I am going to try to do the bacon I want to start with that first cuz it's smaller than a ham. But I don't have a smoker I was just going to hang it like you do the hams
When I was a kid in rural California, my Grand Dad raised hogs every year. Due to our location, he would go around 2 or 3 times a week and collect all the produce from the many fruit stands in the area that was to ripe, or they couldn't sell. This is what he fed his hogs. Man oh man, that was the best tasting pork I have ever had...no kidding. Mom, Dad and us kids left California when I was 10 years old, and I haven't been back since. That was over 60 years ago and I pretty sure the California that I remember no longer exists. A tip from an old timer...home grown/made ANYTHING is far superior than store bought ANYTHING.
My family are from Pitt county North Carolina. Been there since the 1550's .I am from the Pennsylvania ,born and raised . I lived there when I was in my late teens and early 20s . I loved it but not the weather , to hot for me , I like the snow and deep cold. I heard stories from my grand mother and others how they grew everything including tobacco. I always wanted to work the land . I have a natural ability to do it. Now that I am 56 and I'll in health those days are gone . But it's nice to see others doing something that is becoming a lost art in farming and surviving off the land . Makes one appreciate what they have more .
I sure do admire your lifestyle and marriage/teamwork attitude. I don't know you're financial situation but from where I'm sitting you guys are rich beyond money.
We just butchered our first hogs over past couple of months. We cured much the same. My husband likes the brown sugar, but I prefer leaving it out and smoking with hickory. We raised Berkshire but we plan to breed our female with a duroc to increase the meat to fat. Also have cousins that live in Wilkes county, which is where my ancestors came from. Love Appalachian family homestead vids!
My dad who has since passed away tickled me the last time I took him some fresh smoke house bacon we processed. When my mom started frying it up in the kitchen . My daddy said "Alice shut them windows and doors don't let that smell out of this house!" Ain't nothing like real smoked bacon. Thank you for the video.
Y'all are living the dream, I tell ya. So thankful people are still keeping up with the old Southern Traditions, or any classic tradition that has mostly been lost. Greetings from Virginia, and keep up the good work! Y'all earned yourselves a sub! Wish I could try that bacon.
I respectfully envy y’all, I never got the chance to live the life y’all have, I’m 70 now n have enjoyed other avenues but I sure would have loved the experience of being self sufficient as y’all are. I understand it can be hard n difficult at times, but everything in life is worth the effort you put into it, God Bless your Family
I buy my pork bellies in town, as I live in the city. Bring them home and do the same thing. I have a couple of smokers and smoke them just like you. Way back when I bought a meat slicer and slice it up and then seal the meat. Better than store bought. Great video's and thank you for showing the process.
I started curing my own bacon and what amazed me was when i fry it, it doesn't sputter and splatter everywhere. It shrinks less too because the cure isn't injected with a water mixture.
Were a 65+ couple, just moved onto our 20 acre farm, loving the self sufficient side of it all but above all the serenity and solitude, coming from a bussy corporate world, its simply heaven, should have done this 30 years ago, but I guess priorities were different than.
Thank you so much for your prossing video. I am grateful for the instruction. I would prefer a start to finish video. Its weird to see people complain. Just watch something else. thank you. Gidget
Like a trip down memory lane. My grandparents lived on a farm and made their own German sausage, bacon, eggs from their chickens . Also my grandma use to own a bakery. Visiting them every year was a highlight. After spending my life in the corporate world, I am truly jealous. And you are truly blessed. Thanks.
I'll be following this for my but her in a couple weeks:) My Gma told me when I was little to put the bacon in a cold pan. It doesn't wrinkle up as much when they heat up together. Seems to be true for us. Have a great Christmas!!
Beautiful family! I really enjoy your videos. I have always wanted to live on a small farm, although I know farming is hard work 😊. At 71 it will probably never happen. My wife says if I was truthful I just want an old barn and a tractor! She is usually right 😊 I subbed. All the best from Arizona
Looks dee-licious! Ya’ll ever try cookin bacon in the oven? Put parchment paper on a baking sheet.. line up the slices and put it in the oven at 350 degrees for 20 mins… take it out, flip the strips then back in the oven til it gets done how you like it… You can do a couple trays at once… easy peasy…
Raised our first hogs last year. This morning we ate our first batch of bacon from them. It was so good. Used a similar method. Rubbed it in salt, brown sugar and pepper. Dat in our spare fridge for a week.
WOW, now that's some Bacon!!! Thanks for sharing this journey From the root to the toot with us. You did a fine job with the bacon beginning to the end and I could almost taste it. As for which one cooked it the best, well it would depend on which one I was talking too. I just like farm raised and prepared bacon period. Stay safe and keep up the great videos and recipes from around there. Fred.
I wish I could understand and explain why watching these videos makes me just feel good inside....and it ALWAYS makes me hungry when you cook LOL Thank You so much
It’s taken my wife a little while to adjust to cooking fresh bacon versus store bought bacon. It’s amazing how much faster the fresh cooks and definitely tastes better
Hi! Greetings from Uruguay! Definitely you should think about selling touristic experiences where people goes there to the ranch and helps you with all that fun stuff! ❤ I’m ok with 5-6 slices of bacon 😊 haha! 🎉
When I was on the farm we smoked our bacon and hams in our walk in smoke house for at least 7 days and nights. We cold smoked it at around 130 degrees. We had a wood burning stove my dad made that would hold up to 5 pieces of hardwood that would last 10 to 12 hours before you had to add wood . The stove was 20 feet from the smoke house on the down hill side so the stove was two or three feet lower then the floor of the smoke house ,the stove pipe was buried in the ground and came up in the center of the floor we had a metal drum covering the end of the stove pipe with holes in it on all sides to diffuse the smoke. People would order my dad's hams for Christmas 6 months before the holiday to make sure they would get one. We used a lot of cherry and vine maple in the smoker. My dad has been gone for over 20 years and I still have people tell me he smoked the best hams and bacon they ever ate.
Little darling you folks put a big old smile on my face when I see your videos it reminds me of home. I sure enjoyed this video. Cooking up fresh bacon and yes it's not supposed to be crisp. You got to get that flavor of the bacon! Thank you all for sharing hope you had a Merry Christmas God bless
I have always wanted to live the life you live. Actually, I've longed to live in the 1800's. Thank you so much for all your videos. You have inspired me so much that im going to try to make lard
Forget sausage gravy, which is for restaurants. Creamy white bacon gravy over a biscuit is the best way to go for breakfast! Give me that and a nice mug of hot black coffee, no cream, no sugar and I’m a happy camper!
We cook our bacon on 350 in the oven on a cookie pan with edges. It gets crispy more than the pan. I see the grease to fry turnip greens. My favorite smoke wood on pork belly is cherry
This sure had my mouth watering. As with most everybody, I love some good ole bacon. Breakfast, lunch, supper, it doesn't matter, anytime will do. Thanks for showing how it's made!
Yes so glad you did this! I just got my pig and gonna do bacon the first time ever. I don’t have a smoker though so I’m just curing it. Hopefully it will last and be good that way too. Thank you!
I am fortunate to live in rural southern Ohio. My neighbors are Amish, Mennonite, and Christian farmers. I buy all my meat from a Mennonite butcher, who raises nothing but Angus beef. He has an Amish farmer that supplies hogs and another that supplies lamb. He smokes all the bacon, ham, and kassler rippchen on site. The Amish have bakeries and produce business, where we shop once a week. We may well be "Fly over" territories, but damn we eat good!
Hey neighbors! We’re in North Carolina too! Your husband sounds like my husband! He likes chewy bacon and he says I kill the bacon twice cuz I make it too crispy! 😂 🤦🏻♀️🤷🏻♀️ Thanks for sharing! I love watching y’all’s videos!
Enjoyed the video.... the challenge i have when i cook bacon is i have to cook extra because i cant keep my fingers out of the resting bowl. Cook 3 slices eat 1.... 😃
Glad we could help! Like I said when we first started we tried several ways and washing first was by far the best and once we let it sit for 3 weeks and it was wayyy to salty even after it was washed
I dont know anyone that raises pigs and the best i can do is buy pork belly and use the oven after i cure in the fridge but man oh man is it better than anything already done and packaged!
Speaking of crispy bacon, my grandson when he was younger he would tell me he wanted his bacon “wet”, meaning not extra crispy, just done. Just like my son and I always wanted the inside biscuits, my husband and daughter liked the biscuits that were next to the pan, with crusty sides.

Rural California is the same. The big California cities are what u see in the news. I live near all the fruit farms

Nothing better than making your own food 😋

I'm a Native American but you are my kind of people. I just love that bacon and biscuits and gravy. Are my favorite.

That's the best looking bacon I've seen in a long time. That's the best way to reuse an old pack house as a smoke house rather than to store junk in.

Awesome!
I'm with Andy on this one. I like my bacon 🥓 a little chewy.
It can be chewy or crispy for me.
Me too. Unless it's pretty fatty then crisper is better to me. Tastes like candy almost how sweet that fat gets when it's crispier
Hi there from St Petersburg, Russia! I love your accent so much 😭💖
Yeah, me too.
I started curing my own bacon and what amazed me was when i fry it, it doesn't sputter and splatter everywhere. It shrinks less too because the cure isn't injected with a water mixture.
Them little people sure come in handy.. LOL.. great video thanks for sharing... this is a super great channel
We do hogs every fall in western South Dakota. My family was originally from Kentucky. Family fun for sure!

My mama does
It cooks great, but it makes a huge mess in the oven.
Raised our first hogs last year. This morning we ate our first batch of bacon from them. It was so good.

you can't beat homegrown pork

Love keeping old tradition alive! Everyone is about convient food nowadays. Guilty myself.
Thank you! Great education! We tried once, but was so salty. Now I know, it sat too long in the salt rub, wasn't draining, wasn't washed off. Lovely.
Glad we could help! Like I said when we first started we tried several ways and washing first was by far the best and once we let it sit for 3 weeks and it was wayyy to salty even after it was washed

I myself was a pitmaster at 1 point in my life and if you do 10 part pepper to 1 part salt you don’t have to wash it off the pepper makes it delicious
