I like fluffy dumplings too. I use bisquick and they are delicious. I start with a whole chicken and boil with onions, carrots and celery until it can be picked from the bone. I pull the chicken out, pick meat and put back into the pot right away. I leave all the vegetables. After meat is put back into pot I drop the dumplings. You are right it is the best meal ever.
Hi ya Meagan, this recipe for dumplins' is almost the same as the recipe that mom handed down that she got from her mom and granny got from either her mom or her mother in law. I'm sure they used lard before butter, mom changed it to vegetable oil and i use canola oil. 2 C of flour 1 TBS baking powder 1 Tsp salt i/4 C canola oil 1 C milk of your choosin' mix till just blended and drop by tablespoon full into boiling chicken stock with shredded chicken. I cheat and use a rotisserie whole chicken, with mix veggies. lower temp to a good simmer for about 12 minutes and don't take the lid off till done. More than once i got scolded for taking a peak. Mom said it would make the dumplin's tough. Regards; Phil A.
Now this is the dumplings i was raised on and love so much i just don't care for the flat dumpling it always reminds me of the can of Sue Bee chicken and dumplings and that ruined it for me lol. My M. I. L would always fix a huge pot of chicken and dumplings to go with Christmas and everyone would line up for that first they would never be enough to go around even with it being in her huge stew pot . My youngest son would always say mammo please save me a big bowl and she would she always got a huge bear hug and kiss on her cheek she would smile ear to ear and grab his face and say you know Granny always has your back or in this case your tummy then she would pat his tummy. We lost her two years ago she was 89 had a massive brain bleed from a stroke. Her 5 sons and one daughter haven't celebrated a 🎄 Christmas together since they just can't do it yet cause Christmas was her day it always was at her house and she went all out it just wasn't family in that kitchen or friends ,neighbors or somebody that was alone she met in the grocery store. I remember one yr they was so many showed up people had to stand on carport with plates to eat but they was always a bunch even if it was just family because she had so many grandkids and great grandkids you couldn't keep up. Some would travel from Washington State to Southern ky to celebrate with Granny and eat her famous big fluffy dumplings. Thank you for this video it brought back such wonderful memories ❤

I stumbled upon this method years ago when I was trying to make a dumpling that was fluffy in the middle instead of being a slicker. What I discovered: wet on the outside gives fluffy inside. I splash a little buttermilk down the side of my mixing bowl and then roll my spoon-sized ball of dough around in it. It works! I cook mine for about 15 minutes. Half-way through, I'll push them down a bit to get liquid over the tops. Great video! Thank you.

This reminds me of my old family recipe for the same thing! YUM!! My family originally came from the Ohio valley area and many of the recipes have some of the Quaker and Amish influences as well. I just LOVE remaking recipes from those old times knowing that I am making good healthy food based on recipes from 100 plus years ago.
Now we like small dumplings that are on the harder type about the size of a quarter or nickel! My grandma also use to make what she called potpie which was square pieces like a pie crust type noodles
Chicken and dumplings is something I've never made or ate, but I really want to try. I make noodles, not homemade though lol. That's a skill I need to work on. My mom and grandma were great at making noodles and I don't want that art to die with me.

It's always better to put your chicken in after the dumplins have cooked all the way thru ... that way the chicken does'nt get stuck in the dumplin and ,they have more room to cook !

We make dumplings just like you the rolled out ones we called Slickers but did not make. My dad disliked slickers that were served in truck stops. Lol

To make flour self rising, just add baking powder? Think that's right.
