I had an Indian math teacher who would say just that when you explained how you solved a problem or what trouble you were having with one. He always said it rather spontaneously and would then rush into helping you get through the problem or praising you for thinking out of the box. Very nice guy, but he was a bit all over the place and hard to keep up with in conversation at times. Shame he got so many racist comments and such, he's a good teacher. Glad to not have to do math anymore, bad sad that he doesn't teach me anymore.

As a gratitude to Chef Floyd Cardo, I would like to introduce to more breads like Bhaakri (which can be made from rice flour, sorghum flour), Rice Flour Rotis, Theplaas (Gujarati flatbread with fenugreek as one of the ingredient), Ragi Rotti (Little Millet Flour Flat Bread), so on. I am unable to remember more. Every state and community has its own or a variant of some breads.
There are more. Ranges from sweet to savory. There dhapate, dhilda from Maharashtra, stuff roti, stuff parathe from the north India, then there are roti from other floor from rice, millets, corn etc. from north to south of India. It's a challenge to give an exact number. Food from India is really diverse.
Not weak flame, one should not add oil, ghee or butter, while preparing the dough. Prepare the dough with only the whole wheat flour, water and salt. Then the rotis will rise.

yup. sahi baat :-/ iyam yet to see the complete clip (got turned off by seeing the ring, bracelet/ watch being their while making the dough) yes, there ARE urban desis who do use cling wrap frequently (if it is within reach) using a damp cloth though (if it is to aide fermentation) is avoidable. better to do the plate thing and if needed seal it with anything gooey like the dough itself
Just made some chicken tikka masala with store bought naan, and I wanted to learn how to make my own naan at home. I heard about a well known chef passing weeks ago in the news but I didn’t recognize the name, but now watching this video and coming to the comments, it hit me that it was him. Rest In Peace, I don’t know a lot about Floyd but from this video, it seems like he was an amazing chef and I plan on researching his recipes and learning more.

For sure. I can't have roti that's not well 'grilled.' Sometimes at the Gurudwara, some ladies make it really light, like they take it off the heat as soon as it raises, so I always have to throw them back on the heat. It feels like it's raw when it's not grilled a bit more.
I cannot express how happy it makes me that he wanted to make the dough without animal products. Not simply because there aren't animal products in it, but that he considered the fact that there are a lot of people who do not use those products and wanted to make the recipe inclusive. I will definitely be trying these recipes, they look amazing!
Animal products are generally not used in making rotis/paranthas/lachha paranthas. Although ghee(clarified butter)is routinely added. Almost all Vegetarians in India consume milk and milk products. Indian vegetarians are not the same as western vegans.

At school my teacher was slapping everyone who did the homework wrong, so I erased mine and told the teacher, I didn't do it coz I fell sick. Got home only to be beaten black and blue by my mother for erasing the homework 😂😂
Instead of flowering the lacha paratha after it has been rolled out and ghee'd, spread an amount of brown sugar on the paratha to turn it into a lovely dessert. My aunt used to make these for my cousins and I as kids. Instead of folding the paratha like an accordion, you then roll it like a wrap (or a Dutch pancake) and tuck it in as nicely as Mr Cardoz did. You can immediately bake the paratha in the (cast iron) pan and it will come out as a delicious and simple snack. Don't worry if the sugar leaks out of the paratha while baking, it will leave a most delicious caramelized crust on the outside. To be careful not to leave on the stove for too long or the sugar might burn.
Try as I might, my hands always get dirty when I cook, especially when bread is involved. I’m embracing it now. It’s actually really nice to see a chef embrace working with their hands. Mom used to make fresh roti all the time, and the recipe showcased here is similar, minus the buttering and salt. I saw you add salt and i was like 😧. You almost want your roti to be a bit bland-it’s your foil to a flavorful tikka or sabsi (although maybe I shouldn’t knock it till I try it). And true, parathas are great on their own, or with yogurt. I actually used to eat it with ketchup when i was younger. Anywho, this video has made me think of revisiting cooking Indian again, so many thanks for showcasing this!
there are different ways of making something as simple as roti...in Bengal (and much of eastern India if I'm not wrong) salt is added to the flour and the rotis are not meant to be bland XD

Took me 2 years to perfect mine. I would make them every single day for the whole family and legit became obsessed with making them. The four, the water the temperature the consistency every had to be specific for me. But in the end I got o teach my mum how to make perfect rotis and thats all that matters.

I came here thinking the title said "Italian Breads", I instead came here finding Indian Breads. Arguably I'm even more interested now because Naan is one of the best breads to exist.
Ghee is essentially a clarified butter that has been rendered down. The clarification process is exactly the same only you allow it to simmer a little longer to cook out the excess water content and it extends the shelf life considerably. Clarified butters are a great way to cook with the flavors of butter but without the milk solids being able to be burned and affect the taste of the dish. Unless browned butter is a component you want.
Wow! Thank you for this video. I tried to make roti years ago but it never worked right for me. I think it's because I used butter and not ghee or oil. I will be trying the naan as well as the roti. .... And I just did. It turned out amazing. Floyd Cardoz showed me something new--the part with holding over the open flame. This made it! I just found out he died from Covid-19. My sympathies to his family and friends. I'm so sorry for your loss. May he rest in peace.

@TheDarkArtist In India we usually eat it with some sort of gravy made with vegetables or chicken but never raw.
Roti from the Caribbean and roti from India share roots, but they've evolved separately for so long that they're quite different now.

As a gratitude to Chef Floyd Cardo, I would like to introduce to more breads like Bhaakri (which can be made from rice flour, sorghum flour), Rice Flour Rotis, Theplaas (Gujarati flatbread with fenugreek as one of the ingredient), Ragi Rotti (Little Millet Flour Flat Bread), so on.
I am unable to remember more. Every state and community has its own or a variant of some breads.

There are more. Ranges from sweet to savory. There dhapate, dhilda from Maharashtra, stuff roti, stuff parathe from the north India, then there are roti from other floor from rice, millets, corn etc. from north to south of India. It's a challenge to give an exact number. Food from India is really diverse.

Not weak flame, one should not add oil, ghee or butter, while preparing the dough. Prepare the dough with only the whole wheat flour, water and salt. Then the rotis will rise.
I think there should be a seperate series when he brings in guests. Call it "Buddies with Babish"

I would use a plate to cover the bowl instead of the cling wrap. Reduces single use plastic.

Just made some chicken tikka masala with store bought naan, and I wanted to learn how to make my own naan at home. I heard about a well known chef passing weeks ago in the news but I didn’t recognize the name, but now watching this video and coming to the comments, it hit me that it was him. Rest In Peace, I don’t know a lot about Floyd but from this video, it seems like he was an amazing chef and I plan on researching his recipes and learning more.

A kind generous man whose food fed hearts and souls. Such a tragedy that he is gone when it could have been prevented with leadership from individuals who actually did their jobs instead of looking out for themselves. We are going to miss Chef Cardoz’s spirit and his talents.

For sure. I can't have roti that's not well 'grilled.' Sometimes at the Gurudwara, some ladies make it really light, like they take it off the heat as soon as it raises, so I always have to throw them back on the heat. It feels like it's raw when it's not grilled a bit more.

I cannot express how happy it makes me that he wanted to make the dough without animal products. Not simply because there aren't animal products in it, but that he considered the fact that there are a lot of people who do not use those products and wanted to make the recipe inclusive. I will definitely be trying these recipes, they look amazing!

Animal products are generally not used in making rotis/paranthas/lachha paranthas. Although ghee(clarified butter)is routinely added. Almost all Vegetarians in India consume milk and milk products. Indian vegetarians are not the same as western vegans.

Realisticly, be careful, the more flour you add the drier the roti will be.
You can go too far the other way though, the sprinkling can make your dough dry if your not careful
Not really, over sprinkling would make the dough very dry and your roti would break into pieces while trying make them

In my country culture we called them :
Roti = Chapati
Lachha paratha = roti canai
Naan = roti arab/naan
Chapati word is used other country (outside Indian subcontinent) too?

Instead of flowering the lacha paratha after it has been rolled out and ghee'd, spread an amount of brown sugar on the paratha to turn it into a lovely dessert. My aunt used to make these for my cousins and I as kids. Instead of folding the paratha like an accordion, you then roll it like a wrap (or a Dutch pancake) and tuck it in as nicely as Mr Cardoz did. You can immediately bake the paratha in the (cast iron) pan and it will come out as a delicious and simple snack. Don't worry if the sugar leaks out of the paratha while baking, it will leave a most delicious caramelized crust on the outside. To be careful not to leave on the stove for too long or the sugar might burn.

Try as I might, my hands always get dirty when I cook, especially when bread is involved. I’m embracing it now. It’s actually really nice to see a chef embrace working with their hands. Mom used to make fresh roti all the time, and the recipe showcased here is similar, minus the buttering and salt. I saw you add salt and i was like 😧. You almost want your roti to be a bit bland-it’s your foil to a flavorful tikka or sabsi (although maybe I shouldn’t knock it till I try it). And true, parathas are great on their own, or with yogurt. I actually used to eat it with ketchup when i was younger. Anywho, this video has made me think of revisiting cooking Indian again, so many thanks for showcasing this!
there are different ways of making something as simple as roti...in Bengal (and much of eastern India if I'm not wrong) salt is added to the flour and the rotis are not meant to be bland XD

Took me 2 years to perfect mine. I would make them every single day for the whole family and legit became obsessed with making them. The four, the water the temperature the consistency every had to be specific for me. But in the end I got o teach my mum how to make perfect rotis and thats all that matters.

ghee isn't really necessary, you can make your naan without and just have your curry be flavourful
Ghee is essentially a clarified butter that has been rendered down. The clarification process is exactly the same only you allow it to simmer a little longer to cook out the excess water content and it extends the shelf life considerably. Clarified butters are a great way to cook with the flavors of butter but without the milk solids being able to be burned and affect the taste of the dish. Unless browned butter is a component you want.

Wow! Thank you for this video. I tried to make roti years ago but it never worked right for me. I think it's because I used butter and not ghee or oil. I will be trying the naan as well as the roti. .... And I just did. It turned out amazing. Floyd Cardoz showed me something new--the part with holding over the open flame. This made it!
I just found out he died from Covid-19. My sympathies to his family and friends. I'm so sorry for your loss. May he rest in peace.
