau răm, bơ chị rưới ở sát mặt phải của miếng bánh tráng rồi rưới
    lại lên cái trứng sau đó cuốn lại ( trước đó thì bánh tráng là loại mềm )
    cắt miếng nhỏ rồi ăn liền, chị bảo quản lâu quá thì hư luôn , để được 30p thôi à

    you can keep the batter in the fridge for a day or two, but it will thicken. So you may need to dilute a little later

    Banh xeo! Vietnamese comfort food deluxe. And the fall shrimp migration will begin
    when the next cold front arrives this week. Oh yes, I like it with chicken too. This and sweet and sour fish soup with tamarind are my favorite. And they go together very well. So glad I happened upon this today. Wonderful recipe Helen.

    Try using another pan, preferably non-stick one. Also add a little bit more water (1/4 cup maybe) to the batter to see if it works.

    The version with mung beans is Southern style. Mine is Central Vietnam Style. And in the Central we roll banh xeo in rice paper too :)

    Btw it was the same brand bot banh xeo as your too!! It have to try your way and see if it crispy, I want it really crispy, last time i made following Cathy Ha, I had to bake my banh xeo after it finish cooking for the crispiness haha

    Love your videos and love bánh xèo. My friend taught me how to make it. She adds fresh shredded coconut to meat. I haven't really seen that in any videos. Is that not a very common Vietnamese thing to do?

    Question for you Helen. Is it okay to put tiny pieces of chicken breast instead of pork for Banh Xeo filling? Just curious to find out whether it works or not. Thxs for sharing yummy recipes videos that make me hungry all of the sudden. Hahaha 😂😂😂

    chị Helen ơi hôm chủ nhật em nấu bún bò theo công thức của chị, thành công mĩ mãn chị ah, cả nhà em khen ngon!!!!
    chủ nhật này em tính làm bánh xèo theo công thức của chị nữa nè
    nhưng chị cho em hỏi lúc chiên bánh mình để lửa vừa hay lửa lớn hay lửa nhỏ vậy chị?

    Hi Helen!
    I love watching your videos. I tried following the recipe to the T but when I make my banh xeo, its not thin like yours. Its so thick and I can't even turn them. I tried using less batter but the same thing happens. Any advice? Also, do I need a special pan to make these? Thank you so much!
