    This recipe makes 4 Roti's:
    1/2 Cup Whole wheat flour
    Pinch of Salt
    1/4 Cup and 1 tablespoon of luke warm water
    1/4 teaspoon of Oil
    1 teaspoon of Ghee or clear butter

    knead the dough more, dough should be very smooth and when you are rolling roti do not use too much dry flour just use enough to help you rolling.

    Thank you so much Manjula for showing how to make chapatis on an electric stove! I have a hard time making them on an electric stove, because I used to always only use a flame gas stove before, (which I no longer have). Your's puff up so nicely!     I bought a rolling pin like Manjula's at an Indian grocer just to be more authentic! My family loves my roti thanks to Manjula. It was "with a light hand going around" that I never knew to do that turned my inedible, hard, terrible chapatis into perfection!

    We’re still watching this wonderful cooking channel, takes me back to Mrs “Singh’s” Aurora kitchen. Her roti was just to die for. Then the family moved to Texas. I haven’t had any roti that good since. Thanks Manjula for the recipe and how to cook them delicious roti.

    That is her easy way of handling with right kind of procedure and tools.
    1. Dough is of high workability (right water content), which is soft; watch it. It is on other side of hard dough. her skin is oily and floor may be one week mature (fresh flour dough is sticky) dough won't stick much to her fingers while making. adding oil in dough make chapati soft even we eat late.
    2. size of ball for chapati depends on how thin rolling u can manage with good size chapati. there is no rule for anything. its individual skill.
    3. she choose bigger size roller (belan) which is gives enough natural weight for soft dough spreading. this is imp otherwise skill in item no. 5 is difficult.
    4. in-use wooden tools has absorbed enough oil to hav non stick property till dry surface condition. dry surface is maintained by applying dry flour layer in right quantity when needed only. dry flour should not last after completion of rolling, it burn and turn black on hot plate. no floor on hot plate gives nice clay finish to chapati. with practice it come automatic as we walk with out thinking of balance.
    5. catch her skill while rolling. she is rotating chapati clockwise simultaneously while she is rolling back and forth. that is skill of making round chapati with out hand touch. dry flour layer also reduce friction betn chapati and board which help to rotate.
    6. do not use metal board and roller. use thick pan of poor heat conductor which gives even heat spread. thick non stick aluminum is ok. Iron is much ok. it gives simple and good source of iron too. learn flame adjustment in all process.
    7. make each side white on hot pan then use fork to put chapati straight way on flames. this sudden heating on flame burst the moisture inside into steam and u will see the round earth. u can have black dents on white/broun chapati. learn when to change sides and to expose small white portion to flame to hav even dents. this also make outer coad hard which gives fresh smell and make chapati tasty.
    do not use fingers to handle chapati when bulged. its art like snake handling; where to hold it. if it burst very hot steam can burn fingers.
    8. soft dough, heavy roller, presence of surface dry flour till spreading, rotating chapati while rolling and no dry floor when it goes to hot pan are keys to enjoy chapati making. if u r not salt conscious then add little salt pinch in floor to hav taste.
    my mom taught me this skill when i was kid. i add my engineering to it. hope u use it. thanks.

      practice, first time when my grand daughter rolled the roti it was not round, she was very upset but I told her most of the cooks make the round roti but yours is piece of art, no one can copy.

      No it’s usually made with atta flour which is a brown colour wheat flour and tastes different. Indians add ghee or butter to it

      Thank you for the nice recipe. I tried it twice with whole wheat flour. It turns out a little hard. Dough also not soft. I use according to your recipe. What went wrong? Tsk

      Eve Yee maybe the dough u made was hard..The more u add water the softer will the Roti's come out..It's directly proportional.. but it should not be sticky. The dough should be soft.. after u make the dough rest it for atleast 15 to 20 mins before u start rolling them out..

      Eve Yee did you use "atta" flour? Go to a indian grocery store. Golden temple is a common brand of atta flour. You may have of also cooked it to long... Or had the flame to high... Or rolled it too then. Those are all reasons why it can be hard.

    yet again i have learnt something new,..i didnt realise you could puff them up on the skillet,..i always thought u had to have a naked flame to do this,..thanks as always manjula .
