Indian Paratha Indian Flatbread Recipe| How to make Indian Parantha by Manjula

    Ingredients:
    1 cup whole wheat flour
    ½ cup water as needed
    Pinch of salt
    4 tsp oil as needed
    ½ cup dry flour for rolling
    Instructions:
    In a bowl, mix the flour, salt and water. Mix well until it forms to soft dough (adjust the water as needed).
    Knead the dough on a lightly greased surface. The dough should be very smooth and soft.
    Set the dough aside and cover. Let the dough rest for at least ten minutes before.
    Heat the skillet on medium high. Note: An iron skillet works best. To check if the skillet is ready, put a couple of drops of water on it. If the water sizzles right away, the skillet is ready.
    Divide the dough into 5 equal parts. Roll the dough into about 3 inch diameter circles. Spread about 2 drops of oil and fold into two again put another drop of oil and food now you have a triangle.
    Roll the patty in dry whole-wheat flour. Press it a little and start rolling on a clean surface to about 6 inches in diameter.
    Place the Paratha over the skillet. When you see the color change and the paratha will puff in different places. Turn the paratha over.
    The paratha should have golden-brown spots. Wait a few seconds and put about 1/2 teaspoon of oil and spread with a spatula.
    Flip the paratha and lightly press the puffed areas of the paratha with a spatula that will help paratha to puff up.
    Flip again and press with the spatula making sure the paratha is golden-brown on both sides.

    I made this successfully, I'm glad to say. I used what I had 1 and 3/4 cups of strong whole wheat flour and 1/4 cup of white self-raising flour. I also added some nigella, poppy and carom seeds. Delicious. Thank you. PS. I think I'll have to buy your skillet. :)

    I dont know what you mean by over kneading the dough it is always good if dough is knead well so it is soft not sticky to your fingers. When you are rolling the paratha do not use too much dry flour and do not cook paratha on low heat.

      How can we change the recipe for white all purpose flour please? In lockdown for Covid19 and all I have is white flour, but I would like to try this if it will work.

    I use whole-wheat flour mostly Laxmi or Sujata brand many others are available you can buy from Indian grocery store.

    Once the consistency is right I knead the dough on a flat surface by rolling it about quite fast under the flat of my hand. I find this method far easier than kneading it in a bowl. I bet Manjula's parathas are second to none though ;)

    @Welcometomylife2441 From what I can tell it's the oil. In her Chapati recipe Manjula only uses oil to keep the dough from sticking to her hands. I have made her chapati recipe and I don't use any oil.

    Roti is a general term for breads. Paratha is a specific type of Roti.

      knead the dough more and dough should be soft

      it is important to knead the dough well then wrap it foil
