    Yes! We want more very low calorie recipes; they do not have to be Zero calories, just the least possible. I like one for fast easy no gluten bread.

    Saw that comment about it not having fat. Have you used inulin in any recipes? It's a type of prebiotic fibre (so helps the good gut bacteria grow) that's about 30% as sweet as sugar. It can be used as a fat mimetic to provide a creamy / moist texture. You have to mix it with another dry ingredient or it will clump up when mixed with water. It does mix alright with yogurt or kefir though, adding a bit of sweetness/smooth texture to it, and I've been adding it to a bunch of baked goods: my own protein muffins, my no-flour bread (eggs, egg whites, yeast, cinnamon and oat/psyillium/inulin), pizza. If you're using a sugar alcohol, those can't be fermented by yeast and can't contribute to browning /maillard process - whereas inulin can. You can improve regular recipes by adding inulin, and also use it to replace some fat in cakes.
    I wonder how it would be if you add maybe a couple grams into the filling, should work without any issues there. Adding some to the cookie could work, but not sure if it's going to make it softer.
    Also, have you heard of allulose? It's a type of sugar (like glucose, fructose, galactose, etc), not a sugar alcohol. It behaves exactly like sugar in terms of structure/caramelization/fermentation/water retention, but has like 90% less calories while still providing 70% of sweetness. It might also lower the glycemic response when added to regular sugar (sucrose) vs the same amount of sucrose without allulose, which sounds pretty fascinating - adding more sugar to lower the blood sugar spike.
    It's expensive though, but there's a few recipes where you can't really completely replace sugar with say erythritol or splenda like cream caramel or yellow cakes - but you could probably use some allulose + inulin with some other cheaper sweetener in those. I've been adapting a cake recipe to have less fat/sugar (still have to experiment a bit to see if it works), so I've have been checking out some food science research at how various sweetners/fibres/fat replacements affect the test/texture/moistness/stability of cakes - if you want I could email you some papers/articles (might take a while to find them).

    Just ordered some oat fiber. Made the icing just to try and it was delicious excited to make the cookie. Low or no calorie animal crackers would be a nice recipe

    I shared this video with my mom before the video was even over. We are both on a weight loss journey and low calorie foods are right up my alley. I definitely need more fiber in my diet and would love to have “Oreos” to help me get there 😂

    I made these but they came out kinda soft. It was like chewing on wet cotton.
    That said, my oat fiber is more fluffy than powdery, which I don't think is normal...
    Either way, I made them with the intent of smashing them back up and mixing in some melted butter for a keto cheesecake base and it was still gorgeous.

    I don't blame you at all for saying some of the recipies you make are zero calories, because they're so low in calories that you burn several times the amount just making the recipe itself than the thing actually contains, even with minimal effort. It probably takes 20 times the amount of energy to make a batch of these Oreos (buying the ingredients, measuring them, following the cooking directions, etc) that by the time you sit down to eat the whole batch, you don't even consume the amount of energy you just spent making these, meaning that you'll still be in a net calorie deficit.     Erythritol has a caloric value too. It's about 0.2 kcal per gram, so another 3 kcals on top of the 4 from the cocoa. 7 kcals from the cookie itself, and 2.5 kcals from the cream filling, plus trace calories from the vanilla extract and nut milk, so it's really about 10 kcals in total.

      Still tho didnt tried it but normal oreos have 60 smth calories in one of them so it means you can eat 6 of them instead of one and if it tastes really good its worth it

    TMI warning, I once messed up an anabolic icecream recipe and put waaay too much konjac gum powder. Worst night in my life 0/10 would do it again, I ragret evryting. Actually that was the last time I ate anabolic icecream. If only calorie dense foods would have the same effect :D

    I would love a graham cracker. Idk if I’m the only one but I LOVE graham crackers but they’re actually very calorie dense. If you can’t make the cracker even a crumble would be amazing bc… Graham cracker crust 🤩

    I made these today, I have some thoughts. They are waaaayyy sweeter than an Oreo, the cookie itself, not the filling. I will try the recipe again, just adjust the oat fiber/erythritol ratio :)

    I tried your recipe and it didn't quite work. The chocolate batter was the right consistency, but when cooked it won't dry out and get hard. It tastes alright though. I do use allulose instead of erythritol. I also just mixed it instead of "letting the fiber soak up the water". So maybe one or both of those is why.
    I tried a slight modification of the recipe, using 50% oat fiber and 50% "oat flour" (ground up steel cut oats) and it made a soupy batter with the suggested dry ingredient to water ratio. But it cooked up dry and soft. So it ended up more like a 20 calorie woopie pie. (Makes 2 full ones or 4 halves) Which is a huge win.
    8 grams oat flour
    8 grams oat fiber
    5 grams dutched cocoa powder
    30g allulose
    Salt
    15g water
    And I made the icing with powdered allulose. Worked great. Even made it slightly wetter to really get the whoopie pie effect.

    Oreo =52 kcal per serving (1 cookie).
    Your cookie has 4 kcal per cookie, but I can only eat 1 of them, so it doesn't make any sense, I can eat 1 original Oreo, and don't regret that, 52 calories it's not too much, I mean 1 cookie can't satisfy your sweet tooth, but you spend your time to cook it, I'm I right?

    I would not add salt or cocoa as im on medication thats counteracted by caffeine so id add another spice

    Weird. I've ordered oat fiber just to find out it has much more calories than I thought.. It says 186kcal / 100g for me, which makes the cookie around 20kcal.

    Those that have to abstain from having any fiber or very little of it because they are prone to having diarrhea, can take calcium supplements or tum tums. Calcium hardens the stools. People have different digestion and elimination system is different according to their body type: endomorph, ectomorph or mesomorph. Because of it, some people are prone to diarrhea, others to constipation while some are not susceptible to either.

    I followed the recipe to the T, the flavor is..well…not enjoyable lol! And I love most food, I am not picky at all.
    It’s a zero calorie Oreo, so you can’t expect much. The white filling with the sweetener is the worst part. I was nauseous afterwards. The cookies on their own were just fine, very bitter but you could put some peanut butter on them and they would be great. But the filling. Oh god no.

      Really? The icing is mainly just sweetener, so I’m surprised unless you used something like stevia that has a metallic taste?

    I followed everything exactly....but they aren't turning out crunchy. How thin are yours? How long do they cool first?

      Mine are pretty thin. I’d let it cool down completely to room temp. When the cookies are warm, they’re not crispy. Also you might need to bake longer

    I just found you and want to thank you for this. Have you tried freezing the cookies (without filling)?
    I've never liked the cream in Oreos but these would be great with a schmeer of peanut butter (worth the calories).
