Please feel free to substitute or omit to suit your needs! 3 cups lentils 12 cups water 4 cups veggie broth 1 cup Quinoa 3 tbsp lemon juice 2 tbsp onion powder 2 tsp garlic powder 2 tsp cumin 1 & 1/2 cups fresh kale chopped fine 1 & 1/2 cups fresh spinach chopped fine 4 cups chopped peeled sweet potato 25 ounce can diced tomatoes Bring all ingredients to a boil (EXCEPT kale and spinach). Then reduce heat to low/medium and boil for 1 hour. Add Kale and Spinach at the end and simmer for another minute before serving. Enjoy!
That looks good. I like the ingredients. Do you know what spices your spice mix contains? I think if you let it cook in a Dutch oven it will spare you on the expense as well. When you let it come to boiling stage you can turn off the heat and it will still let your food get ready. If you don't have a pan like that you can also use a blanket in which you cover your hot pan.
Yes, and you forgot to mention another amazing fact about Sweet Potatoes and that is that you can eat the leaves of the plant that are packed with nutrients too! They also grow well in the heat, where other greens don't do as well, so you'll always have greens throughout the year in addition to the sweet potato. God bless you! 😊

I could be wrong but I'm pretty sure you aren't supposed to eat quinoa every day, let alone for every meal. There is a compund that our guts cannot handle excessive amounts of. Also flax seed cannot be broken down and absored unless ground up if I'm not mistaken?

Pardon me but that sure seems like an awful lot 9f salt especially considering there is probably some already in the broth and immit vhix seasoning 😬 I would yadte it forst before adding the additional salt called for in the recipe, especially those with salt sensitivity.. In the Philippines we blanch it with boiling water then add a little coconut vinegar, onion and ginger. We eat it as side dish or salad :)
