I don't understand how people "dislike" any of Malcom's videos or recipes. I have never been disappointed with anything that he's came out with, that I've made.
Malcom is totally right though with respect to a cheese steak -- theres no way you are going to have any rareness with such a thin cut. the cut is even thinner usually as it is done by a machine.
I'm sure some people are disgusted by the way he starts digging into the meat at the end of each video. He's unhealthily fat, some people fail to see that he owns it. I don't trust a skinny chef, even though I am one myself. I used to weigh in at 113kg five years ago, now I only weigh 67kg.

It's awesome coming back and watching these old videos for 2 reasons - 1 is to see how much the production value has improved over the years, but 2 is to see how well y'all did with the limited resources and experience back in the day. These videos are a little rough around the edges but the camera work is pretty solid and the knowledge and charisma from Malcom is just as consistent as it gets. Keep giving me great cooking on film, and I'll keep watching. Thanks for everything
I think what really gets me, is the fact that you encourage people to try their own thing - to appeal to their own tastes. You make sure to let people know there is no 'right' way to make good food; what's good depends on what you like - whether that's a substitution in seasoning or in ingredients, or an outright omission of things you don't like. But, even though cooking is more of an art, instead of a science, you still show your whole process and explain your own reasoning so if people want to follow along they can as well. Some people are pretentious about food, and how it's supposed to be made/eaten. But I'm a picky eater, I can't help it. So I think it's pretty cool that you don't denigrate anyone for their preferences. Thanks for doing what you do, man. I appreciate it.

Huge fan here but as a Philadelphian I got to tell you that the best for a cheeseteak is sirloin. It’s what’s cheesesteaks have been made with since forever. Nothing works better than shaved and chopped sirloin.

I use a kettle grill and like to use a cast iron skillet to do my onion, pepper and mushroom mix with a bit of fresh garlic and olives (sea salt and fresh ground black pepper), but I like to close the lid for about 15min to get some smoke flavour on the veggies

Great looking sandwich. Once you put peppers it's not a Philly any more. Actually better. Best Philly in Philly area is Steve's Prince of steaks. Ribeye cut thinner then Malcolm's. Onions. Whiz/provolone available but Steve makes his own w/white American slices. No chopping meat into hash like Genos other strip mine joints. Also picks up fresh bread at 10:30 every morning for 11:00 opening. Peppers and other stuff on self serve bar. A friend gave me a meat slicer two years ago I have never used. Wanted it for making jerky but I think I'm going to give it a maiden voyage cutting ribeye for this
