Cheesesteak Sandwich Recipe | Grilled Cheese Steak on PK Grill

    Football season is in full swing and what better way to enjoy the game then chowin’ down on a good Cheesesteak Sandwich.
    This is my take on a Philadelphia classic and instead of using the yellow Whiz stuff, I’m topping my steaks with my own version of a cheese sauce. The recipe is super easy and all you need is a hot grill and a griddle top or cast iron skillet.
    Here’s how I do Cheesesteaks:
    First the best Cheesesteaks are made out of thinly sliced ribeye. You can substitute other thinly sliced cuts of beef roasts but using tender ribeye is the best.
    I picked up a 3.5lb piece of center cut ribeye at the grocery store and wrapped it in plastic wrap for a quick trip in the freezer. You could get the butcher to slice it for you but I find that firming it up in the freezer makes it easier for me to slice up at home. Use a good knife and cut the ribeye into thin slices.
    I like my Cheesesteaks with sliced peppers and onions, but you can top them with whatever you like. Thinly slice onion and red/green peppers and fire up the grill.
    I’m using my PK 360 grill set up for direct grilling. While the charcoal is getting make the cheese sauce.
    Cheesesteak Two Cheese Sauce
    - 2 cups milk
    - 8oz Shredded Pepper Jack
    - 8oz Shredded Sharp Cheddar
    - ½ stick Salted Butter
    - ¼ cup Flour
    - 1 teaspoon Killer Hogs Hot Sauce
    - ½ teaspoon Ground Mustard
    - ¼ teaspoon Ground Cayenne Pepper
    - Salt & Pepper to taste
    Directions:
    - Place a small pot over medium heat on stove. Add butter and flour and whisk for 2-3 minutes.
    - Add milk, ground mustard, and cayenne pepper continue to whisk until mixture reaches a boil.
    - Start adding the Pepper Jack and Cheddar a little at a time, stirring to melt. Once the cheese sauce comes together, add the Hot Sauce and season with a pinch of salt & pepper.
    - Keep warm and serve over Cheesesteaks or store in a jar for up to a week in the refrigerator.
    When making Cheesesteaks you want to have everything ready to go before you start cooking. The process is fast; start with a little cooking oil on the griddle and add the peppers and onions. Season with a little Salt/Pepper/Garlic (my AP Seasoning works great here) and sauté the veggies until tender.
    It only takes a few minutes then take them off the griddle and set aside. Place the ribeye slices on the griddle and season with the same AP Seasoning.
    Work in batches here to avoid overcrowding the grill. Each side needs to cook for 2-3 minutes then use a spatula and knife to cut the meat into strips. Remove the steak from the grill and repeat until all your ribeye is fully cooked.
    Now it’s time to assemble the sandwiches. Add the meat and peppers back to the griddle and separate it out into individual piles for each sandwich. Lay a couple slices over each and top with a split sub roll.
    It only takes a second for the cheese to melt and the bread to slightly toast on the edges. Use a big spatula and carefully pickup each sandwich transferring it to a platter.
    Top each sandwich with a big ladle of the cheese sauce and dive in! These Cheesesteaks are great served with pickled veggies and you favorite cold beverage.

      Malcom is totally right though with respect to a cheese steak -- theres no way you are going to have any rareness with such a thin cut. the cut is even thinner usually as it is done by a machine.

      I'm sure some people are disgusted by the way he starts digging into the meat at the end of each video. He's unhealthily fat, some people fail to see that he owns it. I don't trust a skinny chef, even though I am one myself. I used to weigh in at 113kg five years ago, now I only weigh 67kg.

    You did wrong when you mixed the onion with the peppers ...it has to be in solo ..each stuff get to be cooked alone .....the pepper will gives up it water to the onion ,because the onion will be the first done and caramelized, then the water come from the pepper will make the onion wet and it not good for the caramelized onion .....

    Huge fan here but as a Philadelphian I got to tell you that the best for a cheeseteak is sirloin. It’s what’s cheesesteaks have been made with since forever. Nothing works better than shaved and chopped sirloin.

    I think what really gets me, is the fact that you encourage people to try their own thing - to appeal to their own tastes. You make sure to let people know there is no 'right' way to make good food; what's good depends on what you like - whether that's a substitution in seasoning or in ingredients, or an outright omission of things you don't like. But, even though cooking is more of an art, instead of a science, you still show your whole process and explain your own reasoning so if people want to follow along they can as well.
    Some people are pretentious about food, and how it's supposed to be made/eaten. But I'm a picky eater, I can't help it. So I think it's pretty cool that you don't denigrate anyone for their preferences. Thanks for doing what you do, man. I appreciate it.

    Great looking sandwich. Once you put peppers it's not a Philly any more. Actually better. Best Philly in Philly area is Steve's Prince of steaks. Ribeye cut thinner then Malcolm's. Onions. Whiz/provolone available but Steve makes his own w/white American slices. No chopping meat into hash like Genos other strip mine joints. Also picks up fresh bread at 10:30 every morning for 11:00 opening. Peppers and other stuff on self serve bar.
    A friend gave me a meat slicer two years ago I have never used. Wanted it for making jerky but I think I'm going to give it a maiden voyage cutting ribeye for this

    Great Job Malcom!!! Gotta have the ribeye that's the key. From a PA boy I'll give a trick of the trade having a second spatula to tear apart the steak is the cats meow. Turn one spatula upside down and slide the other one down the back side of it to break apart the steaks. I'll have to try your cheese sauce looks great!

    I use a kettle grill and like to use a cast iron skillet to do my onion, pepper and mushroom mix with a bit of fresh garlic and olives (sea salt and fresh ground black pepper), but I like to close the lid for about 15min to get some smoke flavour on the veggies

    In Canada a Big Mac costs $6.19 and a single burger at Five Guys costs $7.49... Compared to the Big Mac I don't find Five Guys that over priced.

    @HowToBBQRight, ever thought about a perforated cast iron skillet instead of the flat surface you used? I have one and it makes a world of difference. My local butcher sells shaved steak, a little bit of red, yellow peppers, onions with a few mushrooms,,, OMG!!

    How do you not have 150 Million Subs? I think your show is being Throttled.
    It is that good! I just see the picture of the video and say to myself “ya know it’s gonna be good”!!! I cannot tell you how many times I could have added another meal to the daily schedule after watching Malcolm make magic in his yard. Only problem is: I need more grills. Lol you are my Idol Sir!!!
