Seed oils are actually great. For oiling squeaky door hinges, bicycle chains and other mechanical parts. Thats what seed oils were originally made and should exclusively be used for.
Butter > ghee > tallow We use them for different things. Butter has a lower smoke point than ghee so we use ghee when we want to cook at a higher temperature. We use tallow when we are smoking meat to make it more tender. And we use raw butter when we aren’t going to heat up the butter. Hopefully people can start using critically thinking skills.
Your comment brought me back from about 15 years ago - when I kept telling people how bad those colorings are. I finally got my husband to read everything I had read about all the colorings especially red40. Red 40 was causing serious mental/behavioral issues with one of our sons. We threw all the colorings out. My son became a completely different child! It was so hard back then to find foods without the colorings!

I'm extremely particular with ingredients in foods and body soap, but for makeups it's really a big bummer as it really narrow down the available makeups I can use, I found a tallow based lip balm but it isn't cheap.
I have been diagnosed with high Cholesterol. Needless to say I'm shocked. I'm 59. My weight is spot on. I don't eat fast foods. Don't drink soda. I over indulge in chocolate. A big thank you for your advice❤. Especially icw the oils we consume. Luckily i switched to butter, olive oil, coconut oil a few years back. Buying Ghee to cook with is my next step. Thanks to you. Olive oil has been cooked for thousands of years and there has never been a problem. Greeks will consume half a litre personally a week, and that stuff definitely gets cooked. The healthiest people in the world consume cooked olive oil, and large concentrations of it. Don’t be afraid of one of the healthiest foods ever to exist

Fruit/nut oils are NOT like those "seed-oils" which are not obtained by just cold-pressing. Cold-pressed olive-oil and avocado-oil and coconut oil are "fruit-oils" Cold-pressed peanut-oil is also healthy. Ask Dr Cate Shanahan. Even some COLD-FRESSED SEED-OiIs are healthy. My eldest sister is surviving cancer diagnosis for over 25 years by refusing surgery/x-ray/chemotherapy by just consuming COLD-FRESSED FLAKSEED OIL She is now over 81yo and still walking about. People in Okinawa consume mainly cold pressed olive fruit-oil and cold pressed sesami seed-oil.

What I realized a couple weeks ago is that you dont even need any cooking oils. I just put my steaks in a dry pan, high heat, sear both sides and its perfectly medium rare with good browning. There is no need for oils. I only finish it with butter a minute before I take it off the heat and let it rest in it to absorb some of the juices mixed with the butter. But for the cooking process you dont need any fat other than the fat from the steaks.
It’s the benefits you get from using the tallow. I was the fat kid growing up and was a size 34 till the last 3-4 months I’ve been on the animal based diet, I’ve dropped to a 32-31. Working construction helps with staying active.
Recently gifted an air fryer..don’t really need any oil for it..I’ll add good olive oil..after the veggie or protein is cooked for a delicious flavor..plenty of choices with a stainless steel basket..great for summer time cooking..less heat in the apartment..or reheating..I’m hooked..
I don’t think olive oil is safe for cooking at any temperature. This is because olive oil still contains a relatively high amount of linoleic acid, which is extremely sensitive to oxidation when exposed to heat.
@@SeaOrcRonnie uncooked EVOO is probably very good for you. the problem with seed oils is that the linoleic acid has already been oxidized in the manufacturing process. cold-pressed EVOO should not be oxidized.
@@Paulsaladinomd Mediterranean cultures would like to have a word with you. Most Greek, Italian, Spanish households ONLY have EVOO as their everyday cooking, serving oil. They don't use butter or seed oils. Yet they live longer and have a lot less health issues. If heating olive oil was an issue, we would see it in Mediterranean cultures. There is a reason why greeks, italians really take care of their olive trees. There are olive trees still tended from Ancient Rome times, that provided the same olives for romans, which is just nuts.

Paul, actually research shows that when heated ghee becomes saturared with oxidised cholesterol that is atherogenic (Kumar & Singhal, 1991). I loved making my own grassfed ghee until I discovered this, would like to see you address it.
I think the takeaway of this, is that there is no be-all-end-all solution. There is still a place for ghee in cooking, as there is still a place for olive oil, etc. It all comes down to how it's used and how often, moderation and variety is key. I would say definitely in a healthy and balanced diet, you could even include sunflower oil sometimes. In Russian culture for example, you traditionally would dress pickled cabbage with sunflower oil. That's a big difference than deep frying something in 2 litres of sunflower oil.

I buy butter in bulk when it's on super sale to make my own ghee. Butter can be perfectly stored in the freezer. Then like 6 months worth of in one session of ghee making.
Nothing wrong with fruit, then again it depends on the country. In my case I live in Korea, and the fruit here is the most fresh and organic I've ever tried! When ever I eat fruit from USA or Puerto Rico, it's like it has no soul.

You can use high heat with evoo. Smoke point do not determine rancidity. It is not always but it is usually the high smoke point oil that tend to be more oxidized, because they are more refined meaning their antioxidants (polyphenols) has been removed, this allow the oil the smoke less in high heat but it's more susceptible to oxidation. That means avocado oil which has high smoke point are much faster to oxidize than EVOO which has lower smoke point.
@@FatManJackson You can also use cast iron period. Who said its only used for high heat cooking? You can cook everything at any heat setting as it cooks evenly with no teflon or chemicals
I try to buy organic as much as possible. However, one lady I follow on TH-cam who I trust completely spoke about the "Organic" label on commercially produced food. She basically stated that she doesn't spend the extra money on organic because of the stuff they are still allowed to spray with and call it organic. She stated she has brothers who grow food commercially and have organic certification. She went on to state that she doesn't agree with what products they can use and still be classified as organic. So she said it isn't worth the extra money and was basically saying your paying extra for produce that is not really organic. Unfortunately, she did not expand to tell us what exactly it is that her brothers use under the organic label that she feels should not be allowed and yet still be deemed organic. So now I am not too sure whether the extra cost is worth it either. I do realize that it may not be truly organic, but removing as many chemicals & harmful substances in ones diet is best.
To be fair, there is a place for certain seed oils in moderation. The message is good for those who don't realise that animal fats are certainly the healthiest thing you can cook in. Yet, at the same time, I wouldn't discount all seed oils completely, especially those in use for thousands of years in certain diets. It's a situational kitchen item, rather than essential like butter, tallow, etc.
it’s important to note that not everyone can eat red meat or its fats. i definitely can’t eat it. i spent 2 months over this summer trying to eat red meat and ditched olive oil. my eczema and acne continuously got worst but i was convinced that the red meat was the right choice. i finally gave up and switched to poultry and olive oil. my eczema significantly improved within 2 days
Paul does a pretty good job of not being too dogmatic when he recommends stuff. It's kind of funny how eczema is our marker for what doesn't work in our diet 😂. He cites his eczema flare ups too.
In Japan people eat tons of seed oil (soyabean oil) along with fried food and their health is phenomenal. Life expectancy is much higher than any USA or EU people .Seed oil is perfectly fine.

Most non-organic dairy from the U.S. contains recombinant bovine growth hormone (rBGH) and/or recombinant bovine somatotropin (rBST), which are lab-generated synthetic versions of growth hormones naturally produced by cows. The use of rBST in banned in Canada, Australia, New Zealand, the U.K., and the EU, so you won't find most American commercial dairy products outside the U.S.
I heard in your interview that you switched from Ketosis because of cramping and heart palpations. But that was probably caused by low potassium ( often doesn't show up on blood tests). Potassium is super hard to get on a normal diet, let alone a carnivore diet! So I'm pretty sure you were low in that. Drinking cream of tartar in water seems like a possible good way to boost potassium. I am not supporting long term ketosis btw.
Paul is an MD and he does blood test, he knows how to monitor his nutrient status, so don't worry. He eats 300grams of carb a day mainly from fresh fruits, and high quality beef, he gets more potassium than most keto/carnivore people I'm betting. You have to expand your framework and understanding of nutrition, looking at potassium or magnesium in isolated sense won't tell the whole picture. I used to be on keto and like you was championing magnesium and potassium, and telling people how magnesium is the master mineral that control absorption of other nutrients. Such as if your body don't have enough magnesium, then it will voluntarily release potassium to hold onto magnesium. And yes I was also telling people about cream of tartar. All of this was pointless because in reality I was still low on these electrolytes even if I was supplementing with them, because being in ketosis my body was essentially in a stressed state with elevated stress hormones and peeing out the electrolytes and not holding onto them. You have to look at energy metabolism in a holistic sense, the Ray Peat bioenergetic approach does this. These days I no longer suffer from anxiety or palpitation like before and sleeps great, and don't supplement magnesium or potassium at all, aside from rare occasions when there is a very stressful life event.
@erikahuxley Thanks for sharing! I actually don't support long term Keto because I believe God made us to eat carbs and we see that in the Bible. I've been struggling with fatigue for so long. And recently I discovered how much potassium someone needs in a day and how that's extremely hard to get that much by eating it. So I supplemented potassium a lot and focused on potassium rich foods and WOW, since I did that, I have SO much more energy!!! It's amazing! Praise the Lord! I had been eating pretty healthy before (lots of meat and fish and raw milk and and grassfed butter and a good about of fruits and grains) so didn't think I would be so low in potassium. But the truth is you have to eat 4700mg to get the recommended amount. That's like 11 bananas a day! Modern food is depleted of potassium. In this same time I also started having cod liver oil and more leafy greans etc. So that probably contributed to the energy too. I also tried Ray Peat for a bit. I think his focus on increasing metabolism is so important. I still haven't lost weight but I think if I focus on getting enough nutrients, my metabolism will increase and I will finally lose the weight. I might even get pregnant finally after years. That would be great. How long have you been following the Ray Peat died? What changes have you seen in yourself?

Carnivore but keep cold press coconut oil in my cooking alongside ghee and tallow. It is the only oil I take and see a reduction in inflammation in 1/2 hour.

What about carbon steel? And seasoning it with canola oil? (That is the recommended way. They stay if seasoning with tallow or similar, the seasoning ends up going rancid)
If the seasoning go rancid that mean all of the fat wasn't fully polymerized and there are left over. There are more knowledgeable people on this topic. But unfortunately I think its the oil higher in PUFA that polymerized easier. I think once the oil is fully polymerized its fine, but its the stuff you whiff in that is toxic, the aldehydes are produced from burning high PUFA oil contributing to respiratory problems. Various sources recommend flax oil for restoring cast iron, but I find it to have horrible smell. Chia seeds oil seem to be better, but both of these and other PUFA oil are low heat oil and shouldn't be breathing the fumes. Personally I would use EVOO, but it doesn't polymerize as well as vegetable oils. Though some people use the high pufa oil for the first coat, then EVOO for later on.
But you didn’t mention bacon grease. We save our bacon grease and use in our cast iron skillet for eggs and many other things. I thought bacon grease was good to use?

I always shallow fry everything with virgin 🫒 olive oil. Steaks, rice, curries etc. Perfect for cooking.

I would say definitely in a healthy and balanced diet, you could even include sunflower oil sometimes. In Russian culture for example, you traditionally would dress pickled cabbage with sunflower oil. That's a big difference than deep frying something in 2 litres of sunflower oil.

Nice, making tacos right now in cast iron. Only browning grass fed grass finished ground beef with salt in tallow. Then topping with raw cheese and avocado with lime juice. No tortilla or chips.

I buy butter in bulk when it's on super sale to make my own ghee. Butter can be perfectly stored in the freezer. Then like 6 months worth of in one session of ghee making.
I use stainless steel, I only cook with grass fed butter, tallow, or ghee. And I don’t eat fruit or honey.
Nothing wrong with fruit, then again it depends on the country. In my case I live in Korea, and the fruit here is the most fresh and organic I've ever tried! When ever I eat fruit from USA or Puerto Rico, it's like it has no soul.

You can use high heat with evoo.
Smoke point do not determine rancidity. It is not always but it is usually the high smoke point oil that tend to be more oxidized, because they are more refined meaning their antioxidants (polyphenols) has been removed, this allow the oil the smoke less in high heat but it's more susceptible to oxidation.
That means avocado oil which has high smoke point are much faster to oxidize than EVOO which has lower smoke point.
Cast iron is usually used for high heat cooking, so there is no point to be using cast iron if you only use low heat.

Butter composition is 35% oleic acid - which is most of what olive oil is made of. That's right, more than a third of butter is monosaturated omega-9
I use seed oil all the time. I've had the bike chain 10 years and it's still like new.

I try to buy organic as much as possible. However, one lady I follow on TH-cam who I trust completely spoke about the "Organic" label on commercially produced food. She basically stated that she doesn't spend the extra money on organic because of the stuff they are still allowed to spray with and call it organic. She stated she has brothers who grow food commercially and have organic certification. She went on to state that she doesn't agree with what products they can use and still be classified as organic. So she said it isn't worth the extra money and was basically saying your paying extra for produce that is not really organic. Unfortunately, she did not expand to tell us what exactly it is that her brothers use under the organic label that she feels should not be allowed and yet still be deemed organic. So now I am not too sure whether the extra cost is worth it either. I do realize that it may not be truly organic, but removing as many chemicals & harmful substances in ones diet is best.
To be fair, there is a place for certain seed oils in moderation. The message is good for those who don't realise that animal fats are certainly the healthiest thing you can cook in. Yet, at the same time, I wouldn't discount all seed oils completely, especially those in use for thousands of years in certain diets. It's a situational kitchen item, rather than essential like butter, tallow, etc.
it’s important to note that not everyone can eat red meat or its fats. i definitely can’t eat it. i spent 2 months over this summer trying to eat red meat and ditched olive oil. my eczema and acne continuously got worst but i was convinced that the red meat was the right choice. i finally gave up and switched to poultry and olive oil. my eczema significantly improved within 2 days
Paul does a pretty good job of not being too dogmatic when he recommends stuff. It's kind of funny how eczema is our marker for what doesn't work in our diet 😂. He cites his eczema flare ups too.
In Japan people eat tons of seed oil (soyabean oil) along with fried food and their health is phenomenal. Life expectancy is much higher than any USA or EU people .Seed oil is perfectly fine.

if you're going to use stainless steel make sure it's magnetic, as the non magnetic contains high amount of nickel which is toxic.

I mostly cook with ghee and coconut oil. Tallow tends to have a bad flavor if you get one without the preservatives.

I heard in your interview that you switched from Ketosis because of cramping and heart palpations. But that was probably caused by low potassium ( often doesn't show up on blood tests).
Potassium is super hard to get on a normal diet, let alone a carnivore diet! So I'm pretty sure you were low in that.
Drinking cream of tartar in water seems like a possible good way to boost potassium.
I am not supporting long term ketosis btw.
Paul is an MD and he does blood test, he knows how to monitor his nutrient status, so don't worry. He eats 300grams of carb a day mainly from fresh fruits, and high quality beef, he gets more potassium than most keto/carnivore people I'm betting.
You have to expand your framework and understanding of nutrition, looking at potassium or magnesium in isolated sense won't tell the whole picture. I used to be on keto and like you was championing magnesium and potassium, and telling people how magnesium is the master mineral that control absorption of other nutrients. Such as if your body don't have enough magnesium, then it will voluntarily release potassium to hold onto magnesium. And yes I was also telling people about cream of tartar. All of this was pointless because in reality I was still low on these electrolytes even if I was supplementing with them, because being in ketosis my body was essentially in a stressed state with elevated stress hormones and peeing out the electrolytes and not holding onto them. You have to look at energy metabolism in a holistic sense, the Ray Peat bioenergetic approach does this. These days I no longer suffer from anxiety or palpitation like before and sleeps great, and don't supplement magnesium or potassium at all, aside from rare occasions when there is a very stressful life event.

I've been struggling with fatigue for so long. And recently I discovered how much potassium someone needs in a day and how that's extremely hard to get that much by eating it. So I supplemented potassium a lot and focused on potassium rich foods and WOW, since I did that, I have SO much more energy!!! It's amazing!

I had been eating pretty healthy before (lots of meat and fish and raw milk and and grassfed butter and a good about of fruits and grains) so didn't think I would be so low in potassium. But the truth is you have to eat 4700mg to get the recommended amount. That's like 11 bananas a day! Modern food is depleted of potassium.
In this same time I also started having cod liver oil and more leafy greans etc. So that probably contributed to the energy too.
I also tried Ray Peat for a bit. I think his focus on increasing metabolism is so important.
I still haven't lost weight but I think if I focus on getting enough nutrients, my metabolism will increase and I will finally lose the weight. I might even get pregnant finally after years. That would be great.

Carnivore but keep cold press coconut oil in my cooking alongside ghee and tallow. It is the only oil I take and see a reduction in inflammation in 1/2 hour.

What about carbon steel? And seasoning it with canola oil? (That is the recommended way. They stay if seasoning with tallow or similar, the seasoning ends up going rancid)
If the seasoning go rancid that mean all of the fat wasn't fully polymerized and there are left over. There are more knowledgeable people on this topic. But unfortunately I think its the oil higher in PUFA that polymerized easier. I think once the oil is fully polymerized its fine, but its the stuff you whiff in that is toxic, the aldehydes are produced from burning high PUFA oil contributing to respiratory problems. Various sources recommend flax oil for restoring cast iron, but I find it to have horrible smell. Chia seeds oil seem to be better, but both of these and other PUFA oil are low heat oil and shouldn't be breathing the fumes. Personally I would use EVOO, but it doesn't polymerize as well as vegetable oils. Though some people use the high pufa oil for the first coat, then EVOO for later on.
But you didn’t mention bacon grease. We save our bacon grease and use in our cast iron skillet for eggs and many other things. I thought bacon grease was good to use?
