    I'm not even vegan and I love your vegan recipes so much! Made me want discover the vegan nutrition and a lot of plant based products and I really like to replace dairy products with them more and more. I always thought I can't live without milk and yogurt but I didn't realize that there are even better substitutes for it availabe. I love almond milk so much better for examp! People should definetly try out more vegan stuff, it doesn't have to be hard, even for people who are on a diet! Thank you for delicious recipes!

      I went on a Vegan diet for six months and put on so much weight, I was conscious of grams per 100g of carbs etc but it just aggravated my system. Only ate lentils, eggs and other unpreserved foods. Ate no preserved foods, all fresh vegetabables, fruit and lentils. Felt sick for most of the time. Sorry not a fan of vegan foods due to a negative reaction.

    I made this soup December 25, 2023. It was a little too spicy so I will remove the seeds from the Thai red chili next time. By the way, the printed instructions on your website need to be revisited due to typos... Just though I would let you know. Thanks to you both for all the oil-free vegan recipes. I'll be back!

    I love your oil free, low fat WFPB recipes! Please keep them coming. I had 2 heart attacks 8 yeas ago and have followed the diet ever since. Instead of the low-fat coconut milk, I’ll reduce the fat even more by substituting plant-based milk (almond or soy most likely) and a little coconut extract. If a little thickening is needed I can add a little arrowroot. I now feel healthy, vital and strong. You two rock!

    So yummy.... Healthy, colorful, nice looking dish and versatile (it can be served with noodles, rice etc) You can prepare it with the vegetables you have in the fridge and the legumes you have at home. This makes it a perfect recipes. Thanks guys

    Love fish, vegetables, fruit, Greek Yoghurt (low fat and sugar, high protein) and organic sauce being lemon juice, olive oil, pepper, garlic, and agree walking is the best exercise. Avoid corn syrup and anything that disrupts your gut health. Look into that and make your own decisions.

    Superb, Gents... I will admit that I do love my oil though 🙄 and thankfully 8 vegan years of no animal fats have alleviated the necessity of my previous regimen of statin meds! Hurrah! And I do love me some Thai curries!!! 👍

    Coconut oil as found in canned coconut, even low fat, is still saturated fat and not good for anyone who is a heart patient. I wonder if there are any work arounds like using canned drained white beans, canelli, for a creamy texture, and desiccated coconut for that flavor, and thus without any saturated fat. Being as this recipe is supposed to be heart healthy.

      I picked this up from another TH-cam comment many moons ago, but you can use a coconut-based non-dairy milk such as Alpro Coconut, and add some cornflour to thicken it (or something like blended white beans or cashews). You still get a bit of the coconut flavour that way, with a fraction of the fat. You have to experiment with brands, though, because some coconut-based milks, such as Koko, don’t actually taste of coconut.

      I always use alpro coconut unsweetened all plant no sugar milk, as I'm not a lover of coconut also I'm diabetic.

      nessapenguin whenever they call for coconut milk, I always sub with almond milk. I think it works perfectly fine! I always make their curries with almond milk & it is delicious 😊😊

    Just make this with coriander seeds - as per written recipe. Absolute disaster. Not sure what else is missing / incorrect for the written website recipe but you should fix it asap. Susan (in Greystones!)

    Doesn't make sense to called it "OIL FREE" when there's loads of fat (aka oil) in coconut milk. In fact, coconut milk is way hire in saturated fat than olive oil for example.

    "light" coconut milk is mainly filler. Not worth putting in the mouth, IMHO.

      @@lorrie2878 There are different levels of fat content in different brands of light coconut milk. Compare a few and maybe go with one that's up to 12-15%, so it's still light but not massively so.

      @@lorrie2878 I don't know all the brand names off the top of my head (and also I live in Portugal). Not sure about filler but the can I have at home now (brand: Origens) is 12% fat and I've seen other brands here as low as 6%.
