My lady and I recently discovered how much we enjoy farm fresh beets. So I started looking for ways to incorporate them into our weekly menu. I made this salad today and followed the recipe to the letter. When I tasted it, something was missing. So I sprinkled some balsamic vinegar over it and for me it was perfect. Thanks for the recipe!
I really like the way you prepare the beets which is steaming them over stove top, which will preserve the natural vitamins in the beets. It is so easy and delicious. Next time I can just change the dressing according to my mood. Thank you for sharing.
Gorgeous & looks delicious!! I personally don't like Cauliflower`, and alternately I would also try adding crushed Caraway Seed, Paprika, some Thick Balsamic Vinegar, Rice Wine Vinigar, and some Crumbled Bulgarian Feta. The mixture would look lovely served atop those gorgeous Beet Leaves.

When I make Borscht I use the amount of beets for the soup, then add some whole ones int the soup, saves a steaming step, and keeps the water/ broth in the soup. Two beet dishes with one pot.
@@BecomeInspired I make both the German and Russian, the Russian uses cabbage, German potatoes and pearl barley As for recipe it is always different, I grew up with a garden in a relatively frost free area. Soom would use whatever was available, we didn't use meat. But it was best with sour cream. I asked my mom for recipes, Jo you know it's not the recipe, but what we had in season, sauteed onions, carrots, and fresh corn in the summer when available was the best. I still saute, it helps with flavor, it's like a soup that sits for several hours gains flavor. Look up Romanian and Russian Borsht and work with that, we enjoy the fresh dill flavor, but with the cabbage version parsley goes better for our tastes. Hope this helps.
