I always use the loin of the deer to make stroganoff. I make a roux of flour and butter. Mix in cream or milk, canned mushrooms, beef broth, venison loin, cut into bite size pieces, Worcestershire sauce, salt, pepper, garlic, minced onion. Then before seeing over egg noodles, I add a generous amount of sour cream. Heat it through, taste for additional spices, and enjoy! It's a family favorite! I make a big pan of it, so we have leftovers for days!!
I have old butchery knives from the family. My great grandfather was a partner in a butcher shop and I grabbed the knives when my father passed away. He was in the business around 1900.

Has a lot of collagen like the thick lining in an egg shell. All glands and “dirty” meat (hairy stuck to it) gets packaged for dog and chicken feed.
We call the outside of the ribcage meat along the spine backstrap and the inside of the ribcage along the spine tenderloin . Now im craving deer jerky! 😋

However i understand to each his own and theres always another way and i love to learn. Now i have to agree 100% with you on the old hickory knives the old ones are the best theres definitely a quality difference between the newer ones and the ones made upto 1970. I have several older ones. Also i found a site called old steel knife site. Where you can order old knives.

I have even corned deer, just like beef, and canned it. Delicious!! We always run our sliced meat through a tenderizer, and it's like cubed steak. And, we always grind some to mix with ground beef to stretch it. Have you ever tried making jerky with ground deer? Just press it out of a jerky gun into your trays. That's good, too.
The one good thing about doing your jerky that dry is it's very easy to make pemmican out of it. I use my canned venison in tacos/ fajitas and love it. Also throw some canned caramelized onions and veggies in it for a quick stir fry. I dehydrate the “ scraps” for dog treats. We eat deer instead of beef. Megan do y’all grind any for burger? I have not tried canning ground meat yet. Any tips? Great video!!
Tenderloin runs on the inside of the deer along the backbone they call that back strap we used to make it into chops either boneless chops or bone in chops and are they ever good and yeah get rid of all that skin that's called sinew and get rid of all the deer fat because it makes it deer meat bitter and it kind of sticks to your lips fill them And the sinew is what plugged up meat grinders badly That sinu that you're taking off if you noticed an Indian's drums that they make that's what they used to make the drum as a string the usinu for a lot of stuff just cut it up and strips dry it and then when you go to use it you just soak it and then use it and when it dries it shrinks nice and tight and you're never ever be able to break it tough stuff I have a drum that I made at one of the Indian programs that we did because my wife is Indian In the drum I used my dear hide for my skin on my drums and the families drums
Where/ how do you get your deer checked for CWD? We are in KY. & are told to “watch for strange behavior. I can deer the same way, & yes deer tacos are yummy!
Ive seen several of your videos and each one you two do not know how to use a knife. You are not suppose to cut towards yourself or others. I have seen you Andrew cut towards your wife and towards yourself. Same with your wife she cuts towards herself. Learn to use a knife before you cut or stab one another.
